SPICY YUBA 'OMELET'

Yield Makes finger food for 6 to 8

Number Of Ingredients 6

1/4 cup soy sauce
2 tablespoons mirin
1 tablespoon sugar
3 sheets yuba
Sriracha or other chili paste
3 tablespoons vegetable oil

Steps:

  • In a large, shallow baking dish or rimmed plate, combine the soy sauce, mirin, sugar and 1/4 cup water. Mix well and set aside.
  • Spread one sheet of yuba on a work surface and draw a squiggle of chili paste horizontally across the middle. Fold the bottom third up over the middle third, then fold the top third down, as if folding a letter. Press the top down firmly. Set aside and repeat with another sheet.
  • Spread out the last sheet, add chili paste and place the two folded sheets of yuba in the center, one on top of the other. Fold the bottom of the last sheet over the middle and the top over that to enclose the first two sheets. Press the package firmly, then place in the baking dish with the soy-sauce mixture. Allow to sit for 5 minutes, then turn and repeat.
  • Remove the yuba and drain the liquid, pressing gently to expel any excess. Place between two paper towels and press out any remaining moisture.
  • Set a large cast-iron skillet or other wide, heavy pan over medium heat and add the vegetable oil. When the oil is hot, add the yuba (if it is too large, cut in half and cook in two pieces). Cook for about 1 minute, pressing gently with a spatula to keep the yuba in contact with the pan. Flip and cook for 1 minute, then repeat until both sides are browned and crisp. Transfer to paper towels and cut into pieces. Place on a serving plate and, if desired, dot with additional chili paste.

Number Of Ingredients 15

1 tablespoon light olive oil
1/4 lb white mushroom, thickly sliced (about 1 1/2 cups)
salt
cayenne pepper
dry white wine (optional-may use water or vegetable stock)
1/4 medium yellow onion, diced fine (or red onion)
1 celery, thinly sliced
1/2 green bell pepper, finely chopped (I like to use red bell pepper)
2 garlic cloves, finely chopped
2 tablespoons fresh basil, chopped
1 teaspoon fresh thyme, chopped
6 eggs, beaten
1/4 cup water
butter, for the pan
1 ounce smoked cheese, grated (about 1/2 cup)

Steps:

  • Heat 1/3 tbls. of the oil in a medium saute pan; add the mushrooms and 1/8 teaspoons salt. Sear the mushrooms over high heat until golden, then add a few splashes of wine to the pan and cook for 1-2 minutes, until the pan is nearly dry. Move the mushrooms to a bowl and set aside.
  • Heat the remaining 1/2 tbls. oil in the pan and add the onion; saute over medium heat until it begins to release its juices, 3-4 minutes, then add the celery, peppers, 1/4 teaspoons salt, 1/8 teaspoons cayenne, and the garlic. Saute for about 15 minutes, until the vegetables are tender. Combine the vegetables, mushrooms, basil, and thyme; add the salt and cayenne to taste.
  • Season the eggs with 1/4 teaspoons salt and a few pinches of pepper; add the water and whisk. Melt the butter in an omelet pan if you have one, if not, use a nonstick skillet. When the butter is hot, add half the egg mixture. With a spatula, move the eggs toward the center of the pan as they begin to set on the edges. Tilt the pan so that the entire surface is covered again with wet eggs. As the eggs begin to set, place half the vegetable mixture in the center, then sprinkle with half the cheese. Gently fold the omelet over and turn it out onto a plate. Repeat with the second omelet. Enjoy!

2 to 3 links pre-cooked sausages, sliced
1/2 green pepper, chopped
2 slices chopped onions
3 slices chopped tomatoes
1 tablespoon chicken Cajun spice
2 slices mozzarella cheese
Home fries, optional

Steps:

  • In a bowl, mix eggs. Then add sausage, peppers, onions, tomatoes, and Cajun spice.
  • In a large frying pan, heat oil over medium high heat. Pour mixture into pan. Flip over when browned. Then add mozzarella cheese. Fold when finished.
  • Serve with a side of home fries, if desired.
  • Recipe can be expanded.

5 teaspoons butter, divided
1 1/4 cups sliced andouille sausages
2 plum tomatoes, chopped
1/2 red bell pepper, chopped
1 celery rib, chopped
1 teaspoon minced garlic
1/4 cup v 8 spicy vegetable juice
1 teaspoon creole seasoning
12 large eggs
1 tablespoon fresh parsley, chopped
1 1/2 cups monterey jack cheese, shredded
hot sauce

Steps:

  • Melt 1 t butter over medium heat; add sausage; cook, stirring occasionally.
  • Cook 6-7 minutes.
  • Add tomatoes, bell pepper, garlic, celery; cook 5 more minutes until veggies are tender.
  • Remove from skillet.
  • whisk eggs, parsley, Creole seasoning and V8 juice.
  • Melt 1 t butter in skillet and coat with cooking spray.
  • Pour about 1/4 of egg mixture into skillet.
  • Lift edges with spatula and tilt pan so that uncooked portion flows underneath.
  • cook until set.
  • Cover skillet and cook one more minute.
  • Add 1/4 of andouille and veggies.
  • Add about 1/4 C cheese.
  • Fold one side of omelet over the top.
  • slide onto warming dish and cover with foil; keep warm.
  • Continue to cook 3 more omelets.
  • Serve with hot sauce--Frank's Red Hot Sauce recommended.

This is the way I did every morning I came into work with a hangover during Mardi Gras. I'd get to work early and have the chef whip me up one of these and I was ready to take on the 12 hour shift ahead of me. REALLY delicious!

2 teaspoons butter
2 teaspoons peanut oil
3 eggs
1 tablespoon water, lukewarm
creole seasoning, to taste
2 ounces ham, chopped into small cubes
2 ounces smoked sausage, chopped into small cubes
2 tablespoons onions, chopped
2 tablespoons green bell peppers, chopped
1/4 teaspoon garlic, minced
2 ounces provolone cheese
fresh parsley, chopped
louisiana hot sauce, to taste
1/2 cup creole tomato sauce (The Royal Orleans Rib Room Creole Sauce) (optional)

Steps:

  • In a small frying pan add your sausage, ham, onions, and bell peppers. Saute for about 3-4 minutes. You shouldn't need any butter or oil due to the fat content in your sausage. Once onions and bell peppers just start to soften add your garlic, take off heat and set aside.
  • Heat butter and peanut oil in omelette pan on high.
  • Whisk the eggs and water together until fluffy and combined.
  • Once butter has completely melted into oil swirl butter and oil around to coat entire pan. Add your eggs to hot pan.
  • Turn temp to Med-High and let cook about 1 minute or until edges begin to look cooked. Carefully push cooked edges towards the middle using a spatula. You want to allow the uncooked eggs to move to the edge and coat the bottom of the pan. Shake a little and make sure eggs are not sticking (they shouldn't because there should be plenty of "lube" with the butter and oil). Turn heat to Med.
  • Once eggs look mainly cooked with very little rawness on the top you'll want to sprinkle lightly with creole seaoning, add your ham, sausage, onions, bell pepper, garlic and cheese. Flip half omelette over and onto itself and allow to cook for about 2 minutes or until cheese is fully melted.
  • Garnish with fresh parsley and serve with a bottle of louisiana hot sauce on the side.
  • I usually make these one at a time, even when I'm entertaining. If you really want to add some pow then I suggest serving with creole sauce over the top. But really good with or without it.
  • If serving a large group you can 5X the recipe and combine ingredients and pour into a 8x 12x glass baking dish and bake for 40 minutes at 350°F Be sure to place a small oven safe bowl filled with water inside of the oven with the dish while baking. Let sit for at least 10 minutes before serving. Should withstand the toothpick check by poking middle with toothpick and coming out clean by the 40 minutes. If not clean then let bake another 5-10 minutes or until done in middle.

1 teaspoon vegetable oil
1 spring onion, sliced finely
1 medium red onion, chopped (I prefer the spring onions)
1 -2 green chili, chopped fine,to taste
2 cloves garlic, finely chopped
1/2 inch gingerroot, finely chopped
1/4 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
2 eggs, beaten
freshly chopped coriander
freshly chopped mint
3 -5 drops lime juice
salt

Steps:

  • Heat the oil in frying pan (I use a non stick pan) and fry the onion, chilli, ginger, garlic until translucent.
  • Add turmeric and saute for a minute more.
  • Add the other spices and cook for a few minutes more stirring now and then.
  • Take them off the flame.
  • Beat the eggs lightly and add salt to taste.
  • Now add the cooked mix to the eggs.
  • Add the green leaves chopped, (cilantro and mint).
  • Now add it back to the pan which will have some grease in it.
  • Cook for a few minutes and then flip over after sprinkling some lemon drops on the first side.
  • You can also place this under a grill to do the second side.
  • This goes very well with chapatis/ rotis too.

This is my own concotion. It's kind of an elementary recipe, really kind of goofy actually but I absolutely love omelettes and I have been working on this one for a while, adding imgredients and taking them out.

2 large grade a eggs
1 cup milk
salt and pepper (to taste)
3 tablespoons Tabasco jalapeno sauce (or however much you like)
1 cup venison sausage (or whatever you like, but venison sausage is really good like this)
1/2 cup sharp cheddar cheese

Steps:

  • Mix eggs, milk, salt and pepper and tabasco together and whisk into a froth. Go overboard if you want, the fluffier the eggs are the better they seem to taste (IMNSHO).
  • Once eggs are in frying pan and cooking for a minute, add sausage.
  • Right before folding eggs into omelette, add cheese so it doesnt get too melted. Use whatever kind of cheese you like. I usually use sharp cheddar, but you can use a mexican blend or I sometimes use Monterey Jack.
  • Add two pieces of toast and a nice cup of chickory coffee and you've got a pretty good breakfast!
