1 cup sugar
1 cup brown sugar
1 cup cream
2 tablespoons butter
1 1/2 cups roasted chopped pecans

Steps:

  • In a heavy saucepan combine the sugar, brown sugar, and cream and bring to a boil. Cook on medium heat to softball stage (238 degrees F), then add the butter and pecans. Continue cooking until hardball stage (245 degrees F). Spoon large dollops of it onto a silicone mat or parchment lined baking tray. The pralines will spread and crystallize as they cool.

Had these at a Christmas party last night and decided they belonged on my cookie tray. Posting this recipe for safe keeping. Other recipes I have seen use saltines, but these are made with honey grahams.

24 whole graham crackers
1 cup margarine
1 cup brown sugar, packed
1 cup chopped pecans

Steps:

  • Arrange graham crackers on ungreased 9x13x1" pan.
  • Place margarine and sugar in saucepan.
  • Heat to boiling point on high heat and boil for 2 minutes on low.
  • Stir in pecans. Spoon and spread over crackers.
  • Bake at 400 for 5 minutes. Cut each cracker in half while warm.
