PAT'S SPICY FRIED WINGS



Pat's Spicy Fried Wings image

1 tablespoon seasoning salt
1 tablespoon crushed red pepper flakes
2 teaspoons black pepper
2 teaspoons cayenne pepper
2 teaspoons poultry seasoning
1 teaspoon lemon-pepper
12 whole chicken wings, cut in 1/2 at the joint
2 eggs
2 tablespoons hot sauce
1 tablespoon crushed red pepper flakes
1 teaspoon black pepper
1 teaspoon cayenne pepper
2 cups all-purpose flour
Vegetable oil, to fry
Spicy Dipping Sauce, recipe follows
1 cup sour cream
2 tablespoons horseradish
1/4 tablespoon chili sauce
1/2 teaspoon cayenne pepper
Salt and freshly ground black pepper

Steps:

  • In a small bowl whisk together seasoning salt, red pepper flakes, black pepper, cayenne pepper, poultry seasoning, and lemon pepper. Reserve 2 tablespoons in a separate bowl.
  • Rinse chicken wings in cold water and place into a shallow baking dish. Sprinkle the wings evenly with the seasoning, and let them marinate, covered and chilled, for 1 hour.
  • Whisk eggs, hot sauce, red pepper flakes, black pepper, and cayenne pepper into a medium size mixing bowl. Reserve. Put the flour into a shallow dish or pie plate.
  • In a large deep-fryer or large Dutch oven heat oil to 350 degrees F on a deep-fat thermometer.
  • Dredge chicken wings into the egg mixture then into the flour. Place wings 3 at a time into the hot oil and cook for 8 to 10 minutes, turning occasionally, until cooked through and golden brown. Remove to a paper towel lined sheet tray. Make sure oil returns to temperature before adding the next batch. Sprinkle the wings with the reserved seasoning for extra hot wings.
  • Serve with Spicy Dipping Sauce.
  • Mix all the ingredients together in a small bowl.

1 teaspoon onion powder
1 teaspoon dried basil
1/2 teaspoon garlic salt
1/2 teaspoon paprika
1 egg
1 tablespoon water
10 whole chicken wings

Steps:

  • In a large resealable plastic bag, combine the bread crumbs, onion powder, basil, garlic salt and paprika.
  • In a small bowl, whisk egg and water.
  • Cut chicken wings into three sections and discard wing tips.
  • Dip wings in egg, then place in bag and shake to coat.
  • Place on a greased 15 x 10" baking pan.
  • Bake at 425° for 30-35 minutes or
  • until juices run clear, turning once.

These Crispy Spicy Chicken Wings dredged in a well-seasoned flour, no eggs were used, yet crispy from the outside and tender from the inside.

8 chicken wings cleaned
1 cup milk
Enough oil to deep fry
1 cup all-purpose flour
1 ½ teaspoon salt
½ teaspoon red chili powder (you can use less.)
1 teaspoon black pepper powder
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon allspice powder

Steps:

  • In a deep frying pan, add enough oil to cover the wings. Keep oil on medium high heat.
  • Mix the flour with flour seasoning and keep aside.
  • Dip the chicken wing in the seasoned flour, then dip it in milk, and finally dip it again in the seasoned flour. Do the same with all the wings.
  • Fry the wings in the hot oil for 9 minutes, flip and fry for 5 minutes on the other side.
  • To check if the chicken wing is cooked, prick the chicken wing with a knife, if the knife goes through the chicken smoothly it means it's done. If it feels tough and or blood ooze out, cook for another three minutes.
  • Place the cooked chicken wings on kitchen towel to remove excess oil.
  • Serve hot.

2 tablespoons (30 ml) Abokichi Okazu spicy chili miso
1/2 teaspoon (2,5 ml) sesame oil
2 tablespoons (30 ml) lemon juice
2 tablespoons (30 ml) chinese rice vinegar
2 tablespoons (30 ml) soy sauce
2 tablespoons (30 ml) brown sugar
1 1/2 tablespoon (22,5 ml) hoisin sauce
1/4 cup (60 ml) ketchup
4 garlic cloves, minced
1 tablespoon (15 ml) ginger, finely grated
1/2 teaspoon (2,5 ml) five-spice powder
scallions, sesame seeds, red chili, cilantro for garnish

Steps:

  • Preheat oven to 350°F.Add all ingredients, except wings and garnishes to a measuring cup. Whisk to combine well.Place wings in a large plastic bag or bowl.Pour 2/3 of marinade over top of wings and mix to coat evenly. Let marinate for 20 minutes.Double line a baking tray with foil and parchment paper. Spread wings onto baking tray and bake for 50 minutes, basting with reserved marinade after 25 and 40 minutes.Optional: before serving, baste again with Spicy Chili Miso. Boneless Buffalo Wings Recipe image

This boneless wings recipe is easy to make with breaded chicken breast fried until crispy and golden, then slathered in homemade Buffalo Sauce. Better than any restaurant!

1 pound boneless chicken breast (sliced into bite-sized nuggets or chunks)
1 cup flour
1 tablespoon spicy seasoning blend (I use a Cajun blend. What's YOUR secret blend of choice?)
Salt and pepper to taste (about 1/2 to 1 teaspoon each)
1 large egg
1 cup buttermilk (or you can use milk)
Vegetable Oil for frying
1 stick butter - 1/2 cup or 8 tablespoons
½ cup Louisiana style hot sauce - Franks is very popular though I use Valentina HOT
2 tablespoons apple cider vinegar or white vinegar
1 teaspoon Worcestershire sauce
For Serving. Blue cheese dressing or ranch dressing (celery sticks)

Steps:

  • Stir together the flour, seasonings and salt and pepper in a large bowl.
  • In a separate bowl, beat together the egg and buttermilk until combined.
  • Dip each chicken piece into the egg mixture, then into the seasoned flour mixture. Repeat, then set onto a plate to rest for 10 minutes.
  • Heat several inches of frying oil heated to 350 degrees F in a large pot or Dutch oven. Do not boil.
  • Fry the boneless wings for 5-6 minutes, or until golden brown and cooked through. They should register 165 degrees F internally when measured with a meat thermometer.
  • Remove and set onto a paper towel lined plate to drain excess oil.
  • Heat the butter, hot sauce, vinegar and Worcestershire sauce in a sauce pan until the butter melts. Whisk vigorously until the sauce thickens up.
  • Slather the boneless wings with homemade Buffalo sauce and serve with blue cheese dressing or ranch dressing and celery sticks on the side.
