  • preheat oven 375.
  • In a Medium pot heat and mix everything but salsa and cheese. Once heated,Pour salsa over rice mixture,top with cheese.
  • bake 375 for 30 minutes.
  • Serve with guac and chips,and a salad.

1 cup milk
1 (1 ounce) packet taco seasoning mix
½ teaspoon salt
4 cups cooked rice ((I use 2 packets of Uncle Ben's Ready Rice microwaved according to package instructions))
1 (14.5 ounce) can petite diced tomatoes, NOT drained
1 (11 ounce) can corn with red and green bell peppers, drained
1 cup grated cheddar cheese
1 cup crushed tortilla chips
Optional garnish: chopped fresh parsley, green onions, or cilantro

Steps:

  • Preheat oven to 350 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
  • Cook beef and onion in a large skillet over medium-high heat until meat is no longer pink (about 5-7 minutes). Drain.

1 Package of Taco Seasoning ((or 4 tablespoons of homemade seasoning))
1 tsp Salt
4 cups Cooked Rice ((I used regular that I cooked but you can use any))
3 cups Shredded Cheddar Cheese

Steps:

  • First brown your ground beef. Add in chopped onions and cook until soft.
  • Stir in Taco seasoning seasoning.
  • Add corn, tomatoes and beans.
  • Spray 2 9x13 pans with non stick spray. Spoon 2 cups of rice into the bottom of each pan, spreading it out evenly.
  • Spoon the meat mixture over the rice.
  • Top with the 1/2 of the cheese on each pan.

1 pound 85% lean ground beef
1 tablespoon chili powder
2 teaspoons cumin
2 teaspoons garlic powder

1 (20-oz) can enchilada sauce
1 (14.5-oz) can fire-roasted tomatoes
1 cup long-grain white rice
1 (14-oz) can black beans, drained and rinsed

1 teaspoon cornstarch
1/2 shredded cheddar cheese
2 cups chopped iceberg lettuce
1 tomato, diced

Steps:

  • Preheat the oven to 375°F degrees.
  • In a large pan, heat the olive oil over medium heat. Add the ground beef and cook it until it's no longer pink. Add the chili powder, cumin, garlic powder, dried oregano, salt, and pepper. Stir to coat the beef evenly in the spices.
  • Add the enchilada sauce, canned tomatoes, rice and beans. Stir and bring the mixture to a simmer. Carefully transfer the beef and rice to a 9×13" baking dish. Cover it with foil and bake the casserole for 30 minutes.
  • Remove the foil, stir the mixture, and bake the casserole uncovered for 10 to 15 minutes or until the rice is tender.
  • While the casserole finishes baking, make the cheese sauce. Combine the cheese, cream, and cornstarch in a small saucepan. Warm it over medium heat, stirring frequently, until the cheese is melted and you have a creamy sauce.
  • Drizzle the cheese sauce over the top of the casserole and sprinkle a 1/2 cup of shredded cheese over the top. Bake the casserole for five minute or so longer or until the cheese is melted. Let the casserole stand for five minutes before adding the rest of the toppings.
  • Spread the chopped lettuce down the center of the casserole. Sprinkle the chopped tomatoes and cilantro over the top.

1 clove garlic ($0.08)
2 cups long grain white rice* ($1.32)

1/4 tsp oregano ($0.02)
3 cups water ($0.00)
1 tsp salt ($0.05)
2 green onions, sliced ($0.20)

Steps:

  • Finely dice the onion and mince the garlic. Add the onion, garlic, and cooking oil to a medium sauce pot. Sauté the onion and garlic over medium heat until the onions are soft and transparent.
  • Add the uncooked rice, chili powder, cumin, and oregano to the pot. Continue to stir and cook for about 2 minutes to toast the rice and spices. You should hear the rice making crackling noises.
  • Finally, add the water and salt, and give everything a brief stir. Place a lid on the pot, turn the heat up to medium-high, and allow it to come to a boil. As soon as it reaches a full boil, turn the heat down to low, or slightly above low, and let it simmer for 15 minutes.
  • After 15 minutes, turn the heat off and let it sit for 10 minutes without removing the lid. After letting it rest for 10 minutes, fluff the rice with a fork. Sprinkle sliced green onions over top just before serving.

1 lb extra lean ground beef
1 cup long grain white rice (uncooked (do not use instant rice)
1 can tomatoes with diced chilis
1/2 cup heaping favorite salsa (I love my homemade salsa or mateos!)
1 packet low sodium taco seasoning (ortega is my favorite brand if not making homemade)
1 cup 98% fat free beef or chicken broth
1 can 98% fat free cream of celery (cream of mushroom/chicken will work as well )
Cooking Spray
lettuce
shredded cheese
crushed tortilla chips
light sour cream
cilantro

Steps:

  • Preheat oven to 375 degrees. In a skillet add ground beef, salt, and pepper, and cook until browned. In a large bowl combine rice, diced tomatoes with chilis, salsa, taco seasoning, broth, cream soup, and cooked ground beef. Stir together until combined well. Spray a casserole dish with cooking spray spread mixture inside. Cover with tin foil. Place into oven and cook for 45-50 minutes until the rice is cooked. Divide into 6 servings. Top with desired toppings such as cheese, lettuce, sour cream, and/or crushed up tortilla chips!
