ALMOST-FAMOUS BARBECUE CHICKEN PIZZA



Almost-Famous Barbecue Chicken Pizza image

Number Of Ingredients 9

1 teaspoon extra-virgin olive oil, plus more for brushing
1/2 pound prepared pizza dough, at room temperature
1/3 cup plus 2 tablespoons dark barbecue sauce
1 8-ounce skinless, boneless chicken breast
Kosher salt and freshly ground pepper
2/3 cup grated smoked gouda cheese (about 3 ounces)
2/3 cup grated part-skim mozzarella cheese (about 3 ounces)
1/2 small red onion, thinly sliced
Fresh cilantro, for topping

Steps:

  • Brush a large bowl with olive oil. Shape the pizza dough into a ball, add it to the bowl and turn to coat with the oil. Cover tightly with plastic wrap and set aside in a warm place, 30 to 40 minutes.
  • Position racks in the upper third and middle of the oven. Place a pizza stone or inverted baking sheet on the top rack and preheat the oven to 425 degrees F for at least 30 minutes.
  • Meanwhile, lay out a sheet of parchment paper and brush with olive oil. Transfer the ball of dough to the parchment and roll it out into a 10-inch round, stretching it with your hands as needed. Lightly brush the dough with olive oil, cover with another piece of parchment and set aside to let rise slightly, about 30 minutes.
  • While the dough rises, mix 2 tablespoons barbecue sauce and 1 teaspoon olive oil in a small bowl. Put the chicken in a baking dish, season with salt and pepper and brush with the barbecue sauce mixture. Bake on the middle oven rack until cooked through, about 20 minutes. Let cool, then cut into 1/2-inch cubes.
  • Uncover the dough and spread with the remaining 1/3 cup barbecue sauce, leaving a 3/4-inch border. Top with the chicken, gouda, mozzarella and red onion. Slide the pizza (on the parchment) onto a pizza peel or another inverted baking sheet, then slide onto the hot stone or baking sheet; bake until the cheese melts and the crust is golden, 20 to 25 minutes. Sprinkle with cilantro.

butterflied then pounded very thin (an 1/8- to 1/4-inch thick)
Olive oil
for drizzling plus 1 tablespoon
Salt and pepper
1 teaspoon granulated garlic
1 teaspoon granulated onion
1 teaspoon fennel seed
1/2 teaspoon red pepper flakes
2 tablespoons fresh thyme
chopped
2 cloves garlic
thinly sliced
1 1/2 pints grape or cherry tomatoes
halved
A fat handful of basil leaves
1 pound ball fresh mozzarella
very thinly sliced or shredded using a fat-toothed box grater

Steps:

  • Drizzle chicken with oil in a shallow dish and season with salt, pepper, granulated garlic and onion, fennel seed, red pepper and thyme
  • Marinate a few minutes Preheat a large griddle pan or grill pan over medium high heat
  • Preheat broiler as well
  • Heat a skillet with a lid over medium-high heat with a tablespoon of olive oil, a turn of the pan
  • Add sliced garlic and stir a minute; add tomatoes and season with salt
  • Cover pan to trap heat and cook to soften tomatoes for 8-10 minutes, shaking pan occasionally
  • Add basil to sauce and stir to wilt
  • Grill or griddle-cook the chicken a few minutes on each side then transfer to baking sheets
  • Top chicken with sauce and then mozzarella cheese, as if it were a small pizza
  • Broil to brown and melt cheese

Steps:

  • Open and drain canned chicken through my whole oven is preheating to 350.
  • Place chicken in a thin layer on a parchment paper covered pan.
  • Bake for 10 minutes or until the chicken becomes dry.
  • Turn oven to 500.
  • Remove and place into a bowl. Add cheese and egg.
  • Stir to combine.
  • Spread into a pizza shape onto the pan lined with parchment. The thinner, the crisper the crust.
  • Bake for 5-8 minutes depending on thickness.
  • Cover with desired toppings and bake for 8 more minutes or until cheese and topping have cooked.

1 pound refrigerated pizza dough, at room temperature
1 stick (8 tablespoons) unsalted butter
1/2 cup hot sauce
1 1/2 cups shredded rotisserie chicken
1 1/2 cups shredded mozzarella
2 tablespoons crumbled blue cheese
1 scallion, sliced on the bias, for garnish
Special equipment: a pizza stone

Steps:

  • Set a pizza stone on an oven rack and preheat the oven to 425 degrees F. Roll out and stretch the dough on parchment paper or a pizza peel to a 12-inch circle; set aside.
  • Melt the butter in a medium saucepan over medium-low heat and whisk in the hot sauce. Pour half the mixture into a medium bowl, add the chicken and stir to coat fully. Pour any excess sauce back into the saucepan.
  • Ladle a few tablespoons of the remaining hot sauce mixture on the dough and spread in a thin even layer. Scatter with the chicken and mozzarella. Sprinkle the blue cheese on top.
  • Transfer the pizza to the preheated pizza stone and cook until crisp, 12 to 15 minutes. Garnish with the scallions, and drizzle the remaining sauce over the top.

1 cup mint
1 cup cilantro
1 large clove garlic
1 inch piece ginger
1 serrano chile (very spicy, use half for less heat!)
½ tsp kosher salt (+ more to taste)
½ cup water
1 3/4 cup warm water
1 tsp granulated sugar
2 1/4 tsp active dry yeast
2 tbsp olive oil
1 1/2 tsp salt
4 to 5 cups all purpose flour
vegetable oil (for bowl)
approximately 2 cups leftover butter chicken (chicken separated from sauce and shredded)
3 cups shredded mozzarella cheese
thinly sliced bell pepper
diced pineapple
sliced red onion or shallot
chopped cilantro (for garnish (optional))

Steps:

  • Combine all ingredients in a blender or food processor and process until smooth.
  • Combine warm water, sugar and yeast in the bowl of a stand mixer fitted with the paddle attachment; let stand 10 minutes.
  • Stir in oil and salt, then add 2 cups of the flour and beat on medium speed until smooth. Switch to dough hook, and beat in another 2 cups of flour. Knead the dough on low speed for 10 minutes, adding remaining 1 cup of flour as needed - your dough has enough flour when it sticks to the bottom of the bowl but releases from the sides.
  • Remove the dough from the stand mixer and oil the bowl generously (no need to clean it); place the dough in the bowl, turning it around to coat on all sides with oil. Cover with a clean towel and put in a warm spot to rise for 1 1/2 hours (an oven with just the light turned on works perfectly).
  • Punch down the dough and divide in 2 even balls. Let rest 30 minutes (or wrap tightly in plastic wrap and refrigerate up to 1 day, or freeze up to 3 months - either way, bring to room temperature before proceeding).
  • While the dough rests, place a baking stone or baking sheet on the bottom rack and preheat oven to 450ºF for 30 minutes. Prepare all your toppings while you wait, so that you can work quickly in the next step.
  • Roll out first ball of dough on a sheet of floured parchment paper. Remove heated baking stone or sheet from the oven, and place dough on top, parchment and all. Working quickly, top dough with half the curry sauce, half the mozzarella, half the chicken, and remaining toppings. Bake on bottom rack for 10-15 minutes, until crust is golden and cheese is bubbly. Top with cilantro, if desired, and repeat with remaining pizza. Serve with chutney.

250 g boneless chicken breast
0.5 teaspoon salt
0.5 teaspoon black pepper
1 teaspoon red pepper
2 tablespoon yogurt
1 tablespoon lemon juice
1 teaspoon garlic minced
1 teaspoon ginger minced
2 tablespoon oil
0.5 recipe Pizza sauce (see in my recipes)
100 g Cheddar cheese shredded
250 g mozzarella cheese shredded
0.5 red onions chopped
0.5 tomato chopped
0.5 capsicum chopped
0.5 bunch coriander chopped
2 cups flour
0.5 tablespoon yeast
1 tablespoon sugar
1 teaspoon salt
2 tablespoon milk powder
2 tablespoon olive oil
0.75 cup slightly warm water

Steps:

  • Cut chicken into 1 inch cubes, marinate with all these ingredients except oil and leave for an hour. In a skittle take oil and fry marinated chicken for 5 minute on medium flame. Then reduce heat to low and let it cook about 10 minute covered until it dries.
  • Mix salt to flour then add all ingredients pour water on it and knead to make smooth dough about 5 to 7 minutes. Let the dough rest in an oiled bowl, covered with slightly wet kitchen towel for an hour,until double in size. After one hour pat the dough and roll into a big circle.
  • Leave for 15 minute then bake for 15 minute at 180c or until dough starts changing color, take out from oven,spread pizza sauce & top with cheddar, mozzarella, onion, tomatoes, coriander leaves, capsicum and ChickenTikka. One hand full of mozzarella on the top & bake again at 180c for 15 minute or until cheese starts browning. Keep an eye on bottom of pizza crust don’t let it dark brown. If it is happening then just place a piece of aluminum foil under the pizza pan. You have to adjust heat. After baking immediatly brush crust sides with melted butter.

250g wholemeal flour , plus a little for kneading if necessary
1 tsp instant yeast
¼ tsp salt
1 tbsp rapeseed oil , plus extra for greasing
pack of 3 peppers
1 large onion
1 tbsp rapeseed oil
1 tsp fennel seeds
2 tbsp barbecue sauce
2 tbsp tomato purée
1 large skinless chicken breast fillet (about 225g), diced
175g baby plum tomatoes , quartered
50g Applewood smoked cheese , grated

Steps:

  • Heat oven to 220C/200C fan/gas 7. Tip the flour into a mixer with a dough hook, or a bowl. Add the yeast, salt, oil and 200ml warm water then mix well to a very soft dough. Knead in the food mixer for about 5 mins, but if making this by hand, tip onto a work surface and knead for about 10 mins. The dough is sticky, but try not to add too much extra flour. Leave in the bowl and cover with a tea towel while you halve and slice the peppers and onions. There is no need to prove the dough for a specific time, just let it sit while you make the topping.
  • For the topping: toss the peppers and onions with the oil and fennel seeds then roast for 15 mins. Meanwhile mix the barbecue sauce and tomato purée with 5 tbsp water.
  • Take the dough from the bowl and press into the base and up the sides of an oiled 25x35cm Swiss roll tin. Don't knead the dough first otherwise it will be too elastic and will keep shrinking back. Spread with two thirds of the barbecue sauce mix then add the remainder to the chicken and toss well to coat it.
  • Take the roasted pepper mixture from the oven and spread on top of the pizza. Scatter over the tomatoes then evenly spoon on the barbecue chicken. Scatter with the cheese and bake for 15 mins. Serve with a salad or healthy coleslaw.

10 ounces chicken breasts, cooked and shredded
1 tablespoon olive oil

1/4 small red onion, sliced into rings
2 tablespoons cilantro

Steps:

  • One hour before baking the pizzas, start preheating the oven at 500 degrees Coat chicken with 2 tablespoons barbecue sauce.
  • Set aside in the refrigerator.
  • Prepare dough into pizza shape.
  • Precook if needed.
  • Spread remainder of barbecue sauce over the surface of the dough.
  • Spread cheese over the sauce.
  • Spread chicken over the cheese.

1 pound shredded chicken breast (or rotisserie) ((approximately 4 cups))
1 cup pre-shredded mozzarella cheese ((4 oz))
2 large eggs
salt and pepper to taste

Steps:

  • Shred the chicken by hand or cut into chunks and place into a food processor to chop. Salt and pepper to taste - until it tastes good!
  • Pre-heat oven to 400 degrees F. Line a sheet pan (18x13 inch) with parchment paper.
  • Thoroughly mix the ingredients together with a spoon, spatula, or your hand.
  • Pat the chicken firmly onto the parchment, spreading it as thin as you can without leaving holes.
  • Bake for 20 minutes or until the edges brown and top begins to brown. (You may need to bake it longer depending on your oven.)
  • Top with your favorite pizza toppings and bake for 10 minutes more. Cut and serve. Enjoy with a fork. Re-heats nicely in the oven or microwave. Serves 4.

1 ball of pizza dough or 1 prepared pizza crust
1/2-1 cup BBQ sauce
1 cup cooked chicken, cut in small cubes
2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese
1 small green bell pepper, chopped
1/4 cup red onion or 3-4 green onions, finely chopped
1/4 cup chopped fresh cilantro
Cornmeal, flour and extra-virgin olive oil

Steps:

  • Place a pizza stone on the middle rack of the oven and preheat the oven to 500 for 25-30 minutes.
  • Place a large piece of parchment paper on your rolling surface and sprinkle it with some cornmeal. Sprinkle some flour on your hands and place the dough on the prepared surface. Use your hands to gently shape the dough into a large round pizza circle, adding more flour if necessary to keep it from sticking. Then dough should be pretty even all around, but you can leave some extra dough on the edges for a crust.
  • Brush the outer edge of the pizza with some olive oil.
  • Add the BBQ sauce to the center of the pizza and use a spoon to evenly spread it across, leaving a little bit of room at the edge for the crust.
  • Sprinkle the mozzarella and cheddar cheese evenly over the BBQ sauce then add the pepper, onion and chicken.
  • Carefully transfer the pizza on the parchment paper to the preheated pizza stone.
  • Bake at 500 for 8-12 minutes, depending on the thickness of your crust. The pizza is ready when the cheese is melted and the crust is golden brown.
  • Carefully slide the pizza and parchment paper onto a cutting board and slice the pizza. Sprinkle with chopped fresh cilantro and serve!

  • Preheat the oven to 450°F
  • Place a 3-foot piece of plastic wrap on a cutting board and lay one chicken breast in the center of the wrap
  • Fold the plastic wrap over so that the chicken is covered and use the flat-side of a meat tenderizer (or a rolling pin) to bash it until it's flattened to an inch-thick
  • Repeat with the remaining breasts
  • As you finish each piece, sprinkle it with salt and pepper and place it in a single layer in a 9 × 13-inch baking pan
