SPAGHETTI WITH BACON AND BEEF SAUCE

Steps:
- Heat a drizzle of EVOO in a pot over medium-high heat. Add the bacon and cook until browned. Transfer the bacon to a plate and pour the fat from the pot. Add 2 turns of the pan of EVOO. Pat the beef dry, then add it to the pot and cook until browned, crumbling the meat with a wooden spoon. Add the garlic, bay leaves, chile pepper, onions, cloves, a little salt and lots of pepper. Cook, stirring frequently, for 10 minutes. Add the wine and deglaze the pan, scraping up the browned bits from the bottom. Add the beef stock and tomato paste, then stir in the crushed tomatoes and bacon. Simmer until thickened.
- Bring a large pot of water to a boil for the pasta and season with salt. Add the pasta and cook until al dente. Reserve 1 cup of the cooking liquid, then drain the pasta. Add the cooking liquid and the pasta to the sauce and toss to combine.
- Serve the pasta topped with cheese and parsley.
- Cook's Note: If you are not serving the sauce immediately, cool and store in the refrigerator. Reheat over medium heat.
SPAGHETTI WITH BACON, GARLIC AND PINE NUTS AS I LIKE IT!
This is very simple meal I cook if I am in a hurry, or have nothing else to eat (I always have ingredients for this meal at home). This meal is also thirsty; requires fine red wine.

- Put olive oil in a frying pan and add finely sliced bacon (or Croatian "prsut") and roughly grounded pine nuts and pepper. Fry a bit, than cut the heat and add finely minced garlic. Garlic must not burn; it is enough heat in the pan.
- In the meantime, cook spaghetti according to manufacturer manual, but reduce it for 1-2 minutes to be al dente.
- Strain spaghetti really well and add on, again heated oil and bacon. Add oregano.
- Simmer well to cover spaghetti with all ingredients. Serve with grated parmesan and red wine.

PASTA WITH BACON, CHEESE, LEMON AND PINE NUTS
For home cooks, the most useful recipe is the one that lets you feed many tastes with a single dish. This one starts out small -- pasta with butter and cheese -- but can be expanded with pine nuts, lemon zest, brown butter, bacon and herbs into something satisfying. This kind of "modular" meal, which everyone at the table can add to or subtract from, is a great family dinner solution. You prepare one tasty base element, like warm tortillas or pasta or salad greens. After that, it's about piling on -- or politely passing on -- all the garnishes at the table.

- Put a large pot of salted water on to boil. Put the cheese, herbs and red pepper flakes on the table. Zest the lemon and put the zest on the table in a small serving bowl. Cut the lemon in half.
- Put bacon in a medium-size heavy pot and turn the heat on low. Cook, turning occasionally, until fat has rendered and bacon is chewy-crisp, about 10 minutes. Lift out bacon pieces and drain on a plate lined with paper towels. Keep warm on top of the stove.
- When the water boils, add pasta, stir well and cover. When the water comes back to the boil, uncover and stir again.
- Put 4 tablespoons butter in a small saucepan and melt it over medium-low heat. When it foams, throw in the pine nuts and cook, shaking the pan, until they turn brown and toasty. Turn off heat and squeeze the lemon into the pan, cupping your hand underneath to catch any pits. Stir and set aside. Transfer bacon to a serving bowl and place on the table.
- As soon as the pasta is tender (it will cook a bit more later on), drain it, reserving a cup of the cooking water. Immediately return the pasta to the pan over low heat. Toss in a chunk of butter. Add a splash of cooking water and a pinch of salt, stir well, cover and let rest 1 minute. Taste and adjust the seasonings until the pasta is completely cooked and tasty (but plain).
- For those who like plain pasta or pasta with just butter and cheese, set aside a good amount in serving bowls. For others, pour the pine nuts and butter into the pasta remaining in the pot, add another splash of cooking water, and toss to combine. Serve from the pot or in a serving bowl, passing the various toppings.

- Bring a large pan of water to the boil and cook the spaghetti following pack instructions. Meanwhile, heat the oil in a large non-stick frying pan and cook the bacon for 3-4 mins until just starting to crisp. Stir in the onion and cook for another 3-4 mins, then add the garlic and smoked paprika, and cook for 1 min more.
- Pour in the chopped tomatoes, bring to the boil and bubble for about 5 mins until thickened, stirring every so often to stop it catching on the bottom. Drain the pasta and toss with the sauce. Serve with Parmesan, if you like.

- Drizzle chicken with 1 tbls olive oil then sprinkle with salt and pepper, squeeze key lime over chicken.
- Flip over a few times to mix marinade with chicken -- set aside.
- Cook bacon -- set aside.
- Get water heating for pasta.
- In large saute pan heat 1 tbls of the Olive Oil add Shallots and Garlic.
- Saute for 1-2 minutes then add 3/4 cup of the Sun Dried Tomatoes.
- Add chicken and cook till done.
- Mix corn starch with chicken stock and slowly stir into chicken mixture then add warm half and half. Add cayenne pepper.
- Cook for 3 minutes or untill sauce is thickened. (add water if necessary).
- Place pasta in boiling water and cook acording to package .
- Add baby spinach to sauce and stir occasionally until wilted.
- Place pasta in large serving dish add sauce and toss.
- Top with pine nuts and two strips of crumbled bacon and two tablespoons of red peppers.

- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Stir in the bacon, and cook until the bacon has begun to shrink, about 3 minutes. Add the garlic, and continue cooking and stirring until the garlic has softened, and the bacon is crisp, about 5 minutes. Toss the drained pasta with the bacon, oil, and parsley to serve.

- Whilst cooking the pasta, grate the lemon zest and mix with the lemon juice and olive oil and season.
- Fry the bacon (no oil should be necessary) until golden brown, about 2 minutes.
- Add the pine nuts to the pan with bacon and stir until lightly toasted.
- Now drain the pasta and fold in the spinach allowing it to wilt in the heat.
- Then stir in the lemon dressing, bacon and nuts and seasoning to taste (drizzle with oil and sprinkle with pepper).
