1 cup milk
½ teaspoon seasoning salt
3 ounces cooked ham, diced
½ cup shredded Cheddar cheese
½ cup shredded mozzarella cheese
1 tablespoon dried minced onion

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 8x8 inch casserole dish and set aside.
  • Beat together the eggs and milk. Add seasoning salt, ham, Cheddar cheese, Mozzarella cheese and minced onion. Pour into prepared casserole dish.
  • Bake uncovered at 350 degrees F (175 degrees C) for 40 to 45 minutes.

9 large eggs
½ cup sour cream
½ cup milk
1 teaspoon salt
2 green onions, chopped
¼ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish with butter.
  • Beat eggs, sour cream, milk, and salt in a bowl until blended. Stir in green onions. Pour mixture in the prepared baking dish.
  • Bake in the preheated oven until set, 25 to 30 minutes. Sprinkle Cheddar cheese over eggs and continue baking until cheese is melted, 2 to 3 minutes more.

This is my own concotion. It's kind of an elementary recipe, really kind of goofy actually but I absolutely love omelettes and I have been working on this one for a while, adding imgredients and taking them out.

2 large grade a eggs
1 cup milk
salt and pepper (to taste)
3 tablespoons Tabasco jalapeno sauce (or however much you like)
1 cup venison sausage (or whatever you like, but venison sausage is really good like this)
1/2 cup sharp cheddar cheese

Steps:

  • Mix eggs, milk, salt and pepper and tabasco together and whisk into a froth. Go overboard if you want, the fluffier the eggs are the better they seem to taste (IMNSHO).
  • Once eggs are in frying pan and cooking for a minute, add sausage.
  • Right before folding eggs into omelette, add cheese so it doesnt get too melted. Use whatever kind of cheese you like. I usually use sharp cheddar, but you can use a mexican blend or I sometimes use Monterey Jack.
  • Add two pieces of toast and a nice cup of chickory coffee and you've got a pretty good breakfast!

2 tablespoons butter
1/2 medium onion (chopped (approximately 1/2 cup))
1/2 large red bell pepper (chopped (approximately 2/3 cup))
1/2 medium green bell pepper (chopped (approximately 1/3 cup))
1 large jalapeno pepper (seeded if desired, chopped)
1/2 teaspoon salt
Freshly ground black pepper (to taste)
8 ounces diced cooked ham (approximately 1 cup)
3/4 cup shredded Monterey Jack cheese
3/4 cup shredded Cheddar cheese (sharp, medium or mild)
6 large eggs (beaten)
1/2 cup milk (or half-and-half)

Steps:

  • Preheat oven to 350 degrees. Spray a 10-inch round baking dish with cooking spray. Set aside.
  • Heat butter over medium heat in a skillet or saute pan. Add the onion, red and green bell pepper and cook 3-4 minutes just to soften.
  • Add the jalapeno and cook for 30 seconds.
  • Season vegetables with salt and black pepper. Transfer to the prepared baking dish and let cool slightly.
  • Add the diced ham and cheeses and stir to distribute evenly.
  • Whisk eggs and milk (or half-and-half) together. Pour over the vegetable-ham-cheese combination.
  • Bake for 30-40 minutes or until set and lightly browned on top.
  • Cut into 6 to 8 wedges and serve.

2 cups monterey jack cheese, shredded
1 medium green pepper, chopped
1 (4 ounce) can green chilies, chopped
1 (4 ounce) can mushroom stems and pieces, drained
1 medium onion, chopped
1/2 cup ham, fully cooked and chopped
12 eggs or 3 cups egg substitute
1/2 cup milk
1 teaspoon hot pepper sauce
1/4 teaspoon salt
1 dash pepper

Steps:

  • In a greased 13-in. x 9-in. x 2-in. baking dish, layer half of the cheese, green peppers, chilies, mushrooms, onion and ham. Repeat layers.
  • In a bowl, beat the eggs, milk, hot pepper sauce, salt and pepper. Pour over vegetable mixture.
  • Bake, uncovered, at 350 degrees for 25-30 minutes or until a knife inserted near the center comes out clean.

Spicy Oyster Omelet

2 tablespoons chili sauce, such as Sriracha or Tabasco
2 tablespoons ketchup
1 tablespoon oyster sauce
1 tablespoon light soy sauce
2 heaping tablespoons potato starch or cornstarch
8 large eggs, beaten
18 shucked small oysters, such as Kumamoto
1 tablespoon peanut oil, plus more as needed
Four 6 to 8-inch mu shu pancakes or flour tortillas
12 large Thai basil leaves, sliced into thin ribbons

Steps:

  • For the sauce: Whisk together the chili sauce, ketchup, oyster sauce and soy sauce in a small bowl until combined.
  • For the omelets: Whisk 1/4 cup cold water with the potato starch in a small mixing bowl until combined.
  • Working in batches, make one omelet at a time by mixing together one-quarter of the beaten eggs, one-quarter of the starch mixture and 4 or 5 oysters in a small bowl. Make sure to whisk the starch slurry frequently to keep it combined. Stir in 1/4 of the basil.
  • Heat a small wok or 6-inch nonstick skillet over medium heat until it begins to smoke and add about 1 teaspoon of the peanut oil. Place 1 mu shu pancake into the wok and cook until hot and beginning to brown, about 30 seconds, and then flip and toast the other side. Transfer the pancake to a plate. Pour the egg mixture into the bottom of the wok and swirl to coat the base of the pan. Cook, releasing the edges of the omelet with a spatula, until the bottom is set and beginning to brown and the egg on the surface is just set, 30 to 45 seconds. Do not overcook.
  • Slide the omelet directly onto the toasted warm pancake and drizzle some of the sauce over the top. Repeat with the remaining egg mixture and pancakes to make 3 more omelets. Cut each omelet into quarters and serve face-up, or fold in half and serve with more sauce on the side.

1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1 cup cooked ham, diced
1 (10 ounce) can original rotel, drained
8 ounces colby-monterey jack cheese, combination shredded (or your cheese of choice)

Steps:

  • Preheat oven to 400 degrees F.
  • Spray an 8 1/2 x 8 1/2 in baking dish with Pam.
  • Beat the eggs with the salt and pepper until foamy.
  • Mix in the cubed ham, Rotel and cheese and mix well.
  • Bake in the oven for 25-30 minutes or until the eggs are set (every oven is different).
  • Turn the oven off and let it sit another 5-10 minutes.
  • Delicious and easy.

1 1/4 tablespoons flour
1/4 cup melted butter

1 (10 ounce) can whole asparagus spears, well drained (optional)

Steps:

  • Preheat the oven to 350 degrees.
  • Lightly grease a well seasoned iron skillet, and place it in the oven while the oven is preheating, and you are preparing the omelet.
  • Separate the egg whites from the yolks.
  • Beat the egg whites until stiff but not dry.
  • Beat the egg yolks well, slowly add the flour and stir until smoothly blended.
  • Add the milk and mix well.
  • Lightly fold in the stiffly beaten egg whites.
  • Remove the skillet from the oven and pour the omelet into it.
  • Bake for 10 minutes or until the omelet is set in the center and lightly browned.
  • When the omelet is done, remove from the oven and loosen the sides with a spatula.
  • Place a platter close to the skillet, and with a spatula loosen the bottom of the omelet and slide it out onto the platter.
  • Pour the melted butter over the omelet, and sprinkle with salt and pepper.
  • **Note:If desired, you can place the asparagus spears in a wheel pattern on top of the omelet before placing it in the oven and/or sprinkle the grated cheese over the top.
