¾ cup fresh peaches, peeled and diced
1 small red bell pepper, chopped
2 tablespoons finely chopped red onion
2 tablespoons minced fresh cilantro
1 tablespoon lime juice
1 clove garlic, minced
⅛ teaspoon salt
⅛ teaspoon ground black pepper
2 tablespoons olive oil
1 tablespoon brown sugar
1 tablespoon Caribbean jerk seasoning
1 teaspoon dried thyme
1 teaspoon dried rosemary
½ teaspoon seasoned salt
1 pork tenderloin

Steps:

  • Combine peaches, bell pepper, red onion, cilantro, lime juice, garlic, salt, and pepper in a bowl. Set peach salsa aside.
  • Combine olive oil, brown sugar, Caribbean jerk seasoning, thyme, rosemary, and seasoned salt in a second small bowl. Rub tenderloin with the spice mixture.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Place tenderloin on hot grill and cook covered for 9 to 11 minutes. Turn and grill until tenderloin is slightly pink in the center, 9 to 11 minutes more. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Remove from heat, cover, and let sit for 5 minutes before slicing. Serve with peach salsa.

1 small sweet red pepper, chopped

1 tablespoon chopped fresh cilantro
1 to 2 teaspoons lime juice
4 teaspoons ground nutmeg
4 teaspoons ground cumin
4 teaspoons garlic salt
3 teaspoons ground cinnamon
1/4 to 1/2 teaspoon ground red pepper (cayenne)
1 pork tenderloin (1 1/4 pounds)

Steps:

  • Mix all Fruit ingredients. Cover and refrigerate until serving.
  • Mix all Spice Rub ingredients. Place pork in heavy-duty resealable food-storage plastic bag. Sprinkle with Spice Rub. Turn bag several times to coat pork. Seal bag; refrigerate 15 minutes.
  • Heat coals or gas grill for direct heat. Remove pork from bag. Cover and grill pork 4 to 6 inches from medium heat 15 to 20 minutes, turning frequently, until pork has slight blush of pink in center and meat thermometer inserted in center reads 160°F. Serve with fruit mixture.

2 white sweet potatoes (about 1 1/4 pounds), peeled and chopped
2 large eggs
1 mango, peeled and chopped
1 small red jalapeno pepper, chopped
4 scallions, sliced
1/4 cup vegetable oil
3 tablespoons apple cider vinegar
1 tablespoon plus 1 teaspoon packed light brown sugar
Kosher salt and freshly ground pepper
1 large pork tenderloin (about 1 1/4 pounds), trimmed
2 teaspoons ground allspice
1/4 cup dijonnaise (or dijon mustard mixed with mayonnaise)

Steps:

  • Preheat the oven to 375 degrees F. Put the sweet potatoes in a saucepan and cover with water by 1 inch. Bring to a boil, then reduce to a simmer and add the eggs. Cook until the potatoes are tender and the eggs are hard-boiled, 10 minutes; drain and set aside.
  • Meanwhile, make the sauce: Puree the mango, jalapeno, half of the scallions, 2 tablespoons each water and vegetable oil, 1 tablespoon vinegar and 1 teaspoon brown sugar in a food processor; season with salt and pepper. Set aside.
  • Slice the pork lengthwise down the center, stopping 3/4 inch before cutting all the way through; open like a book. Top with plastic wrap; pound with a rolling pin until 1 inch thick. Season with salt and pepper; rub with the remaining 1 tablespoon brown sugar and the allspice.
  • Heat the remaining 2 tablespoons vegetable oil in an ovenproof skillet over medium heat. Add the pork; cook until browned, about 3 minutes per side. Transfer the skillet to the oven and bake until the pork is just cooked through, 5 minutes. Remove to a board; let rest.
  • Peel and chop the eggs. Whisk the dijonnaise with the remaining 2 tablespoons vinegar; toss with the sweet potatoes, eggs, the remaining scallions, 3/4 teaspoon salt and a few grinds of pepper. Serve the pork with the potato salad and mango sauce.

1 teaspoon grated orange peel
1/2 cup orange juice

2 garlic cloves, cut in half
1 teaspoon cornstarch
1/4 teaspoon salt
1 teaspoon vegetable oil
1 large plantain, cut into 1/4-inch slices

Steps:

  • Trim fat from pork. Cut pork across grain into 1/8-inch slices. Mix orange peel, orange juice, cilantro, lime juice, pepper and garlic in large glass or plastic bowl. Stir in pork. Cover and refrigerate 30 minutes.
  • Remove pork from marinade; drain, reserving marinade. Stir cornstarch and salt into marinade; set aside.
  • Heat oil in 10-inch nonstick skillet over medium-high heat. Cook pork in oil about 4 minutes, stirring frequently, until no longer pink. Stir in plantain. 1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
4 teaspoons ground coriander
6 scallions, finely chopped
3 cloves garlic, peeled and chopped
1 Scotch bonnet chili, with seeds
2 tablespoons dark rum
6 tablespoons water
1 1/2 teaspoons salt
Freshly ground pepper to taste
2 pork tenderloins

Steps:

  • Grind the allspice berries in a spice grinder and transfer to a blender. Add the cinnamon, nutmeg, coriander, scallions, garlic, chili, rum, water, salt and pepper and blend until a smooth paste forms, scraping down the sides of the jar as needed. Place the pork tenderloins in a shallow baking dish. Wearing rubber gloves, rub the paste all over the pork. Refrigerate several hours or overnight.
  • Preheat broiler. Place the pork 4 inches under the broiler and broil, turning once, until pork is only slightly pink in the center, about 12 to 15 minutes. Let stand for 5 minutes. Cut into 1/4-inch-thick slices and serve.

2 (3/4 lb) pork tenderloin, trimmed of visible fat
vegetable oil cooking spray
1 cup apple cider or 1 cup apple juice
1 large onion, sliced
1 tablespoon barbecue sauce
1 teaspoon minced garlic (1 medium clove)
1/8 teaspoon ground cinnamon
1/8 teaspoon crushed red pepper flakes (use cayenne pepper for extra heat)
1/8 teaspoon ground cloves
1/4 teaspoon grated fresh ginger
1/4 teaspoon ground thyme
sourdough French baguettes or roll

Steps:

  • Coat a Dutch oven with cooking spray; place oven on medium-high heat until hot.
  • Add tenderloins and cook about 10 minutes or until browned.
  • Turn occasionally.
  • Combine the apple cider or juice with the remaining ingredients in a bowl.
  • Pour over the tenderloins.
  • Insert a meat thermometer into the thickest portion of the tenderloin.
  • Bring to a boil.
  • Reduce heat and simmer covered, for about 40 minutes or until thermometer reads 160°F.
  • Occasionally, baste with the pan juices.
  • When done, remove tenderloins to a cutting board and allow to stand for at least 10 minutes before slicing.
  • While the tenderloins are resting, heat the juices to boiling and cook until they are reduced to a thick syrupy sauce (about 10 minutes).
  • Slice the tenderloins diagonally across the grain into thin slices.
  • Serve on a baguette or roll sliced in half lengthwise.
  • Top the sliced pork with the"sauce".
