CORNBREAD WAFFLES
These cornbread waffles with maple mascarpone topping are a hearty way to breakfast or brunch, weekend-style; they're also naturally gluten free.

- Preheat a waffle maker to medium high heat; grease it if necessary.
- In a small bowl, mix the mascarpone with 2 tablespoons of the maple syrup, then set aside.
- In a large bowl, mix together the masa harina, cornmeal, oat flour, baking powder and kosher salt.
- In a medium bowl, whisk the egg, then whisk in the milk, melted butter, and maple syrup. Pour the wet ingredients into the dry ingredients and mix until just combined.
- Let sit undisturbed for 7 minutes. After sitting, the batter becomes very thick and unpourable.
- Scoop half of the batter onto the heated waffle maker and gently spread it into an even with a spatula. Cook until golden brown. (The resulting waffle will be golden brown and soft, but it will firm up a bit as it cools. If the waffle maker is too hot, this may prevent the inside from cooking fully).
- Serve immediately with maple mascarpone. To store leftovers, let cool fully and freeze in an airtight plastic bag; reheat in a toaster or oven. (This recipe makes 2 large waffles or 4 small; if you scale it up, place the cooked waffles in a 300F oven to keep warm while cooking the remaining waffles.)

- In medium bowl, stir Bisquick mix, cornmeal, milk, oil, vanilla and whole egg with fork or whisk until blended. In small bowl, beat egg whites with electric mixer on high speed until stiff peaks form. Fold into batter.
- Heat Belgian waffle maker; brush with vegetable oil. For each waffle, pour 3/4 to 1 cup batter onto center of hot waffle maker. Close lid; bake about 4 to 5 minutes or until steaming stops and waffles are golden brown.

- Start with preparing and measuring all the ingredients. I like to use measuring cups.
- Take the blender and add all ingredients. Note: add wet ingredients first for easier blending.
- Mix everything at high speed until you get a smooth texture.
- Taste the batter and add additional sweetener if you think the mixture is not sweet enough.
- Let the batter rest for a few minutes.
- Turn on the waffle maker and let it heat until it's hot (the green light must be on).
- Coat waffle plates with cooking spray or melted coconut oil using the brush.
- Pour the batter onto the hot waffle plates, close the lid and allow the waffles to cook. Depending on your waffle maker it will take between 8-10 minutes per batch.
- Once baked, remove waffles from the waffle maker and place them on a cooling rack. Fresh baked waffles will be soft when you take them out of the waffle maker but they will harden as they cool on the rack.
- Repeating the process with the rest of the batter. Make sure to grease the waffle plates before adding the batter to prevent sticking.
- Transfer cooled waffles to a plate.
- Add toppings (optional): I used banana, blueberries, and maple syrup. Be creative here and add toppings you like.
- Serve and enjoy!

- Cook corn meal, water, and butter or shortening in a double boiler for ten minutes, stirring frequently.
- Cool.
- Sift flour, salt, baking soda together.

- Thoroughly grease a waffle iron with oil (not vegan butter) and heat it to a medium setting. Once it reaches temperature let it sit for an extra 5 minutes to make sure it is really hot.
- Put all of the ingredients into a blender and blend until smooth.
- Pour into the waffle iron, adding enough batter to cover it thickly without it coming out the sides.
- Put the lid down and leave to cook until there is absolutely no steam escaping from the sides. This is usually a good few minutes after your waffle iron tells you that they are ready. Ignore its signal and wait until any trace of steam stops. This is really important for crispy waffles that release easily.
- Carefully open the lid and remove the waffles. Put the lid down and let the waffle iron heat up well again, then grease again before adding the remaining batter. Cook as before.

CORN WAFFLES

- Gather the ingredients.
- Preheat the oven to 200 F - this is to keep them warm as you make more batches. Skip this step if you are serving them as they come out of the waffle iron .
- Heat the waffle iron on a medium setting, following the instructions in your waffle iron brochure or manual.
- In a mixing bowl, combine the flour, baking powder, salt, and sugar. Set aside.
- In another bowl, combine the eggs and milk; whisk until well blended. Whisk in the 1/4 cup of melted butter.
- Add the egg and milk mixture to the flour mixture and blend thoroughly. Stir in the corn kernels. If necessary, add more milk to make the batter thin enough to flow when poured into the waffle iron.
- Following the appliance directions, fill the waffle iron with the batter, gently spreading as needed.
- When the first batch is done, remove them to a baking sheet and place them in the preheated oven to keep warm while you cook subsequent batches.
- To serve, drizzle the corn waffles with melted butter and maple syrup or dust them with powdered sugar.
