1 tablespoon mild paprika
1 tablespoon dried parsley
2 teaspoons brown sugar
1 teaspoon dry mustard powder
2 teaspoons salt
1 teaspoon black pepper
1 (3 1/2) pound whole chicken, cut into pieces
2 tablespoons vegetable oil

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Combine the paprika, parsley, sugar, mustard, salt, and pepper in a small bowl; set aside.
  • Place the chicken pieces in a 9x13 inch baking dish, and coat with the vegetable oil; arrange skin-side up. Sprinkle evenly with the spice mixture.
  • Bake the chicken in the preheated oven until no longer pink at the bone and the juices run clear, about 45 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

4 skinless chicken breasts, filets
1 tablespoon olive oil
1 small onion, finely chopped
2 garlic cloves, crushed
1/2 teaspoon red chili pepper flakes
2/3 cup chopped canned tomato
2 tablespoons brown sugar
2 tablespoons Dijon mustard
1 tablespoon soy sauce

Steps:

  • Sauce:
  • Heat oil in a medium pan over medium heat. Add onion, garlic and chili flakes. Cook, stirring until the onion begins to soften.
  • Add the remaining sauce ingredients and bring to the boil.
  • Reduce the heat to low and simmer, stirring occasionally for 8 minutes.
  • Preheat oven to 220c.
  • Line a baking tray with foil and spray it with cooking spray.
  • Place the chicken on prepared baking tray, skin side down. Brush with half the sauce.
  • Bake for 8 minutes, turn over, brush with remaining sauce and bake a further 7 minutes or until cooked through.
  • Serve at once.

2 sticks butter
Juice of 2 to 3 lemons
1/2 teaspoon salt
1 teaspoon black pepper
1 teaspoon cayenne pepper
4 cloves garlic, minced
24 whole chicken legs

Steps:

  • Preheat the oven to 450 degrees F. Line baking sheets with foil.
  • Melt the butter in a saucepan. Add the lemon juice, salt, black pepper, cayenne and garlic, and stir. Set aside.
  • Rinse and pat the chicken legs dry. With metal tongs, dip them one by one into the butter mixture and place on the prepared baking sheets.
  • Once all of the chicken legs are coated and on the baking sheet, take a pastry brush and give them one last coating of the butter mixture.
  • Place them into the oven for 30 to 35 minutes, basting a couple of times during roasting. If they need a bit more color, turn on the broiler for a couple minutes and watch them closely.
  • Remove them when they are nice and golden brown and fully cooked.

1 tablespoon olive oil

8 chicken drumsticks
3/4 cup all-purpose flour
6 -8 tablespoons butter (melted)
3 tablespoons adobo seasoning, with pepper
3 tablespoons paprika or 3 tablespoons cayenne pepper
2 tablespoons rosemary
1 tablespoon garlic powder
salt and pepper

Steps:

  • Heat Oven to 425 degrees F.
  • Layer Tray or 13X9 Pan with foil and grease very very well with butter preferably.
  • (You can skip foil and just grease pan I want less of a clean up so I use a layer or 2 of foil . lol).
  • Rinse off drumsticks under cold water. Pat dry with towel or paper towels. Put aside.
  • In one bowl mix all the dry ingredients. Seasonings and Flour (I have tried using self rising flour and it turns out great). You can also taste to make sure if extra salt and pepper is needed you know flour can get bland if the spices arent enough.
  • In another bowl melt butter for 30 secs or less in microwave.
  • Dip drumsticks in melted butter one at a time then roll in flour mixture. Completely coat drumsticks.
  • Arrange drumsticks on tray so they all have a little room around to move ;) You can spray the chicken with Pam or Spray with butter.
  • Place in oven and bake for 60 -75 mins or until browned.
  • NOTE . I turned the drumsticks on the opposite side every 15 - 20 mins so it would cook nicely and firmly on both sides.

12 chicken pieces (breasts, thighs and drumsticks) with skin and bones
1 cup dry unseasoned breadcrumbs

1/2 teaspoon cayenne pepper
3 tablespoons butter, melted

Steps:

  • Whisk buttermilk, oil, hot pepper sauce, mustard, garlic, 1 teaspoon salt and 1/2 teaspoon pepper in large bowl to blend well. Add onion, then chicken and turn to coat. Cover; chill at least 3 hours or up to 1 day, turning chicken occasionally.
  • Place racks on 2 large rimmed baking sheets. Whisk breadcrumbs, cheese, flour, thyme, paprika, cayenne and 1 teaspoon salt in large baking dish to blend. Remove chicken from marinade, allowing excess to drip off. Add chicken to breadcrumb mixture and turn to coat completely. Arrange chicken, skin side up, on racks on baking sheets. Let stand 30 minutes.
  • Preheat oven to 425°F. Drizzle butter over chicken. Bake until crisp, golden and cooked through, about 50 minutes. Serve warm or at room temperature.

  • Preheat oven to 400F (200C) and brush the tops of the chicken pieces with oil.
  • Bake 20 minutes.
  • Turn the pieces over and bake another 25 minutes or until tender.
  • Baste the chicken with drippings 3 or 4 times.
  • If there is sauce remaining after baking (I say "if" because I've never done this part!), pour it into a small pot and boil until somewhat reduced.
  • Arrange chicken on a platter and pour the reduced sauce over them.

Sweet and Spicy Baked Chicken image

Tastes great and looks good, too. Uses hot pepper jelly and butter as a basting sauce; this bird really is both sweet AND spicy! (Note: Watch the bird closely during baking; the sugar in the jelly makes it a beautiful rich, brown color but can also burn it! If the bird is browning too quickly, cover with an aluminum foil tent and continue baking. Test for doneness by cutting into the thigh or wiggling the leg to see if the bone moves easily.)

1 (4 pound) whole chicken

½ cup hot pepper jelly
1 cup butter

Steps:

  • To Prepare Chicken: Remove giblets and set aside for another use. Rinse chicken in cold water and pat dry with paper towels. Pull front skin down over neck cavity and tuck under chicken. Fold wings under breast, and tie legs and tail together securely with kitchen twine or string.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Place chicken on rack in roasting pan. Season with salt and pepper to taste. Melt jelly and 1/2 cup butter or margarine together in a small saucepan or in the microwave. Melt the remaining 1/2 cup butter or margarine separately.
  • Bake chicken in preheated oven for 15 minutes. Reduce heat to 375 degrees F (190 degrees C) and baste with melted plain butter or margarine. Bake for another 30 minutes, basting often with the plain butter or margarine. Then baste liberally with the melted jelly/butter mixture and bake for another 15 minutes. Remove from oven and allow to cool 10 minutes before cutting and serving.
