SUMMER POTATO SALAD RECIPE BY TASTY

Here's what you need: small red potato, salt, corn, dijon mustard, pickle juice, red bell pepper, vegan mayonnaise, paprika, salt, pepper, celery, dill pickle, red onion, green onion, fresh dill, fresh chives

Number Of Ingredients 16

2 lb small red potato, scrubbed and halved
1 tablespoon salt
2 ears corn
1 tablespoon dijon mustard
3 tablespoons pickle juice, divided
1 red bell pepper
1 cup vegan mayonnaise, or regular
½ teaspoon paprika
1 ½ teaspoons salt
1 teaspoon pepper
½ cup celery, diced
⅓ cup dill pickle, coarsely chopped
¼ cup red onion, chopped
⅓ cup green onion, chopped
2 tablespoons fresh dill, minced
2 tablespoons fresh chives, chopped, for garnish

Steps:

  • Place the potatoes in a large pot with enough water to cover by 2 inches (5 cm). Cover and bring to a boil over high heat.
  • Once boiling, uncover, add the salt and corn, and reduce the heat to medium. Simmer for 10-15 minutes, until the potatoes and the corn are tender. Drain.
  • Add the potatoes to a large bowl. Combine 2 tablespoons of pickle juice with the mustard and pour it over the still-warm potatoes. Toss to coat. Refrigerate for at least 30 minutes or up to an hour.
  • Dice the red bell pepper, removing the ribs and seeds.
  • Set a medium bowl upside down in a large bowl and stand a corn cob on the inverted bowl. Cut the corn kernels from the cobs, letting them fall into the larger bowl.
  • In a medium bowl, combine the mayonnaise, remaining tablespoon of pickle juice, paprika, salt, and pepper and stir until smooth.
  • Add the bell pepper, corn, celery, pickles, red onion, green onions, and dill to the bowl with the potatoes. Pour the sauce over and toss to coat.
  • Sprinkle the potato salad with chopped chives, for garnish.
  • Enjoy!

Everyone loves potato salad - and this recipe, packed with veg, has more to offer than usual, in both flavour and glamour

300ml mayonnaise
2rounded tbsp Dijon mustard
2 tbsp fresh chopped mint
750g pack baby Jersey Royal potato
400g fine green bean , trimmed
450g frozen pea , thawed
2large ripe avocados
½ lemon , juice only

Steps:

  • Mix all the dressing ingredients with a little salt and pepper and 2 tbsp water until well blended. Halve or thickly slice the potatoes if large and boil for 7-8 minutes in a pan of salted water with a steamer full of beans over the top until they are both tender. Cool them separately under the cold tap.
  • Pile the potatoes into a bowl followed by the beans and peas. Just before serving, peel, stone and chop the avocados and toss with lemon juice to stop them discolouring. Pile on top of the salad and drizzle over the dressing.
  • Cover the bowl with cling film to transport. Toss just before bringing to the table to mix and coat everything in the mayo dressing. If you have a long journey or want to make this a day ahead, prepare and add the avocados and lemon juice.

Using yogurt makes this a healthy potato salad perfect for summer

1kg small new potato
1 garlic clove , crushed
200ml natural yogurt
1 tsp white wine vinegar
1 tsp caster sugar
3 spring onions , finely sliced
large handful mint leaves, roughly torn

Steps:

  • Boil the potatoes for 15 mins or until, tender, then drain and cool. Stir together the garlic, yogurt, vinegar and sugar with some seasoning, to make the dressing. Can be made to this stage up to a day ahead.
  • To serve, mix most of the spring onions and mint into the dressing, then pour it over the potatoes. Stir gently, taking care not to break the potatoes up. Scatter with the rest of the spring onions and mint to serve.

Looked all over zaar for this recipe and was surprised not to find it! This is our favorite summer potato salad recipe. The recipe comes from the cookbook "Hellmann's Mayonnaise - Over 100 Ways To Bring Out The Best".

1 cup Hellmann's mayonnaise (Light or Cholesterol Free Reduced Calorie)
2 tablespoons dijon-style mustard
2 tablespoons chopped fresh dill
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 1/2 lbs small red potatoes, cooked and quartered
1 cup sliced radish
1/2 cup chopped green onions or 1/2 cup chives

Steps:

  • In a large bowl combine the mayonnaise, mustard, dill, salt and freshly ground black pepper.
  • Stir in potatoes, radishes and green onions (or chives).
  • Cover and chill until ready to serve.

This light and refreshing potato salad is the antithesis of the usual, creamy, mayonnaise-based recipes. The mint and scallion add a bright, herbal flavor while the sprinkle of chile lends a kick. Make this the morning you plan to serve it and let it marinate at room temperature all day long. Or refrigerate for longer storage but be sure to bring it to room temperature before serving. Other herbs like cilantro, parsley, tarragon and sage can be substituted for the mint; adjust the quantity to taste.

2 pounds small waxy white or yellow potatoes, roughly about the same size
Juice of 1 lemon, more for serving
1 1/2 teaspoons kosher salt, more as needed
1/2 cup extra-virgin olive oil
1/2 cup thinly sliced scallions, white and light green parts, more for serving
1/4 cup torn mint leaves, more for serving
1/4 teaspoon Turkish pepper, more for serving

Steps:

  • Place whole unpeeled potatoes in a large pot with enough salted water to cover by 1 inch. Bring to a boil over medium-high heat and cook until potatoes are just tender, 15 to 25 minutes depending upon size. Drain and cut potatoes into 1 1/2-inch chunks as soon as you can handle them.
  • In a bowl, whisk together lemon juice, salt and olive oil.
  • Transfer hot potatoes to a large bowl and toss with dressing, scallions, mint and Turkish pepper. Let cool to room temperature, or refrigerate until ready to use. Just before serving, top with additional lemon juice, scallions, mint and Turkish pepper.

4 -5 cups cubed potatoes, cooked, drained
1/2 cup chopped celery
1/2 cup chopped red onion
3 hard-cooked eggs, chopped
2 tablespoons chipped sweet pickles
2 teaspoons sweet pickle juice
1/2-2/3 cup mayonnaise
1/2-1 teaspoon prepared mustard
1/4-1/2 teaspoon salt
1/8 teaspoon ground black pepper

Steps:

  • Boil potatoes until tender.
  • Drain and cut potatoes into cubes.
  • Chop celery, red onions and pickles.
  • Hard boil eggs and chop.
  • Combine all in gredients in a bowl and stir gently to combine. Regridgerate until serving time.
