PATTY'S MASHED TURNIPS

The smell of hot buttery turnips always reminds me of the holiday season when my grandmother prepared this dish for the family. Originally submitted to ThanksgivingRecipe.com.

Number Of Ingredients 5

7 large turnips
1 cup milk
2 tablespoons butter
salt to taste
ground black pepper to taste

Steps:

  • Peel, wash, and quarter turnips.
  • Boil 35-45 minutes or until tender. Strain and rinse cooked turnips.
  • Place in large mixing bowl and use fork to break up turnips into smaller bits. Add milk and butter. Blend to desired consistency. Add salt and pepper to taste.

I have always loved turnips--not turnip greens--just plain ol' boiled turnips with salt and pepper and plenty of butter. They don't even need a recipe, really. I am one of the few people I know who likes them, however. And that's okay. More for me!

4 medium turnips
1 tsp salt
1 pinch pepper
1 Tbsp butter
water

Steps:

  • 1. Peel and slice the turnips. Place them into a large saucepan and half-fill with water; add salt.
  • 2. On medium-high heat, bring turnips to a boil. Lower heat, cover, and simmer about 30 minutes or until tender. Drain into a colander and place back in saucepan.
  • 3. Partially mash with potato masher, adding butter as you mash. Turnips will be lumpy but slightly mashed. Add salt and pepper as desired.
  • 4. May add toppings of your choice, such as bacon bits, garlic, or shredded cheese

I received some nice organic turnips last week and I wanted to do something with them besides just boil and mash. I thought they might be good with some heavy cream I had, so I played around with it and some spices and came up with a darn good side dish! Now I'm wondering what a little cheese would do . . .

3 large turnips
1 tsp whole cloves
1 bay leaf
1 Tbsp salt
2 Tbsp butter
1/2 c heavy cream
1 tsp salt
1/2 tsp white pepper
1/4 - 1/2 tsp nutmeg

Steps:

  • 1. Peel turnips and cut into chunks. Boil water in a large saucepan and add the tablespoon of salt, the cloves and bay leaves. Boil turnips, covered for 15 or 20 minutes, or until tender. Drain and remove spices.
  • 2. Return turnips to the pot and add the butter and cream. Simmer over low heat while mashing the turnips with a potato masher or spoon.
  • 3. Add in white pepper, remaining salt and nutmeg to taste. Serve while hot.

1 ½ cups water
3 tablespoons extra-virgin olive oil
¼ teaspoon salt

Steps:

  • Bring chicken broth, water, oil, salt, and pepper to a boil in a stockpot. Add turnip greens and sugar and return to a boil; reduce heat to medium-low and simmer, stirring every 15 minutes, until greens are tender, at least 30 minutes or up to 2 hours.

2 tablespoons vegetable oil
1 large onion, chopped
1 teaspoon ginger-garlic paste
2 small green chile peppers, seeded and chopped
2 tomatoes, chopped
1 teaspoon ground coriander
1 teaspoon ground cumin
½ teaspoon ground turmeric
salt to taste
2 cups peeled and cubed turnips
⅔ cup hot water
1 teaspoon brown sugar

Steps:

  • Heat oil in a large saucepan over medium heat. Add onion; cook and stir until soft, about 10 minutes. Stir in ginger-garlic paste and chile peppers; cook until fragrant, about 1 minute.
  • Stir tomatoes, coriander, cumin, turmeric, and salt into the saucepan; mix well. Add turnips and hot water; stir well. Cover and bring to a boil. Reduce heat and simmer until turnips are tender, 20 to 30 minutes. Add brown sugar and coarsely mash the turnips.

Kosher salt (to taste)
1 pound turnips (peeled and diced large)
2 to 3 tablespoons butter
1 teaspoon sugar
1/4 teaspoon ground pepper

Steps:

  • Gather the ingredients.
  • Bring a large pot of water to a boil over high heat and season with salt.
  • Once boiling, add the peeled and diced turnips. Cook until fork tender, about 20 to 30 minutes.
  • Drain the turnips and place them back into the pot. Add the butter , sugar, and pepper, and season with salt to taste.
  • Using a potato masher, mash the turnips with the butter and seasonings until it reaches your desired consistency. Taste and adjust the seasonings as needed.

1 small red beet, peeled and quartered
1 clove garlic, thinly sliced
1/2 cup white vinegar
2 tablespoons kosher salt
1 teaspoon sugar

Steps:

  • Put the turnips, beet and garlic into a wide-mouth, heatproof 1-quart jar.
  • In a small saucepan, bring the vinegar, salt, sugar and 1 1/2 cups of water to a boil. When the salt and sugar are fully dissolved, pour the brine over the vegetables to fill the jar. Leave to cool. When completely cool, cover the jar and chill for 1 week.
