Homemade Brown Sugar Spiced Simple Syrup image

The perfect addition for holiday drinks and warm cocktails, this easy brown sugar simple syrup is spiced with nutmeg, cinnamon, cloves and allspice.

1 cup brown sugar
1 cup water
3 cinnamon sticks
1 teaspoon whole allspice
1 teaspoon whole cloves
1 teaspoon grated nutmeg
1 Tablespoon orange zest
1/2 vanilla bean (optional)

Steps:

  • Gather the ingredients.
  • In a small saucepan, add the water, cinnamon, orange zest, and spices. Bring to a boil.
  • Add sugar and stir constantly until the sugar is fully dissolved.
  • Remove from the heat, cover, and allow to cool completely. The cooling time allows the spices to infuse the syrup. Leave them for at least 3 hours and taste it periodically until it reaches your desired flavor.
  • Strain the spices from the syrup using a fine mesh strainer.
  • Bottle and store in the refrigerator.

2 cups (packed) golden brown sugar
2 cups water
3/4 cup dark corn syrup
1 1/2 tablespoons fresh lemon juice
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract

Steps:

  • Stir all ingredients in heavy large deep saucepan over medium-low heat until sugar dissolves. Attach candy thermometer to side of pan (do not allow tip to touch bottom). Increase heat to high. Boil without stirring until thermometer registers 220°F, occasionally swirling pan and brushing down sides with wet pastry brush, about 12 minutes (time will vary depending on size of pan). Strain syrup into medium bowl. Cool to room temperature. (Can be made 1 day ahead. Let stand at room temperature. Rewarm before serving.)

1/2 cup pure maple syrup
1 cinnamon stick
1 star anise
1/2 teaspoon whole cloves
Pinch of kosher salt
1/4 cup heavy cream, chilled
1/4 cup creme fraiche, chilled
2 teaspoons spiced syrup
1/2 teaspoon pure vanilla extract
3 cups mixed berries, rinsed and halved or quartered if large
2 tablespoons chopped Marcona almonds, optional

Steps:

  • In a small saucepan, combine the syrup, cinnamon, star anise, cloves and salt. Bring to a simmer over medium heat, then reduce the heat and simmer gently for 5 minutes. Remove from the heat and allow the mixture to cool completely. Strain the syrup through a fine mesh strainer, discarding the spices. Cool to room temperature.
  • In a medium bowl, combine the heavy cream, creme fraiche, 2 teaspoons of the spiced syrup and vanilla. Using a large whisk or handheld mixer, beat until the cream thickens and soft peaks begin to form (careful not to over whip).
  • Divide the berries among 4 coupe glasses or dessert dishes. Dollop with the whipped creme fraiche and drizzle with 1 to 2 teaspoons of the syrup. Sprinkle with almonds, if using. Leftover syrup will keep for 2 weeks in the refrigerator in a sealed jar.

  • Bring sugar, 1 cup water, the peppercorns, cloves, cinnamon stick, star anise, and zest to a boil in a small saucepan. Reduce heat, and simmer 5 minutes. For milder flavor, remove star anise, and discard; simmer 10 minutes more. Remove from heat. Let cool completely. Pour through a sieve into a bowl; discard solids. 1 large ginger root, 4 to 6 ounces, grated.

  • Place all ingredients except sugar and ginger in a large saucepan and bring to a boil. Turn down the heat and simmer, covered, for two hours. Remove from heat and stir in sugar until well dissolved. Cool to room temperature, then grate the ginger and stir in. Cover and set aside for at least 12 hours.
