PRESERVED LEMONS
Preserved lemons, sold loose in the souks, are one of the indispensable ingredients of Moroccan cooking, used in fragrant lamb and vegetable tagines, recipes for chicken with lemons and olives , and salads.

Steps:
- 1. If you wish to soften the peel, soak the lemons in lukewarm water for 3 days, changing the water daily.
- 2. Quarter the lemons from the top to within 1/2 inch of the bottom, sprinkle salt on the exposed flesh, then reshape the fruit.
- 3. Place 1 tablespoon salt on the bottom of the mason jar. Pack in the lemons and push them down, adding more salt, and the optional spices between layers. Press the lemons down to release their juices and to make room for the remaining lemons. (If the juice released from the squashed fruit does not cover them, add freshly squeezed lemon juice - not chemically produced lemon juice and not water.*) Leave some air space before sealing the jar.
- 4. Let the lemons ripen in a warm place, shaking the jar each day to distribute the salt and juice. Let ripen for 30 days. To use, rinse the lemons, as needed, under running water, removing and discarding the pulp, if desired - and there is no need to refrigerate after opening. Preserved lemons will keep up to a year, and the pickling juice can be used two or three times over the course of a year.
- According to the late Michael Field, the best way to extract the maximum amount of juice from a lemon is to boil it in water for 2 or 3 minutes and allow it to cool before squeezing.

- •Located on Morocco's Atlantic coast, south of Casablanca and north of Essaouira, the city of Safi is known for its seafood specialties. •To most closely approximate the flavor of Moroccan lemons, Wolfert recommends Meyer lemons for this recipe. This lemon/mandarin orange hybrid, in season in January and February, has yellow-orange flesh, a smooth rind, and a sweeter flavor than other lemons. •To sterilize a mason jar for the lemons, place it upside down in a steamer and steam for 10 minutes. Using tongs (wrap the ends in rubber bands for a better grip), remove the hot jar and dry it upside down on a paper towel-lined baking sheet in a warm oven. To sterilize the jar's top, boil it in water for 5 minutes, then remove with tongs. For more information on home canning, click here. •When you're ready to use a lemon, remove it with clean utensils to avoid contaminating the inside of the jar with bacteria. This way, the remaining contents of the jar will not need to be refrigerated.
SPICED PRESERVED LEMONS
Steps:
- Wash the lemons well. Trim away the stem end and slice the lemons into six segments per piece of fruit.
- Place the spices into a large, wide mouth jar (choose one that can hold at least 24 ounces).
- Pour one tablespoon of kosher salt into the bottom of the jar and pack in the first six slices of lemon. Top lemon with salt and then more lemon and continue to alternate until the jar is filled and you're out of lemons and salt.
- Place a tight-fitting lid on to the jar and shake.
- Let the jar sit in a cool, dark place for 2-3 weeks.
- Shake the jar daily to help distribute the salt, spices and liquid.
- Open the lid every few days, to allow the lemons to breathe and to release any fermentation pressure.
- Once the lemon skins look soft and the liquid has taken on a pleasantly funky, tangy taste, put the jar in the fridge. They will keep up to a year.

SPICED PRESERVED LEMONS

- Wash and dry lemons. Cut into quarters, leaving them connected at stem end. Transfer to a large bowl, squeezing each quarter into bowl as you go. Add salt, and toss.
- Arrange lemons and salt in a one-quart jar, layering with peppercorns, cinnamon sticks, and bay leaves. Add all the lemon juice from the bowl. Add enough freshly squeezed lemon juice to cover lemons. Cover, and keep in a cool, dry place, such as the refrigerator, for 2 weeks, shaking every day to redistribute salt and help it dissolve.
- To use, discard the flesh from the center of each lemon wedge, rinse under cold water, and pat dry. Store the lemons in the refrigerator. Will keep about 6 months.

MOROCCAN SPICED PRESERVED LEMONS
Preserved lemons add an unique flavor to many Moroccan & North African dishes. They are easy to make & they store for a long period of time.

- Pour the lemon juice in a large glass jar then add the spices & 1 tablespoon of sea salt.
- Slice the lemon 5 times, from top to bottom, leaving 1/2 inch at both ends. Squeeze open each slit & add a generous amount of sea salt into each opening. Gently reshape the fruit when you are done. Repeat for each lemon.
- Pack the lemons into the jar, pressing them down to release their juices & to make room for the remaining lemons. Add any remaining salt to the jar. Cover the lemons the rest of the way with water then seal with a lid, leaving some air space at the top.
- Let ripen for at least 30 days in a warm place. Shake the jar a couple times a week to distribute the salt & spices.
- Preserved lemons do not need to be refrigerated & will keep up to a year. The pickling juice may be used 2 or 3 times over a year's time, simply add any unused rinds to the jar after sprinkling with salt.
- To use: Rinse with running water then remove & disregard the pulp (optional, my husband likes the pulp).

SPICED PRESERVED LEMONS
A staple of the Moroccan kitchen, preserved lemons have a soft, silky-smooth texture and a salty, pickled taste. The only hard thing about making them is waiting for them to cure, which takes about four weeks. But they're worth it. I make these in a wide-mouthed glass jar that has a glass lid. This way, it's easy to pack the lemons into the jar and no metal comes in contact with the lemon juice and salt. Use the preserved lemons in Tomato, Feta & Preserved Lemon Salad, or see the Serving Suggestions, below.

- Toss the lemon slices in kosher salt to coat, and place them into a sterile 2 quart glass jar. Pour in the lemon juice, cover tightly, and let stand on the counter for 1 week. Turn the jar over daily. At the end of the week, top the jar off with enough olive oil to cover the lemons. This will keep in the refrigerator for up to 4 months.
- To use, pull the lemon pulp from the peel, and scrape out the pith to leave only the yellow rind. Julienne, and add to your favorite dish for a lemony zing.

PRESERVED FRESH LEMONS
I always have at least one jar of preserved lemons made & ready to use; I use them extensively, especially in Tagines and Maghreb, (North African) cuisine. They are also wonderful when diced very finely and added to a whole chicken, or lamb for roasting. Just a small amount can enhance all types of daube, stew, casserole or crock-pot cooking. These are very easy to make & add a splash of colour to your pantry. DO try use unwaxed and untreated lemons wherever possible.

- Soak the lemons in water for 2 to 3 days, changing the water 2 - 3 times, once a day.
- Pat the lemons dry and quarter them from the top to just above the bottom, about 1/2" - leaving them in one piece.
- Open up the lemons slightly, and sprinkle the sea salt onto the cut flesh - reshape them afterwards, so they look whole again.
- Place half the remaining salt in the bottom of a large Sterilising jar; I use 1.5 litre Kilner jar for this amount.
- Pack the lemons in and add the bay leaf and spices amongst the lemons.
- Add the remaining salt & press down to release the lemon juice from the lemons.
- Pour over the lemon juice - it's difficult to say exactly how much, but the last time I made these, I used about 500mls of unsweetened lemon juice; and in the past, I have used between 6 & 8 fresh lemons, squeezed - depending on the juiciness & size of lemons!
- Seal and leave for at least one month; these will last up to 6-10 months in ideal conditions, dark & cool.
- When you come to use the lemons, make sure you rinse them thoroughly beforehand.
- IDEAS: Chop them up finely and add to baked fish dishes; put a whole lemon in to the cavity of a chicken to roast - take it out when cooked, and chop up finely and add to any gravy or sauce; Cut into quarters and add to tagines & stews; finely dice a lemon and add to sauces and stocks for stews & crockpot recipes -- the list is endless!

MORROCAN PRESERVED LEMONS

Their unique pickled taste and special silken texture cannot be duplicated with fresh lemon or lime juice, despite what some food writers have said. In Morocco they are made with a mixture of fragrant-skinned doqq and tart boussera lemons, but I have had excellent luck with American lemons from Florida and California. Moroccan Jews have a slightly different procedure for pickling, which involves the use of olive oil, but this recipe, which includes optional herbs (in the manner of Safi), will produce a true Moroccan preserved-lemon taste. The important thing in preserving lemons is to be certain they are completely covered with salted lemon juice. With my recipe you can use the lemon juice over and over again. (As a matter of fact, I keep a jar of used pickling juice in the kitchen, and when I make Bloody Marys or salad dressings and have half a lemon left over, I toss it into the jar and let it marinate with the rest.) Use wooden utensils to remove the lemons as needed. Sometimes you will see a sort of lacy, white substance clinging to preserved lemons in their jar; it is perfectly harmless, but should be rinsed off for aesthetic reasons just before the lemons are used. Preserved lemons are rinsed, in any case, to rid them of their salty taste. Cook with both pulps and rinds, if desired.
