- Drain pineapple, reserving 1 cup juice. In a saucepan, combine the sugar, vinegar, cinnamon, cloves, salt and reserved pineapple juice. Bring to a boil. Reduce heat; cover and simmer for 10 minutes., Discard cinnamon and cloves. Add pineapple. Return to a boil; cook and stir for 2-3 minutes. Serve warm with a slotted spoon.

Steps:
- Drain pineapple, reserving juice. Set pineapple aside and pour juice into saucepan. Add sugar, vinegar, salt and spices to pineapple juice.
- Bring to boil, then simmer for 10 minutes, stirring occasionally. If desired, add red food coloring to tint a delicate pink.
- Pour hot syrup over pineapple. Cover and let it cool, then chill for several hours.
- Serve as is or with dip.

CHILE-SPICED PINEAPPLE
Steps:
- Skewer 3 pineapple chunks onto each cocktail skewer or toothpick and arrange on a plate.
- In a small bowl, combine the chile powder, cumin, salt and pepper and mix with a fork. Sprinkle onto all sides of the skewered pineapple chunks and serve.
SPICY PINEAPPLE SLICES
Steps:
- In a small bowl mix the salt, chile powder, and brown sugar. Sprinkle over both sides of the pineapple slices. Place pineapple slices onto a preheated, oiled grill or grill pan on high heat for 1 minute on each side. Reduce heat to low and continue cooking for 2 to 3 minutes per side or until the pineapple has softened and the sugar has caramelized on the edges.
SPICED PINEAPPLE LENTILS
Steps:
- Heat the oil in a medium pot over moderate heat. Saute the onions with the salt and pepper until golden, about 10 minutes. Stir in the garlic and lentils and cook 2 minutes, stirring frequently. Pour in the water, bring to a boil, reduce to a simmer and cook, covered, 45 minutes. Stir in the pineapple, remove from the heat and serve.
SPICY PINEAPPLE SAUCE
Steps:
- In a small saucepan, combine pineapple chunks, habanero pepper, and mint leaves. Simmer for 5 minutes. Cool thoroughly and remove mint.
- In a large saute pan, bring 1 cup of corn oil to 325 degrees F. Add wedges of corn tortillas and cook until golden brown on each side, approximately 3 minutes. Drain on paper towels.
- Liberally dust warm corn wedges with sugar and cinnamon mixture.
- Serve pineapple salsa over ice cream with the fried corn tortillas.

- Add the oil to a large non-stick pan, season the steaks well, then fry for 5 mins on each side until golden and almost cooked through. Mix the sugar, soy, tomato purée and most of the pineapple juice in a bowl.
- Add the pineapple rings to the pan and let them caramelise a little alongside the pork. Add the chilli and five-spice to the pan, then fry for 1 min until aromatic. Posted per a request. Cannercarol, at an extinct canning website, gave this recipe to me when I was trying to duplicate one I had tasted years ago. It's great on bran muffins (don't laugh), crackers, biscuits (and now I want to try it on scones). Prep time and cook time are estimated. Does not include time in boiling bath or standing time

Steps:
- Add water to pineapple to make 3 1/4 cups.
- Place in 6 quart saucepan.
- Tie spices in bag.
- Add spicebag and pectin to pineapple in saucepan.
- Stir.
- Cook over high heat until mixture boils.
- Add sugar all at once.
- Mix well.
- Bring to a rolling boil.
- Boil hard for one minute.
- Remove from heat.
- Remove spicebag.
- Ladle into hot jars.
- Wipe rims.
- Seal.
- Process 10 minutes in boiling water bath.
- Takes about 2 weeks to set.
- NOTE: There may be some liquid on top of jars with jam set underneath.
- This is fine- it's caused because of the acid in the fruit.

- In a small saucepan, melt 2/3 cup butter; stir in brown sugar.

- To make the brittle, line a heavy baking tray with parchment, and put the maple syrup, sugar, butter and 25ml water in a heavy-based saucepan. Stir until the sugar has melted, then leave to bubble on a medium heat for 15 mins or until dark golden brown. Stir in the sesame seeds and sea salt flakes, and stir briefly before pouring onto the lined tray. Working carefully so you don't touch the sugar and burn yourself, spread out into a thin layer. Leave to cool and harden.
- Mix the lime juice and most of the lime zest with the ground ginger, mixed spice and maple syrup. Top and tail the pineapple, cut away the skin and any black marks from the flesh, then cut into 1cm slices. Toss with the lime and maple mix, then leave for at least 30 mins to marinate.
- Wait until the embers are low on a barbecue (the ideal time is after you've cooked a main) or heat a griddle pan to hot. Lightly oil the grill bars or griddle pan to prevent the fruit from sticking, and grill the pineapple for 1-2 mins on each side until golden and lightly charred. Cut into bite-sized shards, then transfer to a platter while you cook the rest.
- Finely slice the larger basil or mint leaves and keep the smaller leaves whole. Bash the brittle into pieces, and serve scattered over the charred pineapple with the herbs and a drizzle of the marinade. Scatter the remaining lime zest over the yogurt or frozen yogurt and serve on the side.

SPICED PINEAPPLE JAM
Pineapple jam with spices added. I had allot of pineapple and needed to use it up, so I went looking for jam recipes. I could only find plain fruit jams, so I saw this recipe on the net for this Asian jam for jam tarts, but it took along time to cook. There was no name to the original recipe. So I took the spices, add more and then put it with the pectin pineapple jam I have made in the past. Hope you like it, it is good on toast, but allot of people have told me it is great on ice cream. I like it with ham. Time does not count 1 hour soak. Cooking time has canning time added to it.

Steps:
- Combine the pineapple, cloves, stick of cinnamon and 1 cup of sugar in a pan and let stand for 1 hour.
- After 1 hour, add the remaining sugar and place the pan over a medium-high heat; stir constantly until the sugar dissolves.
- Bring the mix to a rolling boil for two minutes.
- Remove the pan from the flame and skim off any foam that accumulates.
- Place the pan over the heat again for 1 minute to boil.
- Again, remove and skim off the foam. Add the butter and bring the mixture to a boil again.
- Take off heat, take out the cloves and stick of cinnamon. Add the 1sp ground cinnamon, add the pectin and stir constantly.
- Bring to a rolling boil again for 1 minute. Take of heat and skim off the foam.
- Allow the jam to cool for 5/10 minutes.
- Ladle into canning jars. Wipe rim with sterilized cloth.
- Apply lids then rings and tighten to fingertip tightness.
- Process in a water bath for your altitude time.
- P.S. I know it seems like allot of boiling time, but pineapple is a hard fruit and this foams allot. You can also use canned pineapple, just make sure it is not in sugar syrup and can skip the 1 hour soaking time.
