Russian Chili image

A bold twist to a traditional favorite. This recipe would have even pleased Stalin.

2 pounds ground beef
1 tablespoon olive oil
2 onions, chopped
1 green bell pepper, chopped
2 stalks celery, chopped
1 (12 fluid ounce) can or bottle flat beer
1 cup water
2 tablespoons chili powder
salt and pepper to taste
½ teaspoon dried parsley
1 teaspoon ground cumin
1 (6 ounce) can tomato paste
1 (15 ounce) can kidney beans
1 cup sour cream

Steps:

  • In a large skillet over medium heat, cook beef until brown. Drain and let cool. Rinse with water. Drain.
  • In a large pot over medium heat, cook onion, bell pepper and celery in oil until just tender. Stir in ground beef, beer, water, chili powder, salt, pepper, parsley and cumin. Reduce heat, cover and simmer 30 minutes.
  • Stir in tomato paste and cook 10 minutes more.
  • Stir in kidney beans and heat through. Remove from heat and stir in sour cream.

1 tablespoon finely chopped onion
1 cup purchased or homemade mayonnaise
1/4 cup ketchup-style chili sauce or ketchup
4 teaspoons bottled (regular; not packed in beet juice) horseradish, or to taste
1 teaspoon hot sauce, preferably Frank's Red Hot Sauce
1 teaspoon Worcestershire sauce
1/4 teaspoon sweet paprika
Fine sea salt

Steps:

  • In a mortar and pestle, mash the onion to create a paste, or use a large heavy knife to mince and mash the onion into a paste. Transfer the onion paste to a small bowl and whisk in the mayonnaise, chili sauce, horseradish, hot sauce, Worcestershire sauce, and sweet paprika. Season with fine sea salt, if desired. DO AHEAD: The dressing can be prepared ahead and refrigerated, in an airtight container, up to 2 weeks.

  • In a small bowl, whisk together the mayonnaise, onion, horseradish, Worcestershire, parsley, chili sauce and ketchup. Chill until serving.

500 g ground beef
1 tablespoon olive oil
1 onion, finely chopped
1 stalk celery, chopped
1 green bell pepper, chopped
300 ml beer
1/2 cup water
1 tablespoon chili powder
1/2 tablespoon dried parsley
1/2 teaspoon ground cumin
75 g tomato paste
300 g kidney beans
1 cup sour cream

Steps:

  • In a large skillet over medium heat, cook beef till brown. Drain and let cool.
  • In a Dutch oven cook over medium heat onion, bell pepper, and celery in oil until just tender. Stir in ground beef, beer, water, chili powder, parsley and cumin and pepper and salt to taste. Reduce heat, cover and simmer for 30 minutes.
  • Stir in tomato paste and cook for another 10 minutes.
  • Stir in kidney neans and heat through. Remove from heat and stir in sour cream.
