2 cloves garlic, chopped
2 tablespoons extra-virgin olive oil, plus extra for brushing
1/4 cup freshly squeezed lime juice (about 2 limes)
1/2 teaspoon kosher salt
2 tablespoons chopped fresh cilantro leaves plus 2 sprigs for garnish
Two 5- to 6-ounce mahi-mahi fillets
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
Mixed greens, for serving

Steps:

  • Put the garlic and olive in a small microwave-safe bowl, cover with plastic, and microwave on HIGH until the garlic is soft and aromatic, 1 to 2 minutes. (Alternatively, heat the oil and garlic in a small saucepan over medium heat until the garlic is softened.) Stir in the lime juice, cilantro leaves, and salt. Set aside until ready to serve.
  • Prepare an outdoor grill to medium high heat. Brush the fillets all over with olive oil and season generously with salt and pepper. Lay the fish on the grill, rounded-side down, and leave it until you can lift the fish without it sticking to the grill and there are distinct grill marks, about 5 minutes. (Test it by gently lifting a corner--if it sticks, cook it a bit longer and try again). Carefully turn the fish over and cook until firm to the touch, about another 5 minutes.
  • Place a bed of greens on 2 plates. Divide the fish between the plates and brush with some of the mojo. Garnish with cilantro sprigs and serve with the sauce.

2 cups red quinoa
4 tablespoons extra-virgin olive oil
1 cup diced sweet onion
1 tablespoon minced garlic
2 cups low-sodium chicken broth
1/4 cup white wine
1 lemon, juice and zest
Kosher salt and freshly ground black pepper
1/2 cup chopped fresh basil
1/2 cup chopped oil-packed sun-dried tomatoes
2 tablespoons extra-virgin olive oil
1 tablespoon chopped fresh cilantro
1 tablespoon fresh lime juice
1 teaspoon ground cumin
4 Roma tomatoes, finely diced
1 hothouse cucumber, finely diced
1 mango, diced
1 shallot, minced
Kosher salt and freshly ground black pepper
1/4 cup rice vinegar
3 tablespoons white miso paste
2 tablespoons lime juice
2 teaspoons sugar
1 teaspoon sesame oil
1 teaspoon low-sodium soy sauce
1/2 teaspoon chili flakes

2 tablespoons extra-virgin olive oil
1 small head red cabbage, cut into 1/2-inch wedges through the root (so they stay intact)
1/2 cup shredded carrots
1/2 cup bias-cut scallions
1 cup golden raisins, bloomed in hot water

Steps:

  • For the mojo: Place the lime juice and zest, orange juice and zest, olive oil, oregano, shallots, cumin, capers, garlic, cilantro, 1 tablespoon salt and 1 tablespoon pepper in a blender and puree until smooth. Put half aside for serving as a sauce with the finished fish and the rest in a large plastic resealable bag.
  • For the mojo mahi-mahi: Add the mahi-mahi fillets to the bag with the mojo and marinate in the refrigerator for 20 to 25 minutes.
  • Set a grill to high and grease well with oil to clean and create a nonstick surface. Remove the fish from the marinade and shake off any excess marinade. Pat the fish dry with paper towels and drizzle liberally with olive oil. Grill until well marked and cooked through, 4 minutes per side. Serve the fish over the Toasted Quinoa and drizzle with the reserved mojo. Garnish with Tomato Mango Cucumber Relish and Grilled Red Cabbage Salad.
  • Rinse the quinoa under cold water and drain. Place a large pot over medium-high heat and add the quinoa. Toast until fragrant while swirling it around so it doesn't burn, 2 to 3 minutes. Transfer the quinoa to a plate and set aside. Return the pot to the heat and coat with 2 tablespoons of the olive oil. Add the onion and cook, stirring, until golden and browned on the edges, 7 to 8 minutes. Add the garlic and cook, stirring, until fragrant, 30 seconds. Return the quinoa to the pot and add the broth, wine and 2 cups water. Bring to a boil, then reduce to a simmer and cook until the quinoa has popped open and the liquid has been completely absorbed, 15 to 20 minutes. Fluff with a fork and allow to cool slightly.
  • In a large bowl, whisk the lemon zest and juice and remaining 2 tablespoons of olive oil. Season with salt and pepper. Add the fresh basil and sun-dried tomatoes. Just before serving, toss the quinoa with the dressing.
  • Toss the olive oil, cilantro, lime juice, cumin, tomatoes, cucumber, mango, shallot, 1/2 tablespoon salt and 1 teaspoon pepper in a mixing bowl and let rest for 20 minutes before serving to allow the flavors to come together.
  • Combine the rice vinegar, miso paste, lime juice, sugar, sesame oil, soy sauce, chili flakes, 1/4 teaspoon salt and 1 teaspoon pepper in a large mixing bowl and whisk to emulsify.
  • Prepare a grill for medium-high heat. Oil and season the cabbage wedges with salt and pepper. Place the cabbage on the grill and cook until marked on both sides, 2 to 3 minutes per side. While the cabbage is still warm, drizzle it with the white miso dressing so it soaks it up and the flavors marry together. Toss the cabbage with the carrots, scallions and raisins.

4 mahi mahi fillets
Butter, for sauteing
4 ounces diced white mushrooms
Salt
2 ounces olive oil
2 bay leaves
6 garlic cloves
4 shallots, chopped
1/2 onion, chopped, plus additional minced onion for garnish
1 whole jalapeno pepper
1 boiled zucchini, julienned
1-ounce fresh oregano leaves
1-ounce minced roasted tomato
1-ounce white wine

Steps:

  • In a large saute pan over medium heat, heat the olive oil. Add the bay leaves, garlic, shallots, 1/2 chopped onion, and jalapeno pepper and saute for 2 minutes. Add the boiled zucchini and fresh oregano and then continue to saute for 1 minute. Add the minced tomato, white wine, and water, stir, and remove from the heat.
  • Poach the mahi mahi fillets in water a large saute pan; cook until a knife slides in easily and fish is opaque throughout.
  • Meanwhile, heat the butter in a small saute pan. Add the white mushrooms, additional minced onion, and salt, to taste. Saute until the mushrooms are cooked through.
  • Distribute the oregano sauce among 4 serving plates, and then top with the mahi mahi. Top the fish with the mushroom and onion mixture.

This recipe is great either on the grill or in the oven broiler. The tomatoes give it a little bite. My entire family loves it, even my pickiest eater. In the winter I make this dish in my oven or broiler. The amounts I gave are approximate. I use two cans of tomatoes when I want more 'bite,' only one can when I want less. I like a lot of garlic so I generally use a lot.

5 pounds skinned, deboned mahi mahi, cut into chunks
¾ (4.5 ounce) jar bottled minced garlic
½ cup butter, diced
1 large onion, diced
1 ½ lemons, juiced
½ cup dry white wine
1 ½ (10 ounce) cans diced tomatoes with green chile peppers
salt and pepper to taste
8 ounces shredded pepperjack cheese

Steps:

  • Preheat grill for high heat.
  • Place mahi mahi in an aluminum foil pan, and toss with the garlic to coat. Distribute butter evenly throughout pan. Spread onions over fish. Pour the lemon juice, wine, and diced tomatoes with green chile peppers over the fish. Season with salt and pepper. Tightly cover pan with aluminum foil.
  • Place pan on the grill grate, and cook fish 35 minutes, or until easily flaked with a fork. Sprinkle with cheese before serving.

1 teaspoon coriander seed
1 teaspoon whole black peppercorn
1 tablespoon salt

4 (5 ounce) mahi mahi fillets
1 tablespoon olive oil
2 tablespoons olive oil
9 ounces onions, diced
2 garlic cloves, crushed
1 cup orange juice
1/4 cup lime juice
1/4 cup spiced dark rum
1 orange, segmented
1 tablespoon fresh cilantro, chopped

Steps:

  • To make the spice mix, toast the cumin seeds, coriander seeds and peppercorns in a dry saucepan set over a medium heat. Cook for about 1-2 minutes, until fragrant. Cool slightly before grinding to a powder.
  • Mix the ground spices, salt and thyme together and rub over the mahi mahi. Reserve any extra spice mix.
  • Drizzle the fish with olive oil and leave to marinate for about 15 minutes.
  • To make the mojo, heat the olive oil in a saucepan and add the onion and garlic. Cook for about 3 minutes, until the onion is softened and translucent.
  • Stir in any remaining spice mix.
  • Add the orange juice, lime juice and rum and bring to the boil. Lower the heat and simmer for 10 minutes.
  • Grill the mahi mahi for 3 minutes on each side, until just cooked through.
  • Scatter over the orange segments, garnish with fresh cilantro and serve with the mojo sauce.

1 1/2-2 lbs mahi mahi, filet
salt and pepper
flour, as needed
2 tablespoons butter, per each fish piece
3 garlic cloves (crushed)
1/4 cup white wine
1/2 teaspoon capers, per each fish piece (optional)

Steps:

  • Slice the mahi-mahi into 3" thick pieces.
  • Salt and pepper the mahi mahi filet.
  • Flour each piece and place on side.
  • Heat butter in pan on medium low. Crush garlic and place in with butter while cooking.
  • Add white wine immediately and bring up heat. Place mahi-mahi filet in pan and sauté on both sides.
  • If desired, add 1/2 teaspoons capers to pan five minutes prior to completion of each individual filet.
  • Cook with capers for another 2 minutes. Serve.

GRAPEFRUIT MOJO:
4 mahi-mahi fillets - (8 oz ea)
1 tablespoon olive oil - (to 2 tbspns)
1 grapefruit peeled, and cut into sections for serving
Zest and juice of 2 grapefruits
Zest and juice of 2 limes
1 small white onion thinly sliced
1 teaspoon minced or pressed garlic
2 tablespoons cider vinegar
6 tablespoons olive oil
Salt to taste
Freshly-ground black pepper to taste
SHRIMP MOFONGO:
2 tablespoons vegetable oil - (to 3 tbspns)
2 green plantains peeled, and sliced 1/4" thick
2 slices bacon coarsely chopped
4 large shrimp peeled, deveined, and chopped
1 teaspoon minced or pressed garlic
BLACK BEAN SCOTCH BONNET PUREE:
2 tablespoons olive oil
1 garlic clove minced or pressed
1 small onion chopped
1 Scotch bonnet cored, seeded, and minced
1 cup cooked black beans (canned or freshly cooked)
1 cup chicken broth

Steps:

  • For the mojo: Combine the citrus zests and juices with the onion, garlic, vinegar and olive oil in a medium nonreactive bowl and stir to mix. Season to taste with salt and pepper. Arrange the mahi-mahi fillets in a shallow dish and spoon half of the grapefruit mojo over the fish. Reserve the remaining mojo for serving. Marinate the fish in the refrigerator for 2 hours. For the mofongo: Heat the oil in a large skillet, preferably nonstick. Fry the plantain slices in batches over medium-high heat until golden brown. Drain on paper towels and set aside. Wipe out the skillet, add the bacon and fry until crisp. Add the shrimp and garlic and continue cooking for 3 minutes, stirring occasionally. Put the mixture in a food processor, add the plantain slices and pulse just until coarsely chopped. Transfer the mofongo to a bowl, season to taste with salt and pepper, cover to keep warm and set aside. For the black bean purée: Heat the olive oil in a medium skillet, add the garlic, onion and Scotch bonnet and sauté over medium heat until tender and fragrant, 3 to 4 minutes. Stir in the black beans and chicken broth and cook, uncovered, over medium heat for 15 minutes. Puree the mixture in blender or food processor until smooth, season to taste with salt and pepper and set aside. Cover to keep warm. Heat the oil in a large skillet, preferably nonstick. Take the fish from the mojo marinade and sauté over medium-high heat until just opaque through, about 3 to 5 minutes per side, depending on the thickness of the fish. To serve, ladle the warm black bean purée onto individual plates and mound the shrimp mofongo in the center. Lean the fish fillets against the mofongo and drizzle the remaining mojo sauce over the fish. Garnish the plates with grapefruit slices and serve. This recipe yields 4 servings. Along with his wife, Maryann, Chef Blitz recently opened a second, more casual restaurant, called Mojo, refering to the Cuban sauce/marinade of the same name. Mojo is traditionally made with sour oranges, garlic, onions and olive oil, but here the chef interprets the sauce with grapefruit and lime. Mofongo is a Puerto Rican dish based on plantains (starchy cooking bananas), usually with fried pork rinds, here with shrimp and a touch of bacon.
