SPICED NUTS
A perfect spicy snack for the holidays.

Steps:
- Preheat oven to 300 degrees. Beat egg white until soft and foamy. Combine all remaining ingredients except pecans; whisk into egg white. Stir in pecans until well coated; spread mixture in single layer onto an ungreased baking pan.
- Bake pecans for 15 minutes, then remove from oven. Using a metal spatula, toss, stir, and separate nuts. Reduce oven to 250 degrees and return nuts to bake until medium brown, about 10 minutes. Remove from oven; toss, and stir again. Place baking pan on wire rack to cool (they will crisp as they cool). Break up any that stick together.

- Preheat oven to 325 degrees F. Combine nuts and seeds in a medium-sized bowl. Add the maple syrup and spices and salt and toss to combine. Spray a baking sheet with cooking spray, then transfer coated nuts to baking sheet and spread evenly in 1 layer. Bake 15 to 20 minutes, stirring once, until nuts are fragrant and lightly toasted.
SPICED NUTS

- Heat the nuts in a dry skillet and cook, stirring frequently, until they begin to toast, about 4 minutes. Add the butter and cook, stirring, until the nuts begin to darken, about 1 minute. Add the spices, the sugar, 1 tablespoon water, and the salt and cook, stirring, until the sauce thickens and the nuts are glazed, about 5 minutes.
- Remove the nuts from the heat and transfer to a baking sheet lined with aluminum foil, separating them with a fork. Let the nuts stand until cooled and the sugar has hardened, about 10 minutes. Store in an airtight container.

- Preheat your candy thermometer. Combine the sugar, water, cinnamon, and salt in a saucepan. Turn the heat to medium and stir the mixture until the sugar has dissolved.
- Turn the heat up to medium high, then place the thermometer into the pan. The temperature will slowly rise. Cook until the soft ball stage, 240°F.
- Once the syrup reaches that temperature, remove from the heat.
- Place the butter, vanilla, and almonds in a medium-sized mixing bowl. Pour in the syrup and mix everything together until the almonds are covered with the syrup.
- It will take about 2 hours for the syrup to crystallize. It should turn out as a soft glaze.

SPICED MIXED NUTS

- Preheat the oven to 250 degrees F. Line a baking sheet with parchment paper.
- Mix the cayenne, cinnamon, ginger, mustard powder, sugar and 1/2 teaspoon salt in a small bowl. Whisk the egg white in a large bowl until frothy. Toss in the nuts, then add the spice mixture and toss until well coated.
- Spread the nuts on the prepared baking sheet; bake until dry, about 45 minutes. Let cool completely on the baking sheet.
- Hot: These nuts are a not-too-spicy crowd pleaser. Cayenne, ginger and mustard powder give them mild heat.
- Hotter: Add 2 teaspoons chipotle chile powder to the spice mixture, then continue as directed.

- Preheat the oven to 250 degrees F.
- In a bowl, whisk the egg white until thick and frothy. Add the sugar, ras el hanout and salt and stir to combine. Add the cashews, pecans, pistachios and walnuts and stir to coat with the egg white mixture.
- Using a slotted spoon, transfer the nuts to two baking sheets. Bake until golden brown and crunchy, 25 to 30 minutes, stirring halfway. Cool and store in an airtight container for up to two weeks.

This simple yet taste recipe is the simplest recipe I have found for candied pecans, walnuts or any nut really. It's from a 14th Century English cookbook I have.

Steps:
- Mix egg white and the nuts( any kind of nut may be used) together until the nuts are sticky and well covered with egg white.
- In a "ziplock" bag, combine the sugar and cinnamon and toss the sticky nuts into the mixture.
- shake well to cover the nuts.
- Pour out the ingredients of the bag and spread onto a backing sheet that is ungreased and bake at 300F for about 20 minutes.
- The nuts will get a white looking coating on them in the oven when they are done.
- Pull out of oven and remove the nuts from the cookie sheet immediately.
- Let cool and watch them disappear!

- In a small saucepan, melt butter with garlic over moderately-low heat and remove from heat.
- In a 13 x 9 inch baking pan, spread nuts, drizzle butter over, toss well to coat and roast, stirring occasionally, for 30 minutes, or until golden and fragrant.
- Combine dry ingredients and sprinkle over nuts.
- Stir to coat.
- Continue baking 3 minutes longer.

- Heat oven to 275 degrees.
- Whisk egg white and water until foamy.
- Toss with nuts, and pour into strainer.
- Strain for 3 minutes.
- Pour nuts into brown paper bag, and shake with spices until coated.
- Pour onto cookie sheet and spread out.
- Bake 15 minutes and stir.
- Lower heat to 225 degrees, and bake 1 hour, stirring a few times.
- Turn off oven and cool with door propped open.
- Store in airtight container.
