3 pounds corned beef brisket with spice packet
10 small red potatoes
5 carrots, peeled and cut into 3-inch pieces
1 large head cabbage, cut into small wedges

Steps:

  • Place corned beef in large pot or Dutch oven and cover with water. Add the spice packet that came with the corned beef. Cover pot and bring to a boil, then reduce to a simmer. Simmer approximately 50 minutes per pound or until tender.
  • Add whole potatoes and carrots, and cook until the vegetables are almost tender. Add cabbage and cook for 15 more minutes. Remove meat and let rest 15 minutes.
  • Place vegetables in a bowl and cover. Add as much broth (cooking liquid reserved in the Dutch oven or large pot) as you want. Slice meat across the grain.

All the familiar flavors of corned beef and cabbage are loaded into this hearty soup, which is rich with barley for extra warmth and comfort.

1 medium onion, quartered
3 stalks celery, quartered
3 medium carrots, quartered
3 tablespoons unsalted butter
Heaping 1/4 teaspoon ground allspice
1 pound plum tomatoes, halved
3 cups low-sodium beef broth
4 cups chopped green cabbage (about 1/4 medium head)
1/2 pound Yukon gold potatoes, chopped
3/4 cup quick-cooking barley
1/4 pound corned beef, cut into thin strips (use leftovers or deli meat)
Kosher salt and freshly ground pepper

Steps:

  • Pulse the onion, celery and carrots in a food processor until they are pea-size pieces.
  • Melt the butter in a large pot over medium-high heat. Add the chopped onion, celery and carrots and the allspice and cook, stirring occasionally, until the vegetables are slightly softened, about 5 minutes.
  • Add the tomatoes to the food processor and pulse until finely chopped. Transfer the tomatoes to the pot and add the beef broth, cabbage, potatoes, barley and 4 cups water; cover and bring to a boil. Uncover, reduce the heat to medium low and simmer until the potatoes and barley are tender, about 20 minutes.
  • Stir in the corned beef and season with salt and pepper.

3 lbs beef roast (you pick the type of roast)
1 medium onion, cut into rings
1 bunch celery, cleaned and cut into 1 inch pieces
1 bunch carrot, cleaned and cut into 1 inch pieces
1 head cabbage, chopped into small chunks
1 (12 ounce) can beef broth
salt & pepper

Steps:

  • Cut roast into small pieces and place in crockpot.
  • Season well with salt and pepper.
  • Add beef broth and onions.
  • Turn crockpot on lowest setting for at least 24 hours.
  • Add vegetables and reseason with salt and pepper to taste.
  • Recover crockpot and allow to cook for at least another 6-12 hours.
  • Serve hot.
  • Great with salad and fresh bread.

2 can(s) canned corned beef (preferably Libby), 12 oz each
2 - 4 heads of cabbage (chopped into bite size squares)
1 stick butter (or 4 tablespoons of Country Crock butter)
2 Tbsp sugar
1/2 tsp salt (do not over salt, corned beef is salty too!)
1 Tbsp black pepper
2 box Jiffy corn muffin mix (mix and bake cornbread or muffins as directed)

Steps:

  • 1. Chop both heads of cabbage into bite-size squares.
  • 2. On high heat, in a large electric skillet or deep cast iron pot, melt butter (get it sizzling).
  • 3. Then add cabbage. Stir to coat cabbage with butter. Add salt, pepper, and sugar. Stir and mix seasonings in well.
  • 4. Lower heat to medium-high let the cabbage start to brown and some of it will even start getting a little burnt looking. That is ok, it adds to the flavor of the dish. Get as much of the cabbage started to fry and get translucent and brown. Partially cover, turn down the heat by half, almost to low. Let simmer, stirring occasionally to reduce burning and sticking. I usually let the cabbage simmer and brown for an hour or so. I let as much of the water cook off of the cabbage as possible. Taste test it to make sure you have just the right amount of **salt (I really do not use very much salt, since the canned corned beef is pretty salty.), pepper, and sugar. The taste should be more cabbage flavor than seasonings. **The only reason I add some salt to the cabbage as it is cooking is the salt helps pull excess water out of the cabbage.**
  • 5. Push all the cabbage out to the edges of the pan/pot and put the canned corned beef in the center.
  • 6. Break up the corned beef. Cover and let heat and simmer for a few minutes. Mix cabbage and corned beef together and let slow simmer while you are mixing up the cornbread and baking it.
  • 7. Once the cornbread is done, it is dinnertime. Enjoy!!

Great Grandmother was known for this one. When she knew we were going to visit she made a big kettle of this mouth watering soup and extra homemade bread and sweet butter. Hillandale Sweet butter is the closest taste to Grammy's. I've been making this soup for 20+yrs. Having had first timers eat this recipe Grammy's way they raved compliments and always came back for 3rd's! I've never been able to eat just one bowl. My youngest daughter (9 yrs) will not eat cabbage, but she finally ate cabbage with this soup and she loved it.

2 (12 ounce) cans corned beef
1 (15 ounce) can white corn (I like shoepeg in mine)
1 1/8 lbs baby carrots (faster version canned carrots is fine)
10 large russet potatoes, quartered (not canned potatoes please)

Steps:

  • Empty beef into large soup pot; cover with water and mush it a bit.
  • Let come to a boil and stir nicely to get the beef flavor going.
  • Add cabbage and fresh carrots.
  • add more water to cover and let simmer about 30 minutes.
  • Add Potatoes and corn and continue to add small amounts of water to keep enough broth for cooking and flavoring.
  • Simmer until potatoes and carrots are fork tender.
  • Stir occasionally to ensure equal tenderness.
  • Serve in large bowls and lots of cut homemade bread--you're going to need it!
  • Its usually a 2 hour prep and cook combined.
  • The longer it simmers the better the flavor.
