Portland chef Vitaly Paley makes these luscious skewers, an iconic food in the Republic of Georgia, for his Soviet-style pop-up restaurant, DaNet. For the most tender skewers, he recommends buying a boneless leg of lamb and cutting it up, rather than using lamb "stew meat" (which can come from the more gristly shoulder). Or use lamb loin, which is more expensive but has less fat and sinew. You'll need 8 (9 in.) metal skewers for this recipe. Our suggested wine pairing, for the lamb skewers served with wild plum sauce: Mark Ryan 2014 "Wild Eyed" Syrah (Red Mountain; $48).

1 medium onion, chopped
3 garlic cloves, chopped
1 teaspoon ground cumin
1 teaspoon coriander
1/2 teaspoon ground fennel
1/4 teaspoon ground fenugreek*
1/2 teaspoon sweet paprika
1/2 teaspoon hot paprika
1/3 cup chopped cilantro leaves and tender stems, plus cilantro sprigs for garnish
1/2 cup red wine vinegar
About 1 tsp. kosher salt
3 to 3 1/2 lbs. leg of lamb, fat and sinew trimmed, meat cut into 1 1/2- to 2-in. cubes (to yield about 2 1/2 lbs.)

Steps:

  • Put onion, garlic, spices, herbs, vinegar, and salt in a food processor and process into a smooth, thickish marinade.
  • In a bowl, combine lamb and marinade; turn to coat thoroughly. Cover and chill overnight.
  • Preheat a grill until very hot (550° to 600°). Slide about 4 lamb cubes onto each skewer, shaking off excess marinade. Oil grill well with a wad of oiled paper towels, then grill skewers (covered if using gas), turning once halfway through, until medium rare (cut to test), 6 to 10 minutes; they will continue to cook to medium off the heat. Season with salt.
  • Lay skewers on a platter, top with cilantro sprigs, and serve with plum sauce.
  • *Find fenugreek seeds in the spice aisle; grind in a spice grinder or clean coffee grinder.

900g boned leg of lamb , cut into 2cm in cubes
85g plain yogurt
25g ginger
5 fat garlic cloves
½ tsp red chilli powder, or to taste
1 tbsp vegetable oil
2 tsp red wine vinegar
1 rounded tsp garam masala
1 rounded tsp ground cumin

Steps:

  • Blend all the marinade ingredients until smooth, and season with 1 tsp salt and some black pepper. Add the lamb, mix well, cover and put in the fridge to marinate for as long as possible; overnight is best.
  • When ready to cook, soak 8 wooden skewers in water for 10 mins and heat a barbecue to medium-high, or heat your grill and line a baking tray with foil. Thread the lamb onto the skewers, about 4 pieces on each. Place on oiled racks of the barbecue and cook for 12-14 mins, turning often, or until charred in places and cooked right through. If you're grilling the skewers, cook for 10-12 mins.

1/4 cup vegetable oil
4 teaspoons minced garlic
1/4 cup lemon juice
1 Tablespoon dried oregano
1 Tablespoon paprika
1 teaspoon ground coriander seeds
dash Worcestershire sauce
1 pound lamb chunks

Steps:

  • In a large ziploc bag or container, whisk together vegetable oil, garlic, lemon juice, oregano, paprika, coriander, and Worcestershire sauce. Toss lamb in the marinade and making sure to coat each piece.
  • Marinade for at least 4 hours.
  • Remove lamb from marinade and discard leftovers.

These oniony, deeply spiced skewers, made with just about any kind of ground meat, are based on Adana kebabs, which are named for the Turkish city from where they're said to have originated. Adana kebabs are traditionally made from hand-minced lamb that's been larded with lamb tail fat, but the flavors of cumin, red chile flakes and sumac are just as delicious with regular ground lamb, or even ground beef or turkey. The trick to getting a pleasing, springy texture is to knead the meat and seasonings until the mixture feels sticky. Keep everything cold, and then wet your hands when you form the meat around the skewers. Cooking the kebabs over charcoal adds a compelling smokiness, but using the highest heat on your gas grill will also work well.

2/3 cup finely minced or grated white onion

Steps:

  • In a large mixing bowl, combine the meat, onion, garlic, cilantro, cumin, sumac, salt, Urfa pepper, black pepper, and cinnamon, if using.
  • With your hands, thoroughly knead and massage the meat to incorporate the ingredients, about 4 minutes. Breaking down the meat will create a sticky, cohesive mixture that results in a pleasing springy texture. You can also combine everything in an electric mixer with the paddle attachment, in which case it will take only about 2 minutes. Chill the mixture for at least 2 hours or up to overnight.
  • Wet your hands with cold water, then divide meat into 6 equal portions and mold each around a metal or soaked bamboo skewer (see Tip). Transfer skewers to a large plate or baking sheet. You can grill them right away at this point, or cover and refrigerate them while preparing the grill (up to 4 hours).
  • Heat the grill to high. When the grill is hot, lightly brush the grates with oil, and add the skewers. Cook, rotating them carefully every few minutes, until evenly browned and slightly charred in places, about 5 to 10 minutes. Transfer to a platter and let rest for a few minutes. Garnish with more herbs, sumac and flaky sea salt, and serve.

This recipe has it all: The lamb skewers are easy to assemble ahead and are perfect for outdoor grilling. The ground lamb mixture is stirred together the day before and allowed to rest. The chile-mint yogurt sauce can also be made ahead to blend the flavors, or it can be made at the last minute, depending on the cook's schedule. When it's time to serve, the host only needs to form the meat into logs, thread the skewers and quickly cook the meat. The combination of sweet onions, scallions, and garlic bring out a sweet intensity in the lamb.

  • Divide the lamb mixture into 16 equal pieces. Shape each piece into a 1-inch diameter log, approximately 3-inches long. Thread each piece lengthwise onto a skewer.
  • Grill lamb to medium rare, turning once, about 5 minutes. Serve with Spicy Yogurt Dressing.

1 1/2 to 2 pounds boneless lamb leg or shoulder, excess fat trimmed, meat cut into 1 1/2-inch pieces
Kosher salt and black pepper
1 tablespoon plus 1 teaspoon ground cumin

1 small red onion, thinly sliced
1 teaspoon ground sumac (optional)
5 tablespoons fresh lemon or lime juice

Steps:

  • Season lamb with salt and pepper. Add cumin and turmeric and toss to coat. (This can be done up to 24 hours ahead, if you like.)
  • If you're using a charcoal grill, build the fire so it's screaming hot. This lamb is to be cooked hot and fast so it can stay nicely medium-rare, so the hotter the better. If you're using a gas grill, set it on high. Bring a clean platter, cutting board or baking dish out to the grill for the skewers to rest in after cooking.
  • Combine onion, sumac (if using) and 3 tablespoons lemon juice; season with salt and pepper and toss to combine. Set aside.
  • Combine yogurt and remaining 2 tablespoons lemon juice; season with salt and pepper. Set aside.
  • Skewer the lamb onto wooden or metal skewers, 2 to 4 pieces per skewer.
  • Once the grill is hot, cook the skewers on all sides until deeply browned and lightly charred all over, 2 to 3 minutes per side (less time for smaller pieces), moving the skewers around as needed to prevent excessive flare-ups. (If you've trimmed most of the fat away from the lamb, the flare-ups shouldn't be too bad.)
  • Transfer the skewers to the platter, cutting board or baking dish to rest for a few minutes and drizzle with olive oil. Serve with the dressed onions, lemony yogurt, cilantro, olives, lavash and any pickled vegetables or peppers you like.
