SAVORY SPICED CARROT CAKE

Savory Spiced Carrot Cake image

This carrot cake is not a dessert, though at first glance it looks like one. Whimsical and festive, it could even be a birthday cake for someone lacking a sweet tooth. Serve it as a first course, or pair it with a salad for a light meal.

Provided by David Tanis

Categories     cakes, vegetables, appetizer, side dish

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 20

1 cup/125 grams all-purpose flour
3/4 cup/90 grams white cornmeal
1 teaspoon kosher salt
1 tablespoon white sesame seeds
1 teaspoon turmeric
Small pinch of cayenne
1 teaspoon baking powder
1 teaspoon baking soda
1 cup/250 milliliters buttermilk
2 eggs, beaten
2 ounces/60 grams feta cheese, crumbled
1 cup/100 grams grated carrots
1/2 cup/115 grams sliced scallions, both white and green parts, plus 2 tablespoons for garnish
4 tablespoons/60 grams unsalted butter, plus butter for greasing pan
1 teaspoon cumin seeds
1 teaspoon black mustard seeds
1 cup/240 grams crème fraîche
Cilantro sprigs, for garnish
1 teaspoon black sesame or nigella seeds, for garnish (optional)
Pinch of crushed red pepper, for garnish

Steps:

  • Position a rack in the middle of the oven and heat to 425 degrees.
  • In a mixing bowl, combine flour, cornmeal, salt, white sesame seeds, turmeric, cayenne, baking powder and baking soda.
  • In a separate bowl, whisk together buttermilk, eggs, feta, carrots and scallions. Lightly butter a 9-inch cake pan.
  • Add buttermilk mixture to dry ingredients and beat well to make a thick batter.
  • Melt butter in a small skillet over medium heat. When butter is hot, add cumin seeds and mustard seeds and cook until fragrant (seeds will begin to pop a bit). Adjust heat so butter does not burn; it's O.K. if butter browns a little.
  • Whisk hot butter mixture into batter and beat well to combine. Scrape batter into prepared cake pan and smooth top with a spatula.
  • Bake on the middle rack for 25 to 30 minutes or until a skewer or paring knife inserted into the cake comes out clean. Cool in the pan on a rack, then invert onto a plate. (Cake may be baked several hours or up to a day in advance.)
  • To finish cake, beat crème fraîche with a fork to loosen, then spread with a metal spatula or knife to coat top and sides. Decorate with cilantro sprigs and reserved scallions. Sprinkle with black sesame seeds, if desired, and crushed red pepper. Cut into wedges and serve.

SPICY ROASTED CARROT SPREAD

Spicy Roasted Carrot Spread image

Think you don't like carrots? HA! Please try this once? When I serve it, people lap it up on pita crisps or bagel chips. Sweet 'n' hot---what could be better?

Provided by La Dilettante

Categories     Vegetable

Time 35m

Yield 2 cups, 12 serving(s)

Number Of Ingredients 11

6 large organic carrots
2 shallots
3 large garlic cloves
2 tablespoons olive oil
2 tablespoons tamari or 2 tablespoons soy sauce
salt and pepper
2 teaspoons ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
1 tablespoon minced cilantro
extra vegetable broth or olive oil

Steps:

  • In a pot of salted water, boil carrots for 4-5 minutes to blanch, then drain.
  • Put carrots and other vegetables in a glass baking dish, toss with oil and soy, salt and pepper, and roast at 375 until carrots can be pierced with a fork (about 20 minutes.)
  • When cool enough to handle, cut off carrot ends, chop everything coarsely, and put everything into food processor with herbs, pulsing a few times to blend without pureeing---you want some texture. If too thick and dry, splash in a bit more oil or some broth until desired consistency is attained. Season further as needed with salt and pepper.

SPICED CARROT CAKE (COOK'S ILLUSTRATED)

Spiced Carrot Cake (Cook's Illustrated) image

This recipe is a hybrid of Spice Cake and Spiced Carrot Cake with Cream Cheese Frosting by Cook's Illustrated. The stronger spices make this simple carrot cake much more intriguing. The cardamom really brings the frosting to life. Cooking/Prep times do not include 2-hour cooling period. Nuts and raisins are listed as optional, but the cake is much better with them. If you decide to add both nuts and raisins, add 10-12 minutes to the cooking time.

Provided by Cooking Beast

Categories     Dessert

Time 1h10m

Yield 16 serving(s)

Number Of Ingredients 25

2 1/2 cups all-purpose flour
1 1/4 teaspoons baking powder
1 teaspoon baking soda
1 tablespoon ground cinnamon
1 teaspoon ground cardamom
1/4 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon allspice
1 tablespoon fresh ginger, grated (optional)
1/2 teaspoon salt
1 lb carrot, peeled (= 3 cups grated)
1 1/2 cups granulated sugar
1/2 cup light-brown sugar, packed
4 large eggs, room temperature
1 1/2 cups vegetable oil
1 cup chopped nuts (walnuts or pecans) (optional)
1 cup raisins (optional)
12 ounces cream cheese, softened
6 tablespoons unsalted butter, softened
4 teaspoons sour cream
2 teaspoons vanilla extract
1/4 teaspoon salt
1/4 teaspoon ground cloves
1 tablespoon cardamom
1 3/4 cups confectioners' sugar

Steps:

  • Adjust oven rack to middle position and heat oven to 350 degrees. Grease 13 by 9-inch baking pan. Lightly flour pan.
  • Whisk flour, baking powder, baking soda, and spices together in large bowl and set aside.
  • Mixer method: Shred carrots on large holes of box grater or use food processor (you should have about 3 cups); transfer carrots to bowl and set aside. Using stand mixer fitted with paddle, beat granulated sugar, brown sugar, and eggs on medium-high speed until thoroughly combined, about 45 seconds. Reduce speed to medium; with mixer running, add oil in slow, steady stream, being careful to pour oil against inside of bowl (if oil begins to splatter, reduce speed to low until oil is incorporated, then resume adding oil). Increase speed to high and mix until mixture is light in color and well emulsified, about 45 seconds to 1 minute longer. Mix in carrots. Mix in flour-spice mixture by hand until incorporated and no streaks of flour remain. If you want nuts or raisins or both, mix them in by hand.
  • Scrape batter into prepared pan, smooth top with rubber spatula, and gently tap pan on counter to release air bubbles. Bake cake until toothpick inserted in center comes out clean, 35 to 40 minutes, rotating pan halfway through baking. Let cake cool completely in pan on wire rack, about 2 hours.
  • Mix cream cheese with sour cream, butter, sugar, and spices. Spread frosting evenly over cake and serve. Cake can be refrigerated for up to 3 days.
