NEVER FAIL APPLESAUCE SPICE CAKE
You need just one bowl and one pan while preparing this quick and delicious spice cake with applesauce and pecans.

Steps:
- Sift flour, white sugar, soda, salt, baking powder, and spices into a large mixing bowl. Mix in 1/2 cup butter or margarine, buttermilk, and applesauce. Beat for 2 minutes with an electric mixer on medium speed. Beat in eggs. Fold in 3/4 cup chopped nuts. Pour batter into a greased and floured 9 x 13 inch pan.
- Bake at 350 degrees F (175 degrees C) for 50 minutes.
- Mix confectioners' sugar, cream cheese, and vanilla until smooth. Melt 1/4 cup butter over medium heat, and add 1 cup chopped pecans. Keep stirring until browned. Stir cooled pecans into cream cheese mixture. Frost the cooled cake.

BIG B'S PANCAKES (DAIRY FREE, DIABETIC FRIENDLY)
My late dad was a fabulous cook. My mouth waters when I think about his concoctions. He owned a pancake parlour and this is his pancake recipe that he used and that I memorized as a young girl. Fortunately it is dairy free so it works well for my dairy allergic son. My dad insisted that this recipe worked better if the batter aired for at least an hour prior to cooking. The batter can last in the fridge for up to 24 hours. I usually use 2 pans simultaneously to halve the cooking time, so the cooking time specified in this recipe is for the whole batch using 2 pans.

Steps:
- Mix all ingredients with an electric beater until smooth batter.
- Heat a non-stick frying pan on high.
- Pour enough batter into pan to cover the bottom.
- Shake the pan gently after 2-3 minutes; if the pancake lifts, it is cooked; if not, cook for another few minutes and try shaking it again until cooked.
- Flip or turn and fry on other side for 2-3 minutes until brown.
- Fill with mince or cheese for a savoury meal, or with cinnamon & sugar for a snack or ice cream & chocolate sauce for dessert.

- Preheat a large skillet or griddle to medium heat.
- In a medium mixing bowl, stir together flour, sugar, baking powder, baking soda, salt and spices.
- In another medium mixing bowl, whisk one egg until frothy. Then add applesauce, vegetable oil, water and vanilla and whisk until combined.
- Make a well in the center of the dry ingredients and whisk in the wet ingredients all at once.
- Using a 1/4 cup sized measuring cup, pour batter onto the hot, greased skillet/griddle over medium heat, leaving enough space between each pancake for them to expand. With the bottom of your measuring cup or the back of a spoon, spread out the batter in a circular motion until pancake is an even layer.
- Cook for 2-4 minutes or until surface begins to bubble and edges appear slightly dry. Turn and cook for another 2 minutes until golden brown.
- Serve hot with butter and maple syrup (or your choice of syrup).

- Preheat: Heat griddle as per instructions or if using a large skillet heat over medium to medium-high heat. Meanwhile, preheat oven to 200 degrees F, and place a baking sheet on the middle rack while oven is heating.
- Prepare: In a large mixing bowl, add flour, sugar, baking powder, cinnamon, nutmeg and salt, mix well. Next, add in the applesauce, non-dairy milk and vanilla extract, mix until just combined, do not over mix. Your mixture may seem to swell up a bit due to the baking powder, this is normal.
- Cook: Place 1 teaspoon of oil on the griddle/skillet and spread evenly over the cooking area (I use a silicone brush). Place 2 apple slices on griddle, side by side, where pancake batter is going to cook. Using a 1/4 cup measuring cup, scoop batter and place on top of apple slices. Cook until bubbles form on the top and edges start to look leathery, about 2 1/2 – 3 minutes per side. Flip pancakes, cook another 2 – 3 minutes. Repeat until batter is gone.
