SWEET POTATO-GREEN ONION SALAD



Sweet Potato-Green Onion Salad image

Number Of Ingredients 9

4 medium sweet potatoes, peeled and sliced 1/2-inch thick
1 bunch green onions
3/4 cup olive oil
1 tablespoon Dijon mustard
1/4 cup cider vinegar
1/4 cup balsamic vinegar
1 tablespoon honey
Salt and freshly ground pepper
1/4 cup coarsely chopped flat-leaf parsley

Steps:

  • Preheat grill. Brush potatoes and green onions with 1/4 cup of the olive oil. Grill the potatoes until tender, 4 minutes on each side. Cut the potatoes into 1-inch cubes and finely chop the green onions. (Do not grill the green onions.)
  • In a large bowl, whisk together the remaining 1/2 cup olive oil, mustard, vinegars, and honey and season with salt and pepper. Add the potatoes, green onions and parsley and mix until the potatoes are coated with the dressing. Season to taste with salt and pepper.

GRILLED SWEET POTATO AND GREEN ONION SALAD



Grilled Sweet Potato and Green Onion Salad image

4 large sweet potatoes, do not peel
4 scallion, used both parts, green and white
1/2 cup canola oil
Salt and freshly ground black pepper
1/4 cup cider vinegar
2 tablespoons balsamic vinegar
1 heaping tablespoon Dijon mustard
2 teaspoons honey
1/2 cup olive oil
1/4 cup fresh flat leaf parsley, coarsely chopped

Steps:

  • Place potatoes in a large saucepan, cover by an inch with cold water, add 1 tablespoon of salt and bring to a boil over high heat. Cook until just cooked through but not soft, about 40 minutes depending on the size. When cool enough to handle, slice crosswise into 1/2-inch thick slices. Must be fork tender!
  • Preheat grill to high. Brush potatoes on both sides with canola oil and season with salt and pepper. Grill until lightly golden brown on both sides and just cooked through, about 1 1/2 minutes per side. Remove to a bowl. Brush green onions with the remaining canola oil and grill until slightly charred and softened, about 4 minutes. Remove and thinly slice. Add to the potatoes.
  • Whisk together the vinegars, mustard and honey in a bowl and season with salt and pepper. Slowly whisk in the olive oil until emulsified and taste for seasoning. Pour the dressing over the potatoes, add the parsley and gently toss to combine. Serve warm or at room temperature.

3 medium sweet potatoes, peeled and cut into 1-in . pieces
4 tablespoons olive oil, divided
1/2 teaspoon salt, divided
1/8 teaspoon pepper
3 ounces thinly sliced prosciutto, julienned
1/2 cup sliced radish
1/3 cup chopped pecans, toasted
1/4 cup finely chopped sweet red pepper
2 green onions, sliced, divided
1 tablespoon lemon juice
1 teaspoon honey

Steps:

  • Preheat oven to 400*. Place sweet potatoes in a greased 15x10x1-in. baking pan. Drizzle with 2 tablespoons oil and sprinkle with 1/4 teaspoons slat and the pepper; toss to coat. Roast 30 minutes, stirring occasionally.
  • Sprinkle prosciutto over sweet potatoes; roast 10-15 minutes longer or until potatoes are tender and prosciutto is crisp. Transfer to a large bowl; cool slightly.
  • Add radishes, pecans, red pepper and half of the green onions. In a small bowl, whisk lemon juice, honey and remaining oil and salt until blended. Drizzle over salad; toss to combine. Sprinkle with remaining green onion.

2 lbs large sweet potatoes, peeled and cubed
2 tablespoons olive oil
1 large red pepper, cut in large chunks
8 green onions, chopped, both white and green
1/2 cup minced parsley
1/4 cup minced fresh cilantro
1/3 cup olive oil
1/4 cup lime juice
4 teaspoons chili powder
salt and pepper
3/4 teaspoon cumin
1 dash cayenne pepper

Steps:

  • In a large bowl, toss potatoes with oil.
  • Place on large jelly roll pan and bake at 400 degrees for 30 to 40 minutes or until potatoes are tender, stirring twice.
  • Cool for 10 minutes.
  • In same large bowl, combine red pepper, onions, parsley and cilantro.
  • Add cooled potatoes.
  • In a small bowl combine dressing ingredients and whisk.
  • Drizzle over potato mixture and toss to coat.
  • Serve room temperature.

1 tablespoon honey
1/2 teaspoon grated lime zest
1/4 teaspoon salt

Steps:

  • Place potatoes in a 15x10x1-in. baking pan coated with cooking spray. Drizzle with oil; toss to coat. Bake at 400° for 30-45 minutes or until tender. 2 tablespoons butter, melted
1/2 teaspoon ground cumin
2 large red onions, peeled and quartered (about 1 1/2 pounds)
2 garlic cloves, crushed
1 fennel bulb, thinly sliced (about 8 ounces)
cooking spray
4 cups cubed peasant bread, toasted (about 5 ounces)
2 tablespoons chopped fresh cilantro
2 tablespoons fresh orange juice
1 tablespoon fresh lime juice
2 teaspoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 400°.
  • Combine the first 6 ingredients in a jelly roll pan or shallow roasting pan coated with cooking spray; toss to coat.
  • Bake at 400° for 35 minutes or until the vegetables are tender, stirring every 10 minutes.
  • Combine vegetables and bread in a large bowl. Combine chopped cilantro and remaining ingredients, stirring mixture with a whisk.

  • Meanwhile, in a large cast-iron skillet, mix 1 1/2 tablespoons of the olive oil with the vinegar, honey and molasses; season with salt. Spread the onion slices in the skillet and bake until browned, about 20 minutes per side; transfer to a plate. Reserve the juices in the skillet.
  • In a small saucepan, toast the cumin seeds and crushed pepper over moderate heat. Transfer to a spice mill and let cool; grind to a powder. In the same pan, heat the remaining 3 tablespoons of olive oil over moderate heat. Add the garlic and cook until golden.
  • Set the reserved skillet over moderate heat, add the garlic, garlic oil, orange juice and spices and simmer for 5 minutes, scraping up the browned bits from the bottom; season with salt. Mound the arugula on plates and top with the sweet potatoes and onions. Drizzle the vinaigrette over the salad and serve.
