Chunks of sweet potatoes and tart apples are baked together with a touch of honey and red pepper in this special side dish - the perfect complement to a Thanksgiving turkey!

Steps:
- Heat oven to 375°F.
- Combine all ingredients ingredients except sweet potatoes, apples, and pecans in an ungreased 13x9-inch baking pan. Add sweet potatoes; toss to coat. Cover; bake 25-35 minutes or until fork tender.
- Stir in apples and pecans. Continue baking, uncovered, stirring once, 15-20 minutes or until apples are tender. Just before serving, sprinkle with chopped parsley, if desired.

ROASTED SWEET POTATOES AND APPLES

Steps:
- Preheat the oven to 350 degrees F.
- In a large bowl, toss the sweet potatoes generously with some olive oil, salt, cinnamon and cayenne. Lay the sweet potatoes out on a sheet tray, place them in the oven and roast until they are very soft and mushy, 30 to 35 minutes.
- Peel the apples and cut into 1-inch dice. Toss the apples with the lemon juice, some olive oil, salt and the rosemary. Lay them out on a sheet tray and place in the oven during the last 15 minutes of the cooking time for the sweet potatoes. When done, the apples should be soft and cooked through but still hold their shape. Sprinkle the walnuts over the apples during the last 5 minutes in the oven.
- Transfer the sweet potatoes to a large bowl and coarsely mash them with a potato masher. Stir in the cooked apples and walnuts. Taste and adjust the seasoning if needed.
- Serve immediately or keep in a warm oven and serve hot.
SPICED SWEET POTATO AND PARSNIP TIAN
With apple cider, Aleppo pepper, and fresh thyme, this pretty dish offers a lighter take on your usual Thanksgiving sweet potato casserole.

- Position rack in middle of oven and preheat to 325°F. Bring cider to a boil in a large saucepan over medium-high heat. Reduce heat to low, add butter, thyme, Aleppo, and 2 tsp. salt, and cook, stirring, until butter is melted. Let cool slightly.
- Place potatoes and parsnips in a large bowl. Pour cider mixture over and toss to coat. Stack a handful of slices about 3" high, then place vertically in casserole dish. Using a measuring cup or small bowl, keep slices standing up as you go, working around the perimeter and then into the center, forming concentric circles. Continue arranging slices in pan until tightly packed (you may have some leftover). Pour in cider mixture to come halfway up sides of dish; discard remaining cider mixture. Sprinkle with remaining 2 tsp. salt and cover tightly with foil.
- Bake, covered, 1 hour. Remove foil and brush pan juices over tops of slices with a pastry brush. Increase oven temperature to 425°F and bake, uncovered, until golden brown on top, 35-40 minutes more.
- Do Ahead
- After first round of baking at 325°F, let cool, then chill for up to 2 days. Bring to room temperature, then bake, uncovered, at 425°F for 40-50 minutes.

- Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil and cook 25 minutes, or until tender but firm. Drain, cool and cut into 1/4 inch slices.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking dish.
- In a small bowl, mix brown sugar, cinnamon and nutmeg.
- Layer sweet potatoes, brown sugar mixture and apples in the prepared baking dish.
- In a medium bowl, mix flour, brown sugar, butter and pecans. Sprinkle over the sweet potatoes.

- heat oven to 375*F.
- prick sweet potatoes with a fork to allow steam to escape. bake for 35 to 45 minutes or until fork tender.
- cut thin lenghwise slice from top of each sweet potato; scoop out inside, leaving a thin shell. set shells aside.
- in large mixer bowl place hot sweet potatoes and remaining ingredients, except apple, chopped pecan and pecan halves.
- beat at medium speed, scraping bowl often until well mixed and no lumps remain.
- by hand, stir in apple and chopped pecans.
- place shells on a 15x10x1" baking pan. fill shells with sweet potato mixture.
- if desired, garnish each potato with pecan halves.
- bake for 15 to 20 minutes or until heated through.

- Peel sweet potatoes and cut into slices about 1/8-inch thick. Place in pot with water to cover; cover pot and bring to boil. Cook potatoes about 10 minutes, until they are soft.
- Wash and quarter apples; remove core, and slice apples in food processor.
- Place apples, apple cider and dried fruit in pot; cover and cook until apples soften, about 5 minutes.

- Preheat oven to 400°F. Place large baking sheet in oven to heat. Combine sweet potatoes, apple juice concentrate, cinnamon and cloves in medium bowl. Sprinkle generously with salt and pepper.
