SPICE-CRUSTED SALMON OVER SPINACH
The star of this delightful 30-minute recipe is the rub. A simple combination of herbs, spices and a hint of sugar turn ordinary salmon into spectacular, giving each bite a new depth of flavor. The coating of rub keeps the inside of the salmon moist and tender while the fish is being grilled. Served with simple wilted spinach, this dish is an easy lunch or dinner, any day of the week. Add some steamed rice for a heartier plate. The rub stores well in an airtight container and works as well with chicken and beef. Swap the side for grilled asparagus or steamed carrots. Use the rub on shrimp then skewer and grill for a great salad topping.

- Preheat oven to 450°. Rub 1 teaspoon oil over both sides of salmon; sprinkle with seafood seasoning and pepper. Place in a greased 15x10x1-in. baking pan; roast until fish just begins to flake easily with a fork, 10-12 minutes., Meanwhile, place remaining oil, garlic and pepper flakes in a 6-qt. stockpot; heat over medium-low heat until garlic is softened, 3-4 minutes. SPICE-CRUSTED SALMON WITH COUSCOUS SALMON
I love salmon and couscous and this recipe from Australian BH&G Diabetic Living looks like a corker. UPDATE 24th February 2012 - made this recipe for the DM and myself but did use basil instead of corainder as we really don't care for it but the basil was a good match with the tomatoe and cucumber, unfortunately no radishes so gave a good grind of fresh black pepper (helped a little). My fillets were just under 200 grams each so allowed an extgra minute, though only 30 seconds would have been perfect still had that pink and was not dry. For the rub mix oh the flavour was sublime but only used about half of it on our 2 fillets so if you are not planning on using the rub mix again would halve for one of use (but could depend on how much mix you like to rub in).

- Preheat barbecue grill to medium.
- Put lemon pepper, dried coriander and paprika in a small bowl and mix and then rub the mix over each side of the salmon fillets and set aside.
- COUSCOUS SALAD - Put couscous in a small heatproof bowl and heat the orange juice in a small saucepan over a medium heat until hot and then pour over the couscous and stir to combine and then cover the bowl and set aside for 3 to 4 minutes or until the liquid is absorbed and then using a fork, fluff up the grains.
- Add fresh coriander, cucumber, tomato, radish and lemon zest.
- Put the lemon juice, oil and paprika in a small bowl and whisk to combine and then add lemon juice mixture to the couscous mixture and toss to combine and then set aside.
- Spray salmon fillets on each side cooking spray and put on the barbecue and cook on each side for 2 1/2 minutes for medium, or until cooked to your liking and then transfer to a plate, cover loosely with foil and set aside for 2 minutes to rest.
- Put a salmon fillet on each plate to serve, accompanied with the couscous salad.
BAY-CRUMBED SALMON WITH CREAMED SPINACH & WILD MUSHROOMS

- Crush the bay leaves as finely as possible using a pestle and mortar, then mix with the breadcrumbs, lemon zest and some seasoning, then set aside. Put the spinach in a colander and pour over boiled water from the kettle to wilt it. Rinse under cold water to cool, then squeeze out as much of the water as possible. Bring the cream, white wine and mushrooms to the boil in a pan, then remove from the heat and set aside.
- Spread out the wilted spinach in the base of a baking dish or roasting tin that's large enough to snugly fit the salmon. Pour over the creamy mushrooms. Season to taste. Lay the salmon on top, down the middle of the dish, with the rounded-side up. Season the salmon and drizzle over the lemon juice, then scatter over the breadcrumbs so the fillet is completely covered. Will keep chilled for up to 24 hrs.
- Heat the oven to 200C/180C fan/gas 6. Dot the butter over the salmon and bake for 30-35 mins until the fish is just cooked through, the crumb is golden and the cream has bubbled into the spinach. Leave to rest for a few minutes, then serve the salmon and spinach straight from the dish.

- Spread the spice mix on a plate and stir to mix.
- Toss egg mixture together.
- Dip the salmon fillets in the egg mixture and then in the spices.
- Heat enough olive oil to coat bottom of a large pan until the olive oil begins to ripple. Cook the salmon 3-4 minutes on each side over medium heat (about 8 minutes per inch of thickness).
- Remove salmon to a serving dish and kept warm. Discard the oil, add the balsamic to the pan.
- Swirl around over high heat to pick up the salmon flavors. Reduce the liquid by half. On low heat, add the honey, butter and swirl. The consistency of the sauce should thicken slightly. Don't boil it. When the honey and butter is completely mixed, add in the chopped dill and pour over the salmon. Or pour on plate and place salmon on glaze. Garnish with nuts. Serve immediately.
