MEDITERRANEAN MUSSEL AND CHICKPEA SOUP
Steps:
- 1. Heat the olive oil in a large saucepan or Dutch oven over medium heat; add the garlic and chili flakes. Before the garlic colors, add the mussels and white wine. Increase the heat to high, cover, and let the mussels steam for 3 to 4 minutes, or until they just open. 2. Discard any mussels that don't open and transfer the others to a baking dish with any cooking liquid that is in the pan. Set in the refrigerator until cool enough to handle. Once cool, remove the mussels from the shells, discard the shells. 3. In a medium-size saucepan, combine the mussels, cooking liquid, chickpeas and sliced fennel and heat through. The fennel should retain a bit of a bite. Season to taste with salt and pepper. Add the lemon juice and parsley. Serve immediately.

This soup is very good and quite easy to make. I received the recipe from my friend Kathy and I'm not sure where she got it from. I love to make this in the fall or winter when it's cool outside.

- Heat oil in large saucepan over medium heat.
- Add onion and saute 3 minutes until tender.
- Add water and next 6 ingredients.
- Bring mixture to boil.
- Cover and reduce heat, simmer 5 minutes.
- Add pasta and cook 9 minutes until pasta is tender.
- I have often used small alphabet pasta that I've had in the cupboard.

MEDITERRANEAN MUSSEL AND CHICKPEA SOUP WITH FENNEL AND LEMON
My wife, Angela, loves mussels, especially the fat, tender Mediterranean mussels you get in summer and early fall. Consequently, we eat a lot of them-steamed, in salads, with pastas, you name it. Light enough for a summer dish, this terrific soup is also delicious in the winter months made with Prince Edward Island (P.E.I.) mussels instead.

- Set a colander in a large heatproof bowl in the sink. In a large saucepan, combine the water with 1/2 cup of the wine and the bay leaves and bring to a boil. Add the mussels, cover and steam, shaking the pan a few times, until the mussels open, 4 to 5 minutes. Drain the mussels in the colander; reserve the cooking liquid. Remove the mussels from their shells and put them in a bowl. Cover with plastic wrap.
- Heat the olive oil in a large saucepan. Add the leek, celery, poblano and onion and season with salt and pepper. Cover and cook over low heat, stirring often, until softened, about 8 minutes. Add the garlic, saffron and allspice, cover and cook until fragrant, about 5 minutes. Add the tomatoes and cook over moderate heat, stirring, until the juices have evaporated and the tomatoes start to brown, about 4 minutes. Add the remaining 1/4 cup of wine. Slowly pour in the reserved mussel cooking liquid, stopping before you reach the grit.
- Add the potato and chickpeas to the saucepan and bring to a boil. Cover and cook over low heat for 25 minutes. Season with salt and pepper. Just before serving, add the mussels and reheat them gently in the stew.
