I first sampled this casserole at a baby shower and founds myself going back for more!

Ingredients

1/2 pound sea scallops
1 small onion, finely chopped
1 celery rib, finely chopped
6 tablespoons butter, cubed
7 tablespoons all-purpose flour
1-1/2 cups half-and-half cream
1 cup shredded sharp cheddar cheese
6 tablespoons sherry or apple juice
3/4 teaspoon salt
1/4 teaspoon cayenne pepper
1 pound cooked medium shrimp, peeled and deveined
1 can (6 ounces) crab
1 can (14 ounces) water-packed artichoke hearts, drained, rinsed, chopped and patted dry
1 can (8 ounces) sliced water chestnuts, drained
1/2 cup sliced almonds
1/4 cup grated Parmesan cheese

Steps:

Preheat oven to 350°. In a Dutch oven, saute scallops, onion and celery in butter until scallops are firm and opaque. Stir in flour until blended. Add cream. Bring to a boil; cook and stir 2 minutes or until thickened. Reduce heat; add cheddar cheese, sherry, salt and cayenne, stirring until cheese is melted. Remove from heat; set aside., In a greased 11x7-in. baking dish, layer the shrimp, crab, artichokes and water chestnuts. Top with sauce. Sprinkle with almonds and Parmesan cheese. , Bake, uncovered, 25-30 minutes or until heated through. Let stand 10 minutes before serving.

CHICKEN ENCHILADA CASSEROLE

This recipe appears by special request. Creamy chicken and green chilies I use the regular sized tortillas.. not the large ones.I overlap the tortillas to make the layer. I make it up in an oblong serving dish, I think it is about a 9 1/2 inch by 11 inch pan. But any size you would put 1 full cake mix into will work well . I love this recipe.

Ingredients

3 -4 chicken breasts (or 6 Halves)
1 (10 ounce) can cream of mushroom soup
1 (10 ounce) can cream of chicken soup
1 (8 ounce) can diced green chilies (hot or mild, or a small can of each)
1 (10 ounce) package cheddar cheese, grated
1 small onion, diced
oregano
1 tablespoon garlic powder
1 teaspoon salt
12 corn tortillas
16 ounces sour cream

Steps:

Place Chicken in large saucepan and cover with water.
Sprinkle in a handful of oregano,add garlic powder and salt.
Boil about 20 minutes and shred from bones.
Save broth.
Mix soups, sour cream & chiles in large pan.
Add only enough broth to slightly thin.
Re-season as needed.
Simmer on low 15 minutes.
Add chicken and diced onion.
In casserole dish, arrange 6 Tortillas flat across bottom, spoon in 1/2 the sauce, sprinkle 1/2 the cheese.
Repeat- Tortillas, sauce and cheese.
Bake in 350 degree oven for 20 minutes.

CORN CASSEROLE

Our friend and her family came over for Thanksgiving one year. So Lori, asked what can she bring? I told her any type of casserole would be fine. Well I did not know that it would be a big hit!! That was over 8 years ago. So we've been serving it every Thanksgiving, Chrismas and by special request.

1 (14 3/4 ounce) can creamed corn
1 (15 1/4 ounce) can whole corn, drained
1 cup melted butter
3 eggs
1 cup sour cream
1 tablespoon sugar
1 (8 1/2 ounce) box Jiffy corn muffin mix

Steps:

Preheat oven to 350.
Drain the whole kernel corn. Mix together everything in a bowl.
Bake in a greased baking dish for 60 minutes.
