THE BEST CHICKEN AND DUMPLINGS

The Best Chicken and Dumplings image

This is pure comfort food at its finest. Tender chunks of chicken and vegetables come together in a creamy, richly-flavored sauce with pillowy dumplings baked right on top. It's hearty but not too heavy and comes together from scratch in about an hour.

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 21

2 tablespoons olive oil
3 medium carrots, halved lengthwise, sliced 1/2 inch thick
2 celery stalks, sliced 1/2 inch thick
1 medium onion, diced
Kosher salt and freshly ground black pepper
2 cloves garlic, minced
1 tablespoon fresh thyme leaves, chopped
1 cup dry white wine
4 tablespoons unsalted butter
1/2 cup all-purpose flour
1/2 cup whole milk
1 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
4 1/2 cups homemade chicken stock (see Cook's Note)
1/4 cup fresh flat-leaf parsley leaves, chopped, plus more for serving
1 cup frozen peas
1 3/4 cups all-purpose flour (see Cook's Note)
1 tablespoon baking powder
1 teaspoon garlic salt
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter, melted
1 cup whole milk

Steps:

  • For the chicken: Heat the oil in a large Dutch oven or heavy-bottomed pot with a lid over medium-high heat until shimmering. Add the carrots, celery, onion, 1/2 teaspoon salt and about 10 grinds black pepper and cook, stirring occasionally, until the vegetables just begin to soften but don't take on any color, 4 to 5 minutes.
  • Stir in the garlic and thyme and cook until fragrant, about 1 minute. Add the wine and simmer until completely evaporated, 4 to 5 minutes. Stir in the butter until completely melted. Sprinkle the flour over the vegetables and stir until it is completely incorporated and a sandy paste forms. Pour in the milk and stir until the flour has been smoothly incorporated into the liquid.
  • Add the chicken and the chicken stock to the pot and stir to combine. Bring the mixture to a boil then lower the heat to medium-low and simmer until the chicken is cooked through, 15 to 20 minutes. Stir in the parsley and peas and remove from the heat.
  • For the dumplings: Whisk together the flour, baking powder, garlic salt, 1/2 teaspoon salt and about 10 grinds black pepper in a medium bowl. Stir in the melted butter until just combined, then add the milk and stir until a ball of dough forms.
  • Use a small ice cream scoop or measuring cup to scoop 10 balls of dough into the pot (about 2 tablespoons each). Cover the pot and simmer over medium-low until the dumplings have puffed up and a toothpick inserted into the center comes out clean, 10 to 15 minutes. Divide among bowls and sprinkle with more parsley.

SUNNY'S EASY CHICKEN AND DUMPLINGS

Sunny's Easy Chicken and Dumplings image

Provided by Sunny Anderson

Categories     main-dish

Time 1h

Yield 8 servings (makes about 50 dumplings)

Number Of Ingredients 13

1/4 cup unsalted butter, plus 1 tablespoon
1 medium onion, chopped
3 cloves garlic, chopped
1 whole (5- to 6-pound) chicken, skin on, cut into 8 pieces, including neck
6 cups water
6 cups low-sodium chicken stock
5 to 6 fresh thyme sprigs, plus 1 tablespoon chopped leaves
Small bunch parsley stems, plus 1 tablespoon chopped leaves
2 fresh sage sprigs, plus 1 tablespoon chopped leaves
1 teaspoon whole black peppercorns
1 stalk celery, trimmed and halved crosswise
2 to 3 cups all-purpose flour, plus
1 tablespoon 1 tablespoon kosher salt, plus more for seasoning

Steps:

  • In a large stockpot over medium-high heat, melt 1/4 cup butter and lightly saute the onions and garlic, about 3 minutes. Add the chicken, water, and stock, making sure liquid covers meat. Tie the thyme sprigs, parsley stems, and sage sprigs together and add to the pot along with the peppercorns, and celery. Bring to a boil, then reduce the heat and simmer the chicken until it is "fall of the bone" tender, about 30 minutes, skimming off scum as it simmers. Remove the chicken from the pot to a cutting board and let cool. Remove the herb bundle and the celery and discard. Reserve the stock. When the chicken is cool enough to handle, pull it from bones and cut into bite-sized pieces.
  • In a large bowl, mix together 2 cups of flour with the remaining chopped herbs and the tablespoon of salt. Make a well in the middle and pour 1 cup of the reserved chicken stock, including fat, into the well. Using a fork, slowly stir the stock into the flour. Repeat, adding more flour and/or stock until a soft, doughy consistency is reached. Add more flour, 1 tablespoon at a time, if it gets too sticky. On a lightly floured surface, roll the dough out to 1/8 to 1/4-inch thickness. Use a pizza cutter or sharp knife to slice the dough into 2-inch squares, then cut the squares in half on the diagonal into triangles.
  • Return the stock to a simmer and slowly add the dumplings, allowing some excess flour to remain on the dumplings to increase the body of the broth. Be careful not to let the dumplings touch as they are added to the pot. Cook until the dumplings rise to the surface. If the broth does not thicken to your liking, mix together 1 tablespoon of butter and 1 tablespoon flour in a small bowl with a fork. Slowly add the mixture into the broth to help thicken the soup. Stir in the reserved chicken and ladle into serving bowls.

Old Fashioned Chicken and Dumplings (Made Easy) image

My recipe for chicken and dumplings isn't old fashioned -- but the flavor is! Table-ready in 30 minutes.

Provided by The Spice Guru

Categories     Stew

Time 30m

Yield 4 serving(s)

Number Of Ingredients 14

3 cups chunked boneless skinless rotisserie-cooked chicken
1/2 cup unsalted butter
1/2 cup all-purpose flour
3 (14 1/2 ounce) cans chicken broth (5 1/4 cups)
1 dash black pepper
1 dash parsley flakes or 1 dash dried chives
1 dash poultry seasoning
1 pinch nutmeg
1/4 teaspoon snipped fresh rosemary (optional)
1 1/8 cups Bisquick
1/3 cup milk
1 dash parsley flakes or 1 dash dried chives
1 dash ground black pepper
snipped fresh parsley (or dried parsley or dried chives) or chives (or dried parsley or dried chives)

Steps:

  • NOTE: IF USING SALTED BUTTER, USE TWO 14.5 OUNCE CANS CHICKEN BROTH PLUS TWO CUPS WATER. (STEP ONE): Chop deboned skinless chicken into bite-sized pieces; set aside.
  • MELT 1/2 cup (1 stick) unsalted butter in a large saucepan over medium-low heat. Add 1/2 cup all-purpose flour and cook until bubbly and light golden, stirring often for 2 minutes. Stir in the broth and seasonings. Bring mixture to boiling then reduce heat to medium. Add chunked or diced chicken; stir.
  • COMBINE the dumpling dough ingredients, stirring only until soft dough forms (do not overmix). Drop dough quickly by teaspoons in a single layer over surface of bubbling gravy on one half of large saucepan (do not roll or press dough, or submerge beneath the gravy). Simmer mixture UNCOVERED for 10 minutes.
  • GARNISH tops of dumplings with parsley or chives.
  • COVER then reduce heat to medium-low.
  • SIMMER covered for 10 additional minutes; UNCOVER and remove from heat.
  • LIFT out dumplings individually using a small slotted spoon, placing them onto a plate, leaving dumplings garnished side-up.
  • STIR chicken and gravy using a wooden spoon (gently scraping bottom of saucepan while stirring).
  • LADLE the chicken/gravy mixture into bowls, then arrange dumplings over the top.
  • SERVE and enjoy.

CHICKEN AND DUMPLINGS

Chicken and Dumplings image

Chicken and dumplings are a family favorite! I remember when my mom used to make this dish using store-bought biscuits and a whole chicken. This is my version--made with boneless, skinless chicken thighs and homemade chive dumplings with dough that won't make you miss the pre-made kind!

Provided by Food Network

Categories     main-dish

Time 1h15m

Yield 4 servings

Number Of Ingredients 18

6 tablespoons unsalted butter
6 boneless, skinless chicken thighs
Kosher salt and freshly ground black pepper
1 medium yellow onion, diced
4 celery stalks, sliced 1/2 inch thick
4 medium carrots, peeled, sliced 1/2 inch thick
2 tablespoons all-purpose flour
2 cloves garlic, chopped
6 cups chicken stock
1 bay leaf
1/2 bunch fresh parsley leaves, for serving
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon kosher salt
2 tablespoons vegetable shortening
2/3 cup buttermilk
2 tablespoons chopped chives
Nonstick cooking spray, optional

Steps:

  • For the chicken: Heat a large braiser or Dutch oven over medium-high heat and add 4 tablespoons butter. Sprinkle the chicken thighs with salt and pepper and add to the pan. Cook until golden, turning once, about 3 minutes per side. Remove to a plate.
  • Add the remaining 2 tablespoons butter, the onion, celery and carrots and season with salt and pepper. Cook, stirring frequently and scraping up the brown bits that cling to the bottom of the pan with a wooden spoon, until the vegetables are coated in fat and slightly golden, about 3 minutes. Add the flour and stir until the vegetables are coated. Add the garlic and cook until fragrant, about 30 seconds. Add the chicken stock, bay leaf and browned chicken, along with any chicken juices at the bottom of the plate. Bring to a boil, lower to a simmer, cover and simmer until the chicken is tender and cooked through, about 45 minutes.
  • For the dumplings: Whisk together the flour, baking powder and salt in a large bowl. Using a fork, cut the shortening into the flour mixture. Slowly add the buttermilk, gently mixing to incorporate. Fold in the chives.
  • Use 2 forks to shred the chicken. When the chicken is ready, use 2 spoons sprayed with cooking spray if desired to add scoops of dumpling dough over the top of the stew, about 1 tablespoon each. Cover and simmer until the dumplings double in size, about 15 minutes. Remove from the heat, discard the bay leaf and garnish with parsley.

1 12 oz can evaporated milk
4 cups chicken stock
3 cups shredded cooked chicken
1 bay leaf
Salt & pepper to taste
1 tbsp lemon juice
2 cups all purpose flour
1 tablespoon + 1 teaspoon baking powder
1 teaspoon salt
¼ tsp dried thyme
3/4 cup whole milk
4 tablespoons butter (melted)

  • Bring the pot to a boil and add the chicken and thyme. Season with salt and pepper. Add 1 tbsp lemon juice. Let the soup simmer for about 10 minutes, uncovered, while you make the dumplings.
  • In a large bowl, whisk together the flour, baking powder, salt and thyme. Pour the milk and butter into the center of your bowl. Stir in the milk and butter until a soft dough forms.
  • Once your dough is formed, use a large cookie scoop or spoon to create balls of dough. Roll the dough gently into 9 - 10 balls.
  • Place the balls of dough onto the surface of the pot, taking care to place them around the pot and not overlapping if possible.
  • Press the dough balls down into the pot so that they are covered by the liquid.
  • Add the lid to your pot and reduce the heat to a simmer. Simmer for 15 minutes, until the dough is cooked through. Test a dough ball to see if it's cooked through before removing the pot from the heat. If it's not cooked through, keep simmering the pot for 3 - 4 more minutes.

EASY CHICKEN AND DUMPLINGS WITH CRESCENT ROLLS (+VIDEO)

Easy Chicken and Dumplings With Crescent Rolls (+video) image

I'm immediately transported to my great grandmother's kitchen table with her recipe of southern Chicken and Dumplings, using the Instant Pot or stove top.

Provided by Christian Guzman

Categories     Main Course     Soup

Time 50m

Number Of Ingredients 8

1 pound Chicken Breast (boneless, skinless, cut into strips about 1 inch wide)
1 medium Onion (chopped)
5 cups Chicken Broth (divided)
8 ounces Refrigerator Crescent Rolls
2 ounces Pimientos
1/8 cup Cornstarch
1/2 teaspoon Salt
1 teaspoon Black Pepper

Steps:

  • Trim and cut chicken breast. Chop onion.
  • Add chicken, onions and FOUR cups chicken broth to Instant Pot. Stir. Check the Instant Pot lid to ensure the seal is in place and nothing is blocking the vent. Place lid on top and set lever to Sealing. Press the Manual button on the Instant Pot and set to high for 5 minutes, then natural release. The entire cook time will be about 25 minutes.
  • Remove chicken breast meat from Instant Pot and shred with forks. Set aside.
  • Cut up the crescent roll dough into bite sized pieces.
  • Press the saute button on Instant Pot and bring the liquid (onions still inside) to a light boil. Begin dropping in the dough, one at a time, stirring constantly to ensure that they don't stick together. Allow to cook, stirring frequently for about 5 minutes. Some Instant Pots will get very hot on saute. Ours is one of them. Turn it to low or even change the setting to slow cook if yours starts going wild and crazy. Go back to saute as it slows down. You want to keep the temperature up so everything cooks but you don't need it to be boiling out of control.
  • Return the chicken to Instant Pot. Add pimientos. I only used half the jar. Stir.
  • In a small bowl, whisk together ONE cup chicken broth, corn starch, salt and pepper. until there are no lumps. Stir mixture into Instant Pot. Continue cooking on saute, switching back and forth to slow cook as necessary if the heat gets out of hand. Allow to cook for five minutes until thickened or to desired consistency.
  • Garnish as desired with cracked pepper and chopped green onion. Makes 8 servings.

SOUTHERN CHICKEN AND FLAT DUMPLINGS RECIPE

Southern Chicken and Flat Dumplings Recipe image

Make chicken and dumplings the southern way, with flat or slick dumplings. Up the ante by seasoning your dumplings and making them with some bacon fat or chicken fat. Yes. Approximate cooking times for both pressure cooker/Instant Pot and Dutch oven included.

Provided by onlinepastrychef

Categories     Poultry

Time 2h45m

Number Of Ingredients 16

2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon kosher salt
1/4 teaspoon poultry seasoning
1/4 teaspoon smoked black pepper or several grinds of black pepper
2 Tablespoons solid chicken fat, bacon fat, butter, or shortening (or a mix. Your call)
3/4 cup whole milk
1 fryer/roaster, (4-5 pounds)
2 quarts organic chicken stock
1 medium onion, washed and quartered
3 Tablespoons apple cider vinegar
3 teaspoons salt
1 clove garlic, minced
1/4-1/2 teaspoon smoked black pepper or several grindings of black pepper
1/2 teaspoon poultry seasoning
Additional salt and pepper

Steps:

  • Remove the pouch of giblets from the cavity of your chicken and use for another purpose. If your chicken came with a neck, you can cook that right along with the rest.
  • In your Instant Pot or a Dutch oven, place the chicken (and neck, if you have one), boxed stock, onion, garlic, vinegar, salt, poultry seasoning and smoked pepper or peppercorns.
  • Bring up to pressure and cook at high pressure for 33 minutes. (If using a Dutch oven, simmer over medium-low heat until the chicken is cooked through and you have a nice, rich stock, about 2 hours. You may have to flip the chicken to get it to cook evenly).
  • For the most tender meat, allow for complete natural pressure release, about 30 minutes. If cooking in a Dutch oven, allow the meat to cool in the pot.
  • Carefully remove all the meat from the carcass, get rid of as many bones and onion pieces as you can. Once you've removed most of the larger pieces, pour the stock through a strainer to get all the little bits.
  • Return the meat to the pot, cool and then refrigerate overnight.
  • The next day, spoon off the layer of chicken fat from the surface of the stock. You can use this in your dumplings, to make matzo ball soup, or you can discard.
  • Place your Instant Pot insert back in your Instant Pot and turn to saute or place your Dutch oven over. Stir occasionally until the stock has melted back to liquid (it will probably be like soft Jello straight from the fridge). You don't have to make it hot at this point, just warm enough to melt the gelatin in the stock.
  • Pour the stock and chicken through a strainer. Press down on the chicken to get as much of the stock as possible. Refrigerate the chicken.
  • Taste the broth and adjust seasonings if necessary.
  • Turn the Instant Pot back to saute and bring stock to a rolling boil. If using a Dutch oven, bring to a rolling boil over medium-high heat. Drop dumplings (procedure below) into the pot, a few at a time so they don't stick together.
  • Boil for about 15-20 minutes, or until dumplings are cooked through. NOTE: A few of the smaller bits of dumpling may dissolve, and that's totally fine. This is what thickens your broth into a silky, dreamy gravy.
  • Return the reserved chicken to the pot to reheat, about 5 minutes.
  • Serve in bowls with a fork and a spoon. Have some good bread or rolls handy to sop up the extra sauce.
  • Enjoy!
  • In a medium bowl, whisk together the flour, baking powder, salt, poultry seasoning and black pepper.
  • Drop in the chicken fat, bacon fat, butter, or shortening, and rub in with your fingertips until it is completely incorporated. No pea-sized pieces here. You want it to disappear.
  • Make a well in the center of the dry ingredients and stream in the milk.
  • Bring the dough together with a fork. It will be fairly wet.
  • Liberally flour your counter.
  • Scrape the dumpling dough onto the floured surface. Liberally flour the top of the dough and roll out into a rough rectangle about 1/8-3/16" thick. If the dough sticks, add some more flour to assist with rolling, but don't knead it in. Use your dough scraper to lift the dough and toss some flour underneath and add some to the top as necessary.
  • Brush excess flour off the top of the dough. Cut into 2"x3" rectangles (don't measure--just use a pizza cutter and go for it), and they're ready to be cooked.

Add 1 teaspoon salt, black pepper, basil, thyme, potatoes, and mixed vegetable. Cover and cook the stew over medium heat until vegetables are tender, 15 to 20 minutes. Stir in chicken meat and continue to simmer.
  • Meanwhile, combine 1 1/2 cups flour, baking powder, and 1/2 teaspoon salt in a large bowl; cut in 3 tablespoons butter until the mixture resembles coarse crumbs. Stir in milk and dill. Drop rounded tablespoonfuls of dough into the simmering stew. Cook, uncovered, for 10 minutes. Cover and cook until the dumplings are tender, 8 to 10 minutes more.

EASY CHICKEN AND DUMPLINGS FROM SCRATCH

Easy Chicken and Dumplings from Scratch image

This Chicken and Dumplings recipe is SO EASY to make from scratch if you use rotisserie chicken and store-bought broth! It's a fast, easy comfort food to make on busy nights. The fresh thyme in the dumplings sets it over the edge.

Provided by Elizabeth Lindemann

Categories     Soup

Time 30m

Number Of Ingredients 12

4 tablespoons butter (divided)
2 carrots (diced small)
2 stalks celery plus their leaves (diced)
1 onion (diced)
1 1/4 cup all-purpose flour (divided)
4 cups low sodium chicken stock/broth
1 cup whole milk (divided)
1 teaspoon kosher salt
1 teaspoon baking powder
1 teaspoon chopped fresh thyme leaves (or 1/2 teaspoon dried, plus more for garnish)
2 cups cooked diced or shredded chicken
extra salt and pepper

Steps:

  • Sauté the carrots, celery, and onions in 2 tablespoons of the butter in a large pot over medium high heat until softened a bit and beginning to brown (about 3 minutes).
  • Add 1/4 cup flour, stir to coat.
  • Add chicken broth (4 cups) and bring to a boil.
  • Turn the heat down to simmer and add 1/2 cup milk and the chicken. Season with salt and pepper.
  • Meanwhile, to make the dumplings, mix together the remaining 1 cup of flour, 1 teaspoon salt, 1 teaspoon baking powder, and 1 teaspoon fresh thyme leaves. Stir in the remaining 2 tablespoons of butter, melted, until flour mixture is crumbly looking. Add the remaining 1/2 cup of milk and stir until JUST combined. Do NOT over mix, or your dumplings may be dense.
  • Add spoonfuls of the dumpling mixture to the simmering pot- I recommend using a small cookie scoop for this (a tablespoon can also be used).
  • Cover and simmer on low for 15 minutes, or until dumplings are fluffy, cooked, and float to the top. No peeking!
  • Serve garnished with extra fresh thyme and fresh ground pepper, if desired.

FAST AND EASY CHICKEN AND DUMPLINGS

Fast and Easy Chicken and Dumplings image

I just saw this on the R.R. show, Jessica Simpson made it and it looked so easy and yummy I had to save it here fast. Ok I just made this last night and it turned out so good. Made more like a chicken pot pie, I used one crescent roll for the bottom, just laid it out flat, and another for the top. Making it this way you only need 2 packs of rolls. I also threw in some mushrooms before cooking, it was very easy and good. Hubby gives it 4 stars, i would give 5.

Provided by calijenn

Categories     Savory Pies

Time 45m

Yield 4 serving(s)

Number Of Ingredients 6

3 (8 ounce) packages reduced-fat crescent rolls, divided (recommended brand Pillsbury)
2 cups cooked chicken
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of mushroom soup
1 cup low sodium chicken broth
salt & fresh ground pepper

Steps:

  • Roll out the cans of croissant sheets and separate into diamond shaped sections. Place a small handful of rotisserie chicken on each diamond, fold dough over and press ends together to create dumplings. Cut up any excess dough into strips.
  • Line a 9x13" baking dish with one layer of dumplings. Pour the can of cream of chicken soup over the layer of dumplings, followed by the can of cream of mushroom soup, and chicken broth.
  • Place strips in a crisscross pattern on the top of the dumplings and soup mixture, season dish with salt and ground black pepper and bake until the dumplings are tender and cooked through and the top is bubbly and brown, about 30 minutes.
