SPICY PORK RIBS

Spicy pork ribs image

Make these sticky pork ribs with ginger, chilli, garlic and XO, a wonderfully spicy seafood sauce. Serve with lime wedges - and plenty of kitchen paper

Provided by Sophie Godwin - Cookery writer

Categories     Dinner, Lunch, Main course

Time 1h30m

Number Of Ingredients 13

2 tbsp vegetable oil
700g pork spare ribs
2 garlic cloves , sliced
thumb-sized piece ginger , sliced
4 spring onions , chopped
2 star anise
a few Sichuan peppercorns
3 tbsp XO sauce
3 tbsp malt vinegar
2 tbsp honey
500ml chicken stock
2 limes , 1 zested and 1 cut into wedges to serve
good pinch of chilli flakes

Steps:

  • Heat oven to 180C/160C fan/gas 4. Heat the oil over a high heat in a large flameproof roasting tin. Season the pork, then fry until browned in places - don't worry about the ribs getting evenly browned, you are just looking for a little colour as it will add lots of flavour to the dish.
  • Add all the remaining ingredients, except the lime zest and chilli, to the tin, stir, then arrange the ribs so they are in a single layer. Once the liquid has started to boil, transfer to the oven and roast for 1 hr, turning the ribs halfway.
  • Take the tin out of the oven and carefully put back on the hob over a medium heat. The liquid will have reduced considerably. Keep turning the ribs over to coat in the sauce - they are ready once they are all covered and glossy, around 10 mins. Scatter over the lime zest and chilli flakes and serve with lime wedges and plenty of kitchen paper.

2 fluid ounces (60 ml) cranberry sauce (from a jar)

1 clementine, juice and sliced rind

MEXICAN-STYLE CHILLI RIBS

Mexican-style chilli ribs image

Serve these sticky chipotle pork ribs come rain or shine- they can be finished by grill or barbecue

Provided by Jane Hornby

Categories     Main course

Time 2h30m

Number Of Ingredients 14

1 ½kg pork spare rib - the meatier the better (3 per person)
1 tbsp ground cumin
1 tsp hot smoked paprika
1 tbsp ground coriander
2 tsp dried oregano , or 2 tbsp fresh leaves, chopped
1 heaped tbsp dark soft brown sugar
1 lime , zested then cut into wedges, to serve
1 tbsp olive oil
2 fat garlic cloves , crushed
2 tbsp tomato purée
3 tbsp dark soft brown sugar
2 tbsp red wine vinegar
2 tsp chipotle paste
juice 1 lime

Steps:

  • Mix the dry rub ingredients with ½ tsp flaky sea salt, then massage into the meat. Marinate for at least 1 hr, or ideally up to 1 day in the fridge.
  • To make the sauce, heat the oil in a small saucepan and soften the garlic for 1 min. Stir in the rest of the ingredients, plus 2 tbsp water and simmer for a few secs until the sugar melts. Season with salt and set aside.
  • Heat oven to 160C/140C fan/gas 3. Put the ribs in a roasting tin in 1 fairly snug layer. Pour in 100ml hot water, cover the dish tightly with foil and bake for 2 hrs until the meat pulls easily from the bones. Drain off any fat. The ribs can be cooled and kept in the fridge for up to 2 days.
  • For the final stage of cooking, get the barbecue ready and wait until the coals are glowing white and grey. Cook the ribs for 4-5 mins on each side until dark golden and hot through - use tongs to turn them carefully. Brush with some of the chipotle sauce and give the ribs 1 min more to char here and there. Serve on a platter with the rest of the sauce for spooning, lime wedges, plus a big bowl of Smoky corn & avocado salsa (see related recipes, right).

SIZZLING SPARE RIBS WITH BBQ SAUCE

Sizzling spare ribs with BBQ sauce image

Some like it hot, so sizzle your ribs with BBQ sauce

Provided by Good Food team

Categories     Lunch, Main course

Time 35m

Number Of Ingredients 10

4 x 500g packs pork spare ribs
1 bunch of spring onions , roughly chopped (green stems and all)
1 Scotch bonnet chilli , seeded and finely chopped
4 garlic cloves , roughly chopped
6 tbsp Appleton rum
6 tbsp demerara sugar
6 tbsp dark soy sauce
6 tbsp clear honey
6 tsp Dijon mustard
1 tsp ground allspice

Steps:

  • Tip the ribs into a big bowl (not a metal one) and throw in the spring onions, chilli and garlic. Now spoon all the remaining ingredients over the ribs and sprinkle with salt and pepper. Get your hands in the bowl and turn the ribs over and over again until they're coated in the sauce. (You can keep the ribs uncooked - tightly covered - in the fridge for up to 3 days. You can also freeze them for several months.)
  • Cook the ribs over a moderate barbecue for 20-30 minutes depending on their size, turning them over frequently and brushing with sauce each time. The turning and brushing is important, so that all four sides of each rib get encrusted with the sauce, which builds up like a lacquer. If you have any leftover sauce at the end, heat it up in a pan and pour it over the ribs just before serving.

  • Add all the slow cooked rib ingredients the slow-cooker/crockpot and cook for 4-5 hours on medium or 6-7 hours on low (alternatively, place in a large pan, bring to the boil, then place a lid on, and cook on a low heat for 3½ hours. If you do cook on the hob, then check a couple of times during the last hour of cooking, and top up with a little more water if required)
  • Turn off the heat and drain the pork. The cooking liquor is no longer needed, and can be discarded (or used as a great stock for soup).
  • Leave the ribs to cool for 30 minutes, then carefully chop the pork into individual ribs (the meat will fall off the bone if you're not careful enough).
  • Make the rub by mixing the salt, pepper, cornflour and Chinese five spice together in a large bowl. Add in the ribs and dust them in the rub. Then push the ribs to one side of the bowl and add the water to any rub that is left in the bottom of the bowl. Mix together to make a kind of creamy slurry, and mix it with the ribs. There won’t be much liquid (and the liquid doesn’t have to completely cover the ribs), but the dry rub along with a little of the wet slurry ensures you get a thin, light, crispy coating once cooked.
