SAUERKRAUT AND SPARERIBS
This is a New Year's Day tradition for my hubby's family. It has German origins and is supposed to bring good luck in the New Year. Note: My MIL says that the spareribs must be country-style; baby back don't work for this one. The amount of sauerkraut used depends on how much you want to eat. We found 2 cans to be too much; next time, we'll scale it down to 1 1/2. *Note: In light of Charlotte J's review, I also want to suggest adding apples or onions if you feel that it needs more flavor. This is how hubby's family has done this one for years, and I would probably tinker with it if given the chance, but I better not mess with his tradition ;)

SPARERIBS AND SAUERKRAUT
You just cannot do this one wrong. You don't have to drain the sauerkraut. You don't even brown the ribs; they brown without your help. The recipe was handed down to Camille MacKusick by her father-in-law, from the family archives. All sorts of magical juices ooze out of everything. When the last finger is licked and the last lip smacked, everyone will weep.

Steps:
- Preheat the oven to 300°F. Choose a baking pan that will accommmodate the ribs in pieces or all hitched together, with the kraut in the space left over. Eight country-style ribs cut into a 6-rib and a 2-rib hunk, plus the can of kraut, fit perfectly in a 9-by-13-inch pan. For more ribs, get a bigger pan and more kraut.
- Place the ribs in the pan and the sauerkraut in a mound beside them. Cover the ribs - not the kraut - with the barbecue sauce. Use as much as you like, maybe more than half the bottle, maybe less. Cover the pan tightly withaluminum foil and bake for 3 hours. Lift a corner of the foil near the end of the time to sneak a look. The ribs should be nicely browned and glazed and your mouth should water. Serve hot.

OKTOBERFEST KRAUT, SAUSAGE/SPARERIBS AND POTATOES
My dear husband has evolved this recipe over the years. He almost always makes it, but the other day he wrote it down since he was going to be home late and we had guests coming for dinner to have this very dish. I decided it needed to be shared since we have so many requests for it and after all, it's amost Oktoberfest time. We eat it at least twice monthly, and simply vary it a bit with the meat. This can also be made in the crockpot and cooked at least 4 hours on high and 4 hours on low. You may have to experiment since crockpots are different.

Steps:
- In a 5-6 quart heavy Dutch oven, add 1 tablespoon olive oil.
- Brown sausages or ribs.
- While they are browning, drain and rinse kraut at least twice to remove the excess salt.
- Chop onion.
- When sausages/ribs are browned, place them aside on Dutch oven lid.
- FILL POT: Handful of kraut, add wieners, fil in with onions, add more kraut, add sausages, fill with remaining onion, and add last of kraut, all in layers.
- Add contents of beer and 2 tablespoons brown sugar. The alcohol cooks away so don't worry, it does add a great deal to this recipe.
- Add applesauce.
- Add water to surface of kraut.
- Liberally apply black pepper.
- Add potatoes.
- Bring to boil, cover tightly and simmer 3-4 hours (don't shorten the time, this is critical), checking periodically so it doesn't dry out.
- Serve with sour cream or plain yogurt and a high quality mustard. I prefer Country Dijon or German, my DH prefers yellow. Either way, enjoy, my friends!
