Only a few breakfast recipes come close to the perfection of the Spanish Migas recipe. It has meat, it has carbs, and you can add a fried egg and have the breakfast of a king on top of it. You might be asking yourself, what is Migas? Migas is the Spanish for bread crumbs, which is also the main ingredient in this dish, alongside the Spanish chorizo and the bacon.

5 cups (500 gr) stale bread cut into cubes
3 Chorizos (Spanish sausage)
5 strips of bacon
6 garlic cloves
Salt to taste
Black pepper to taste
Extra Virgin olive oil

Steps:

  • To start with the best Migas recipe you have to prepare the crumbs, which is recommended to do the night before. Crumble the bread and sprinkle it with a little water (make it slightly damp but not completely wet). Let it sit covered overnight.
  • The next day, grab a pan and put enough oil to cover the bottom. Heat the oil and fry the bacon cut into strips (whatever size you want, I recommend an inch wide). Cook until golden brown and add the sliced ​​chorizo.
  • Cook the chorizo ​​until it is tender and golden, about 7 to 10 minutes. Remove the chorizo ​​and bacon from the pan and set them aside for now. Leave the cooking oil in the pan to reuse it.
  • In the pan put 6 cloves of garlic (peeled but not minced), and cook until golden brown for about 3 minutes. Add the breadcrumbs and stir.
  • Stir until they are completely and evenly toasted (for about 5 to 7 minutes). Wait for them to toast to add the chorizo ​​and the bacon again, otherwise, they will become a kind of dense ball.
  • Once toasted, add the chorizo ​​and bacon to heat everything together, for about 3 to 5 minutes. Serve your Migas hot.

Pinch salt, plus more to finish
4 slices thick cut bacon (3 to 4 ounces), cut into 1-inch pieces
3 ounces (about 1/2 cup) dry-cured chorizo, cut into cubes
1/2 teaspoon smoked paprika, plus more to finish
2 whole cloves garlic, peeled
1 onion, finely chopped
1 yellow bell pepper, seeded and diced
3 medium globe tomatoes, diced
8 ounces asparagus, cut into 1-inch pieces (peeling optional)
4 teaspoons olive oil
4 eggs
2 tablespoons fresh parsley, chopped
Freshly ground black pepper, to finish

Steps:

  • Fry the eggs: In a separate large non-stick skillet over low heat, add the olive oil and heat for 1 minute. Crack the eggs into the skillet and cover the pan with a lid. Cook, covered, for 1 1/2 to 2 minutes, or until all but a thin rim of egg white around each yolk is opaque. Remove the lid.

Easy, inexpensive, delicious breakfast or brunch item that smells great on a Sunday morning. Shown to me by a former Mexican neighbor of mine. I usually make it vegetarian for myself, but with guests, I add a meat, usually sausage or chorizo. Delicious! Always a favorite and a classic in Mexico and Texas!

2 tablespoons vegetable oil
1 cup coarsely broken tortilla chips
½ medium onion, chopped
½ medium green bell pepper, chopped
¾ cup chopped chorizo sausage
1 medium tomato, diced
5 large eggs, beaten
salt and ground black pepper to taste
6 (6 inch) warm corn tortillas
1 cup shredded Cheddar cheese
¼ cup salsa

Steps:

  • Heat oil in a skillet over medium-high heat. Add broken tortilla chips; cook and stir for 2 to 3 minutes. Add onion; cook and stir for 3 minutes. Add bell pepper and cook until tender, 3 to 5 minutes. Stir in sausage and let cook until heated through, about 3 minutes.
  • Add tomato and mix until well combined. Pour beaten eggs into the skillet and season with salt and pepper. Cook, stirring regularly, until eggs are set and thoroughly cooked, about 5 minutes.
  • Serve skillet mixture with tortillas, Cheddar cheese, and salsa for guests to assemble themselves.

These are not the Tex-Mex version of Migas, these are authentic Spanish Migas. Both styles are delicious, they are simply different. The best bread for migas is a peasant bread with a very dense crumb. Open crumb breads like baguettes or ciabattas are not good for migas. Stale bread works best. Migas is a poor man's dish. I have included mesurements, but I don't use them, and you shouldn't be bound by them. Just cook it, love it, and eat it:) Note: Overnight time is included in prep time.

1/2 loaf bread (dense crumb)
water (for sprinkling)
1 teaspoon salt
2 teaspoons paprika, sweet spanish (a must have)
4 garlic cloves
2 links chorizo sausage (for frying, don't use dry chorizo)
2 tablespoons ham, diced (Spanish jamon is traditional)
4 slices bacon
8 tablespoons olive oil, virgin (a must have)

Steps:

  • Dice bread up small.
  • Place bread in a large bowl and sprinkle with enough water to moisten bread.
  • Sprinkle with salt and stir.
  • Sprinkle with paprika and stir.
  • Cover with damp cloth and leave to sit overnight.
  • The next morning heat the olive oil in a deep skillet, over medium heat.
  • Cut the garlic cloves in half and throw in the oil until lightly brown, then discard.
  • Add the crumbled chorizo, ham and bacon, cook until almost done.
  • Add the cubed bread with its seasoning.
  • Toss the bread so that it thoroughly soaks up the oil and begins to crisp on the outside.
  • The bread will turn red from the paprika, this is good.
  • You want the bread to be crispy on the outside and soft and tender on the inside. (This is the secret to good migas!).
  • For Migas de Vendimia, add grapes to your migas:) This would be done in wine growing areas at harvest time.

Spanish-Style Migas With Chorizo, Peppers, and Kale image

1/4 cup olive oil
4 ounces pork, cubed
4 cloves garlic, smashed
4 ounces Spanish dry-cured chorizo, preferably younger and more tender, sliced into rounds
1 red bell pepper, stemmed, seeded, and cut into 3/4-inch pieces
1 Anaheim pepper, stemmed, seeded, and cut into 3/4-inch pieces
4 ounces lacinato kale (a.k.a. dinosaur, Tuscan, or black kale), tough stems removed, leaves cut into 1-inch pieces
8 ounces stale, hearty bread, crusts removed and cut into 3/4-inch pieces (about 6 cups)
1/4 cup water
1 teaspoon smoked paprika
2 tablespoons parsley, chopped
2 eggs, fried

Steps:

  • In a large cast iron skillet, combine olive oil, lightly salted pork belly, and garlic cloves and cook over medium heat, stirring occasionally, until fat has rendered and pork belly is crisp, about 8 minutes. Add chorizo and continue to cook until it's lightly browned and oil takes on a deep-orange hue, about 3 minutes. Using a slotted spoon, transfer pork belly, chorizo, and garlic to a medium bowl and set aside; discard garlic.
  • Increase heat to medium-high and heat until shimmering. Add bell and Anaheim peppers to skillet, season lightly with salt, and cook, stirring frequently, until pepper skins are lightly blistered and browned, about 3 minutes. Add kale to skillet, reduce heat to medium, and continue to cook, stirring frequently, until kale is slightly wilted and softened, about 3 minutes. Using a slotted spoon, transfer vegetables to bowl with pork belly and chorizo. Set aside.
  • Add bread in an even layer to skillet, drizzle water over top, and cook, stirring frequently with metal spatula to evenly coat with oil mixture. Season with salt to taste, and continue to cook, stirring and breaking up bread into smaller pieces with spatula, while occasionally scraping bottom of the skillet to prevent bread from sticking and scorching. Continue to cook, stirring and scraping frequently, until mixture is broken down into small crumbs, 1- to 2-inch pieces, and bread is light golden brown and crisp but not hard, 15 to 20 minutes. If bread begins to get too dark, reduce heat to medium-low and sprinkle bread with additional water, 1 tablespoon at a time, as needed.
  • To finish, sprinkle migas with pimentón and stir until bread is evenly coated and mixture is aromatic, about 30 seconds. Add vegetable and chorizo mixture to skillet, stir to combine and season to taste with salt. Remove from heat. If serving with fried eggs, transfer migas to serving bowl and cover loosely with aluminum foil to keep warm. Wipe out skillet and fry eggs. Divide migas into individual bowls, sprinkle with parsley, and top with fried eggs. Serve immediately.

  • Rip the stale bread into chunks and put it into a food processor (if you prefer, you can also do this part by hand). Pulse a few times until the bread becomes half breadcrumbs, half small chunks.
  • Place the breadcrumbs in a large bowl and drizzle about 1/4 cup of water on top. Mix everything together with your hands. The bread should absorb the water and be damp, but not saturated or soggy (or too dry!). Add more water if necessary.
  • In a large frying pan over a medium heat, add two generous tablespoons of extra virgin olive oil and add the garlic cloves (with skin on) from one whole head of garlic and the bay leaf. Fry over medium heat for a few minutes, browning the garlic cloves.
  • Add the chorizo and salt pork, cut into rough chunks. I like my chunks small, but you can cut large chunks if you prefer. Stir and brown for a few more minutes.
