- In a large skillet, cook and crumble beef with green pepper and onion over medium-high heat until no longer pink, 4-6 minutes. Stir in all remaining ingredients except bacon; bring to a boil. Reduce heat; simmer, covered, until noodles are tender, 15-20 minutes, stirring occasionally. Top with bacon.

Steps:
- Heat a non-stick skillet over medium-high heat and add oil. When oil is hot, add noodles and stir constantly until the majority of noodles are golden brown-approximately 3 minutes.
- Add onion, celery or tomatoes and cook, stirring constantly, for 3 minutes. Add water and bouillon and bring to a boil.
- Reduce heat to medium and cook at a rapid simmer for 5-6 minutes, stirring occasionally. When noodles are tender and water is mostly absorbed, remove from heat. Consistency should be loose, but not soupy.

This is easy and very tasty, it's good served hot or at room temperature for a side dish, or as a main meal. All ingredients can be adjusted to taste. Add in finely chopped jalapeno pepper or crushed chili peppper for some heat.

- Set oven to 375 degrees.
- Grease a 2-quart casserole dish.
- In a large skillet, brown the ground beef over medium-high heat; drain the fat, and transfer beef to a large pot over medium low heat.
- Stir in onion, garlic green pepper, tomatoes, water, rice, chili sauce, salt, pepper, brown sugar, cumin and Worcestershire sauce.
- Let simmer for about 30 minutes, stirring occasionally, then transfer to a 2-quart casserole dish; press mixture down firmly.

SPANISH-STYLE NOODLES WITH CHICKEN AND SAUSAGE

- Bring a large kettle or pot of water to a boil. Season the chicken and sausage with 2 teaspoons salt, 1 teaspoon pepper and the marjoram. Heat the olive oil in a heavy-bottomed pot over high heat. Add the chicken and sausage and brown on all sides, about 5 minutes. Transfer to a plate with a slotted spoon.
- Add the onions, garlic, bay leaves and tomato puree to the pot. Reduce the heat and cook, stirring, until the oil turns deep red and the onions are tender, 6 to 8 minutes. If the onions are sticking, add a splash of water and scrape the bottom of the pan with a wooden spoon.
- Add the spaghetti to the onion mixture and stir-fry until golden, about 6 minutes. Add the chicken and sausage and enough boiling water to cover the pasta by 1/2 inch. Simmer, stirring once or twice, until the pasta is al dente and the sauce thickens, about 10 minutes. Season with salt and pepper and garnish with cheese, if desired.

- Preheat the oven to 350 degrees F (175 degrees C).
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Partially drain fat from the skillet.
- Heat remaining bacon fat in the skillet over medium heat. Cook onion and bell pepper in the fat until tender, about 5 minutes. - Peel the potato and onion. Slice thinly. It works great if you use a mandolin.
- Heat the oil a large non-stick skillet over medium heat.
- When hot add in the potato slices and onion slices.
- Sprinkle with a good bit of salt and a pepper,
- Using a wooden spoon gently turn the mixture in oil and adjust the heat so the oil is just bubbly but not too hot.
- Keep turning the potatoes every few minutes until they are fork tender. You want them tender, but not brown.
- While the potatoes are cooking you can beat the eggs in a large bowl with some salt and pepper.
- Drain the potatoes into a metal colander and reserve the oil.
- Wipe out the skillet with a paper towel.
- Add in two tablespoons of the reserved oil and heat to a medium flame.
- Add the potatoes and onions to the egg mixture and gently combine together.
- Add this to the heated oil.
- As soon as the edges start to firm, reduce the heat to medium-low. Cook for 5 minutes.
- Using a rubber spatula run it along the edges of the tortilla.
- You want to make sure it is completely loose and will slide easily from the pan.
- Carefully slide it onto a plate. Cover it with another plate and holding them tightly together, invert them.
- Add another tablespoon of oil to the skillet and slide the tortilla back into the skillet.
- Cook another 5 minutes and then slide onto a clean plate.
- Serve warm or at room temperature.
