1 pound beef sausage
1 onion, minced
2 cups fresh sliced mushrooms
¼ cup olive oil
2 (6 ounce) cans tomato paste
1 (46 fluid ounce) can tomato juice
1 (16 ounce) can crushed tomatoes
1 cup Burgundy wine
1 ½ tablespoons dried oregano
1 tablespoon dried basil
2 tablespoons dried parsley
1 tablespoon minced garlic
2 tablespoons garlic salt
½ cup white sugar
2 pounds spaghetti

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Cook sausage for 30 minutes. Cut into bite sized pieces, and set aside.
  • In a Dutch oven, saute onion and mushrooms in olive oil until tender. Remove with slotted spoon, and set aside. Stir into Dutch oven: tomato paste, tomato juice, Italian tomatoes, and wine. Stir until smooth. Mix in oregano, basil, parsley, garlic, garlic salt, and sugar. Return sausage and onion and mushroom saute to sauce. Bring to a boil. Reduce heat, and simmer for at least 3 hours. Cover pot if sauce becomes too thick.
  • Cook pasta according to package directions. Drain. Serve sauce over pasta.

2 strips bacon, chopped
1 lb Italian sausage, casing removed
1 ½ teaspoons red pepper flakes
1 medium yellow onion, minced
4 cloves garlic, minced
10 oz mushroom blend, sliced
½ cup dry white wine
1 teaspoon salt
1 teaspoon pepper
1 lb spaghetti, cooked
1 cup grated parmesan cheese
1 cup pasta cooking water, or chicken stock
5 oz fresh spinach

Steps:

  • Sauté the bacon in a large pot over medium-high heat for about 3 minutes, until crispy.
  • Add the sausage meat and red pepper flakes and sauté for about 10 minutes, until the meat is cooked through. Remove from the pan and set aside.
  • In the same pot, sauté the onion over medium heat for 2-3 minutes, until translucent.
  • Add the garlic and sauté for 2 minutes, until fragrant.
  • Add the mushrooms and cook for 2-3 minutes, until they start to release some of their liquid.
  • Add the wine, salt, and pepper and stir to combine. Cook for 7-8 minutes, until the wine has reduced by half and the mushrooms are tender.
  • Add the spaghetti and sausage mixture and toss to combine.
  • Add the Parmesan, pasta water, and spinach and stir. Cook until the pasta is warmed through and the Parmesan has melted.

1 (8 ounce) package shredded whole milk mozzarella

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • Bring a large pot of lightly-salted water to a boil; cook the penne uncovered, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and return to the pot.
  • Meanwhile, heat 1 tablespoon of the olive oil in a large skillet over medium-high heat. Cook and stir the sausage in the hot oil until crumbly and no longer pink, about 7 minutes: remove from the skillet, leaving the fat in the pan, and set aside. Pour the remaining 2 tablespoons of olive oil into the skillet and add the mushrooms and garlic. This delicious pasta recipe comes from Bologna, Italy. Made with crumbled sausage and mushrooms it's simple and elegant.

1/3 ounce dried porcini mushrooms, (10 grams)
4 sprigs flat leaf parsley, chopped
5/8 cup tagliatelle pasta, (400 grams)
2/3 cup fresh mushrooms, sliced (300 grams)
2 cloves garlic, minced
2 tablespoons olive oil
salt, to taste
pepper, to taste
1/4 pound ground pork sausage, (113 grams)
1-2 tablespoons butter

Steps:

  • Soak the dried porcini mushrooms in hot water for 10-15 minutes. Drain and reserve mushroom liquor. Chop rehydrated mushrooms into 1/4" pieces.
  • Remove stems from parsley. Dice leaves and set aside.
  • Place fresh sliced mushrooms in a pan and cook over medium heat with no added fat. Allow mushrooms to brown, stirring occasionally. When nicely colored, add 1-2 tablespoons of olive oil along with the rehydrated porcini mushrooms. Transfer to bowl.
  • Add sausage to the pan and cook until brown and crumbled.
  • Turn off heat until you're ready to add the pasta to the pot. (This allows you to get part of your meal prepared ahead of time!)
  • Bring 6 quarts of water to boil in a large stock pot. Transfer freshly made tagliatelle pasta to the boiling water and boil for 1 to 3 minutes. Fresh pasta takes substantially less time to cook than dried pasta.
  • When you begin cooking the pasta, add parsley and garlic to the pan of sausage along with the mushrooms and return to heat.
  • Add a walnut sized piece of butter (that's Carmelita's phrase -- let's say a tablespoon or two!) and the reserved liquid from the porcini mushrooms to the pan. Allow to simmer for a minute or two.
  • Drain the pasta, toss with the mushroom sauce, and serve.

2 1/2 lbs sweet Italian sausage, casings removed, crumbled
3 tablespoons olive oil
1 1/2 lbs mushrooms, thickly sliced
3 cups onions, chopped
1 1/2 cups fresh basil, chopped
1/4 cup fresh oregano, chopped
6 large garlic cloves, chopped
1 cup dry white wine
5 cups crushed tomatoes in puree, canned
2 cups diced tomatoes (about 4 medium-large tomatoes)
2 tablespoons butter (1/4 stick)
1 1/4 lbs pappardelle pasta or 1 1/4 lbs mafaldine pasta
1 1/2 cups pecorino romano cheese, grated (about 4 1/2 ounces)

Steps:

  • Saute sausage in heavy large pot over medium-high heat until brown, about 12 minutes.
  • Using slotted spoon, transfer sausage to large bowl.
  • Add oil to drippings in pot.
  • Add mushrooms and onions; saute until tender and brown, about 15 minutes.
  • Stir in 1 cup chopped basil, oregano, and garlic; sauté 1 minute.
  • Add wine; cook until almost absorbed, about 4 minutes.
  • Add sausage and crushed tomatoes; cover and simmer over medium heat until thickened, about 25 minutes.
  • Add diced tomatoes and butter; simmer until tomatoes are soft, stirring frequently, about 15 minutes.
  • Season with salt and pepper.
  • (Can be made 1 day ahead. Cool slightly. Chill uncovered until cold, then cover and refrigerate. Bring to simmer before continuing.).
  • Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally.

3/4 lb Italian sausage (sweet or hot with casings removed)

1 teaspoon fresh rosemary, chopped
1/4 cup heavy cream
shredded parmesan cheese, for topping

Steps:

  • Bring a pot of salted water to boil. Add the spaghetti and cook as package directs. Reserve 1/2 cup cooking water, then drain.
  • Meanwhile, heat 1 teaspoons oil in a large nonstick skillet over medium heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned, about 5 minutes. Transfer to a bowl.
  • Add the remaining 2 teaspoons oil to the skillet and increase the heat to medium-high. Add the mushrooms, season with salt and pepper and cook until lightly browned, 3-4 minutes. 1 small spaghetti squash (about 2 lbs)
1 Tablespoon butter ( optional, or just use olive oil)
2 Tablespoon olive oil
½ an onion, chopped
12- 16 ounces sliced mushrooms - cremini, shiitake or chanterelles
4-6 garlic cloves, finely chopped
3 Tablespoons fresh torn sage
salt and pepper to taste
generous pinch nutmeg
¼ cup grated Romano cheese (or Parmesan) OPTIONAL
drizzle truffle oil - optional but delicious, especially if going vegan.
toasted pine nuts - optional but delicious!

Steps:

  • Preheat oven to 425 F
  • Cut spaghetti squash in half (widthwise) and place open side down on a parchment-lined baking sheet. Bake 30-40 minutes until knife-tender, turn on their side, and roast 5-10 more minutes to allow steam to dry out!
  • While squash is baking, heat oil and butter in a large skillet over medium-high heat. Sauté onions until just tender about 2-3 minutes. Add mushrooms, turn heat to medium and saute until they begin to release their liquid, about 5-7 minutes. Add garlic and sage and continue cooking until mushrooms brown, about 4 minutes.
  • Season generously with salt and pepper and nutmeg. Feel free to deglaze the pan with a little wine if you like, cooking this off.
  • Scoop out the spaghetti squash seeds, then add the long strands into the saute pan with the mushrooms and stir to incorporate.
  • Taste for salt, and add more if necessary. Stir in most of the grated cheese, saving some for garnish. Place in a serving bowl, top with remaining cheese and a drizzle of truffle oil and a sprinkling of pine nuts.

4 lbs good quality sweet Italian sausage
4 cups chopped yellow onions
1 cup chopped parsley
3 cups chopped bell peppers (mix red & green)
1 1/2 lbs sliced mushrooms
8 garlic cloves
1 tablespoon rosemary
1 tablespoon turkish oregano
1 tablespoon thyme
1 tablespoon basil
1/4 teaspoon crushed red pepper flakes
1 1/2 teaspoons sweet marjoram
3 bay leaves
1 tablespoon sugar
1 teaspoon salt (optional)
1 1/2 teaspoons cracked black pepper
1 (28 ounce) can tomato sauce
4 (1 lb) cans tomatoes, cut up
2 (6 ounce) cans tomato paste
3 cups Burgundy wine

Steps:

  • Start browning Italian sausage in large (11 quart) stockpot, breaking it up as it cooks.
  • When still slightly pink, add onions, parsley, peppers, mushrooms & garlic. Cook until sausage is done. Add spices, mix and cook another couple minutes, then add tomatoes, tomato sauce, tomato paste & Burgundy wine.
  • Bring to just boiling, reduce heat. Cover and let simmer a minimum of 3 hours - longer is better. Stir occasionally.
  • Serve over your favorite pasta.

2 garlic cloves, minced
1 lb mixed mushrooms, beech, button, cremini, thinly sliced
1/2 lb pork sausage

1/2 lb cooked fettuccine (plain or combination of plain and spinach)
1 cup light cream, kept warm
3/4 cup parmesan cheese, grated

Steps:

  • Heat the butter in a large skillet, and cook the garlic until it is soft.
  • Stir in the mushrooms, and cook them until softened.
  • Transfer mushrooms to a bowl, and set aside.
  • Brown the pork sausage in the same skillet, breaking it up with a fork.
  • Season with salt and pepper.
  • Return the mushrooms to the pan, and mix ingredients well.
  • Stir the cooked fettucine into the skillet with the sausage mixture.
  • Stir in the cream and cheese, and mix everything quickly over med-high heat to blend.

1 tablespoon butter
