This nutritious twist on lasagna uses spaghetti squash instead of pasta. Spaghetti squash has a mild, slightly sweet flavor and is packed with nutrients. The strands of squash are tossed with creamy ricotta cheese and chopped spinach. It's then layered with tomato sauce, mozzarella, and parmesan cheese and baked in the oven until it's bubbling with cheesy goodness. Packed with protein and fiber, this dish will keep you feeling full and satisfied. It also has a hefty amount of iron and folate and almost half your daily calcium needs!

1 large spaghetti squash, (about 3 ½ pounds (See Notes))
3 teaspoons olive oil, (divided )
1 medium onion, (chopped)
3 cloves garlic, (finely chopped)
1 can ((28 ounces) crushed tomatoes)
2 teaspoons dried Italian seasoning
¼ teaspoon red pepper flakes
1½ teaspoons salt, (divided)
½ teaspoon pepper, (divided)
1 container ((15 ounces) part skim ricotta cheese)
1 large egg
5 ounces baby spinach, (steamed and chopped (can use frozen spinach))
1 1/2 cups shredded part-skim Mozzarella cheese
1/3 cup grated Parmigiano-Reggiano cheese
Chopped parsley for garnish ((optional))

Steps:

  • Preheat oven to 425°F. Cut the squash in half lengthwise and remove the seeds. Brush the flesh with 2 teaspoons oil. Place them cut side down on a baking sheet lined with parchment paper. Roast in the oven until tender, about 40 minutes. Remove from oven and cool. When the squash is cooled, scrape the flesh with a fork so that it forms spaghetti-like strands. You should have about 6 cups total.
  • Meanwhile, make the sauce by heating 2 teaspoons oil in a large sauté pan over medium heat. Add the onion and garlic and cook for 4 to 5 minutes until partially softened. Stir in the tomatoes, Italian seasoning, red pepper flakes, ½ teaspoon salt, and ¼ teaspoon pepper. Simmer the sauce for 15 to 20 minutes until thickened.
  • Meanwhile, mix the ricotta, egg, spinach, ½ cup of the mozzarella cheese, 1 teaspoon salt, and ¼ teaspoon pepper together in a large bowl. Squeeze all of the liquid from the spaghetti squash and add the squash to the ricotta mixture (the squash releases a lot of water as it cooks so make sure to squeeze it well). Stir to combine all of the ingredients.
  • Turn the heat on the oven down to 375°F. To assemble the casserole, spread about 1½ cups of the sauce on the bottom of an 8 x 11-inch baking dish. Add the squash mixture on top and spread it out evenly. Spread the remaining tomato sauce over the top of the squash and sprinkle the remaining 1 cup mozzarella and Parmigiano-Reggiano cheese on top. Bake in the oven for 35 to 40 minutes until bubbly and cheese is melted. Garnish with parsley. Let stand for 10 minutes before cutting and serving.

4 cups all-natural marinara sauce

Steps:

  • Preheat oven to 375° F.
  • Line large baking sheet with parchment paper. Set aside.
  • Cut spaghetti squash in half lengthwise. Remove seeds and membrane.
  • Place spaghetti squash, cut side down, on baking sheet. Bake for 40 to 45 minutes, or until tender.
  • Reduce oven temperature to 350º F.
  • Scrape spaghetti squash flesh into stringy noodles.
  • Lightly coat 4-quart baking dish with spray.
  • Evenly layer half spaghetti squash, half marinara sauce, and half ricotta cheese in baking dish. Repeat with second layer.

2 eggs, lightly whisked (divided)
1/2 c. finely grated Parmesan
2 tbsp. extra-virgin olive oil
1 onion, chopped

Steps:

  • In a large pot of salted boiling water, add spaghetti and cook until al dente, about 8 minutes. Drain water then return the spaghetti to the pot. Add 1 egg and the Parmesan and toss to combine.
  • Meanwhile, make sauce. In a large pot over medium, heat olive oil. Add onion and cook until tender, about 5 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Add the ground beef, breaking up the meat with a wooden spoon, and cook until the meat is no longer pink, about 6 minutes. Drain fat then return the pot to medium heat and stir in tomato paste. Cook for 1 minute, then add the crushed tomatoes and oregano. Season with salt and pepper and simmer for 10 minutes. Preheat oven to 350°.
  • In a medium bowl, combine ricotta and remaining egg. Stir to combine.
  • In a large baking dish, spoon a thin layer of sauce in the bottom of the dish. Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a deep 9x13 inch baking pan.
  • Slice zucchini lengthwise into very thin slices. Sprinkle slices lightly with salt; set aside to drain in a colander.

1 tablespoon olive oil
salt and ground black pepper to taste
2 (16 ounce) packages shredded mozzarella cheese, divided
1 (15 ounce) container ricotta cheese

1 (24 ounce) jar spaghetti sauce

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Brush the inside of the squash halves with olive oil; season with salt and pepper. Place cut-sides up on a baking sheet.
  • Bake in the preheated oven until softened, about 45 minutes. Remove from oven. Cool until easily handled, 5 to 10 minutes. Scrape out strands of squash with a fork and transfer to a bowl.

Some times I tried to sneak in baby Portabella mushrooms, but DS never would eat when I did. Prep time doesn't include the cooking of the spaghetti squash which can be done in the microwave and takes about 13 minutes.

3 lbs spaghetti squash, cooked and cooled enough to handle
3 tablespoons flour
1 garlic clove, minced
1/2 teaspoon salt
15 ounces low-fat ricotta
10 ounces frozen spinach, thawed and squeezed
1/3 cup parmesan cheese
1 cup pasta sauce
6 ounces mozzarella cheese, sliced

Steps:

  • Pre heat oven to 350.
  • Split cooked squash lengthwise and remove seeds. Use fork to pull off in long strands. Place in large mixing bowl and toss with flour, garlic, and salt until well combined.
  • Blend ricotta, spinach and parmesan in food processor until smooth.

1 medium spaghetti squash
1 medium zucchini, sliced into thin rounds
2 cups marinara sauce, warmed
1 1/2 cups ricotta
1 egg
1/2 cup Mozzarella Cheese, Shredded
1/4 cup Fontina Cheese, Shredded (reserved for end)
1/4 cup Mozzarella Cheese, Shredded (reserved for end)
1/4 cup grated Parmesan cheese
1 tablespoon parsley flakes
1 teaspoon salt
1 teaspoon ground black pepper
5-6 basil leaves, torn

Steps:

  • Pierce the squash all around and microwave for 14 minutes, depending on your microwave wattage.
  • About half way through roll it over and continue cooking.
  • Cut open squash (watch it's hot!) and remove seeds.
  • Using a fork simply 'shred' the squash's innards and it will look like spaghetti noodles.
  • Transfer spaghetti squash to a strainer and with a few paper towels press down to remove as much liquid as possible.
  • Preheat the oven to 350F with a rack in the middle.
  • In a bowl, mix the ricotta, egg, 1/2 cup shredded mozzarella, 1/4 cup grated Parmesan, parsley, 1/2 teaspoon salt and 1/2 pepper. Combine well.
  • In a 5qrt oval baking dish with 2" high sides, ladle 1/2 cup of sauce on the bottom of the dish.
  • Place half of the squash over top.
  • Place the zucchini rounds over top of the squash slightly overlapping.
  • Sprinkle 1/2 teaspoon salt and pepper over top.
  • Spread out the ricotta mixture over top leveling out.
  • Add the torn basil leaves on top.
  • Ladle 3/4-1 cup of sauce over the basil. This depends on how saucy you like your dish.
  • Add the remaining spaghetti squash over top.
  • Drizzle the remaining sauce on top.
  • Place the baking dish on a rimmed baking pan.
  • Spray a large piece of foil and place the sprayed side facing down (on top of the squash).
  • Bake for 30 minutes.
  • Remove the foil and place the remaining 1/2 cup of mozzarella and fontina cheese on top.
  • Bake uncovered for 10-15 minutes or until the cheesy is bubbling.
  • Allow to cool for 10-15 minutes before serving.
