1/4 cup butter, softened
1/2 cup sugar
1 egg
3/4 cup mashed ripe banana
1/2 teaspoon vanilla extract
1 cup all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda
1/8 teaspoon ground cinnamon
1/4 cup chopped walnuts

Steps:

  • In a small bowl, cream butter and sugar. Beat in the egg, banana and vanilla. Combine the flour, baking powder, salt, baking soda and cinnamon; add to creamed mixture just until moistened. Fold in walnuts. , Coat muffin cups with cooking spray or use paper liners; fill two-thirds full with batter. Bake at 350° for 23-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

2 1/4 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
4 overripe bananas
1 1/2 cups sugar
3/4 cup soft unsalted butter
2 eggs
1 teaspoon vanilla
1/2 cup pecans, chopped (optional)

Steps:

  • Preheat oven to 375 degrees and lightly butter 24 muffin tins.
  • In a large bowl, combine the flour, baking powder,cinnamon and salt; set aside.
  • With an electric mixer, whip the bananas and sugar together for a good 3 minutes. Add the soft butter, eggs, and vanilla and beat well, scraping down the sides of the bowl once or twice.
  • Mix in the dry ingredients just until incorporated.
  • Fold in the nuts if desired with a rubber spatula.
  • Spoon the batter into the muffin tins to fill them about halfway.
  • Bake until a toothpick stuck in the muffins comes out clean, about 20 minutes. Let cool for a few minutes before turning the muffins out.

1/3 cup milk
2 large eggs
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees.
  • Grease 18 muffin cups.
  • (I like to shoot a bit of Pam or other non-stick spray in muffin/cupcake paper liners).
  • In large bowl, combine flour, sugar, baking powder and salt.
  • With pastry blender cut in butter until mixture resembles coarse crumbs.
  • Stir in walnuts.
  • In blender or in food processor, process bananas, milk, eggs and vanilla just until bananas are chopped.
  • Add banana mixture to flour mixture; and stir both mixtures until well blended.
  • Bake until muffins appear golden and toothpick inserted in center of muffin comes out clean, 20 to 30 minutes.
  • Immediately remove muffins from pan.
  • Serve warm, or cool on wire rack to serve later.

⅛ teaspoon salt
2 egg whites
1 cup mashed bananas
¾ cup white sugar
3 tablespoons vegetable oil
1 teaspoon lemon zest
¼ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray muffin tins with non-stick cooking spray.
  • In large bowl, stir together flour, baking powder, soda, and salt.
  • In a medium bowl, beat egg whites slightly. Stir in bananas, sugar, oil, and lemon peel. Add to flour mixture, stirring just until combined. Stir in walnuts. Fill muffin pan cups 2/3 full.

1/2 pound unsalted butter, melted and cooled
2 extra-large eggs
3/4 cup whole milk
2 teaspoons pure vanilla extract
1 cup mashed ripe bananas (2 bananas)
1 cup medium-diced ripe bananas (1 banana)
1 cup small-diced walnuts
1 cup granola
1 cup sweetened shredded coconut
Dried banana chips, granola, or shredded coconut, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • Line 18 large muffin cups with paper liners. Sift the flour, sugar, baking powder, baking soda, and salt into the bowl of an electric mixer fitted with a paddle attachment. Add the melted butter and blend. Combine the eggs, milk, vanilla, and mashed bananas, and add them to the flour-and-butter mixture. Scrape the bowl and blend well. Don't overmix.
  • Fold the diced bananas, walnuts, granola, and coconut into the batter. Spoon the batter into the paper liners, filling each 1 to the top. Steps:

  • Preheat the oven to 425 degrees F. Lightly brush a 12-muffin tin with butter and set aside.
  • Whisk the flour, baking soda, brown sugar, and cinnamon together in a medium bowl; set aside.
  • Whisk the banana, oil, milk, eggs, salt, and vanilla in a large measuring cup with a spout or another bowl.
  • Make a small well in the center of the dry ingredients. Pour wet ingredients into the center; then stir with a wooden spoon until the dry ingredients are moistened but still lumpy. Do not overmix the batter or your muffins will come out dense. Gently stir in the nuts. Divide the batter evenly into the muffin tin.
  • Put the muffins in the oven and immediately reduce oven temperature to 375 degrees F. Bake until golden brown, about 25 minutes, rotating the pan halfway through the cooking. (Insert a toothpick into the center of a muffin to check if it is done. Toothpick should come out clean). Cool muffins in the pan on a rack for a couple minutes. Turn the muffins out of the pan and cool on the rack. Serve warm or at room temperature.

2 1/2 c all purpose flour
1/2 c sugar
1/2 c brown sugar, light
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 c buttermilk (dry buttermilk plus water may be used
2/3 c canola oil
1 tsp pure vanilla extract
1 large egg, lightly beaten
2 large banana's, very ripe, well mashed
1/2 c walnut, chopped

Steps:

  • 1. In a large mixing bowl combine egg, buttermilk, oil and vanilla extract. Mash banana's and add to this mixture mixing well.
  • 2. In another large bowl combine the flour, sugars, baking powder, baking soda and salt then mix thoroughly.
  • 3. Combine the dry ingredients with the wet ingredients folding the two gently by hand using a wooden spoon being sure not over mix.
  • 4. Use an ice cream scoop to measure out the batter into muffin cups.
  • 5. Take a spoon and drop walnuts over the top of each muffin pressing lightly so the nuts stick.
  • 6. Bake at 350*F for 18-22 minutes or until muffins spring back when touched and tops are lightly browned.
  • 7. Be sure to store any left over muffins in plastic wrap to keep muffins from drying out.
  • 8. These muffins can be frozen and thawed out when needed.
