5 pounds ground beef (I used ground round)
3 tablespoons olive oil
2 large yellow onions, diced
6 cloves garlic, minced
Two 28-ounce cans crushed tomatoes
One 14-ounce can crushed tomatoes
One 6-ounce can tomato paste
1 jar good store-bought marinara sauce (you can use another jar if you like the sauce to be more saucy than meaty)
2 tablespoons sugar
2 teaspoons kosher salt
1 teaspoon ground oregano
1 teaspoon ground thyme
1/2 teaspoon crushed red pepper, optional
4 bay leaves
1/4 cup finely minced fresh parsley or 3 tablespoons parsley flakes, plus more for serving
8 fresh basil leaves, chopped
1 whole rind from 1 wedge Parmesan, optional
1/2 cup grated Parmesan, optional, plus more for serving
2 pounds spaghetti, cooked al dente and tossed with olive oil, for serving
Garlic-cheese bread, for serving

Steps:

  • In a large pot over medium-high heat, brown the ground beef until totally browned. Remove the meat from the pot with a slotted spoon and put into a bowl. Set aside.
  • Discard any grease in the pot, but do not clean the pot. Drizzle in the olive oil. When it is heated, throw in the diced onions. Stir it around for 1 1/2 minutes, and then add the garlic. Stir and cook for an additional minute.
  • Add the crushed tomatoes, tomato paste and marinara sauce. Stir to combine, and then add the sugar, salt, oregano, thyme, crushed red pepper (if using) and bay leaves. Stir, then add the cooked ground beef and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally. Add a little water or some low-sodium broth if it needs more liquid.
  • After an hour, add the minced parsley, basil and the Parmesan rind if using (or grated Parmesan if you prefer--or both!). Stir to combine, and then put the lid back on and allow it to simmer for another 30 minutes or so. Discard the bay leaves before serving.
  • Serve a big bowl of oiled noodles and the spaghetti sauce so guests can serve themselves. Top each serving with minced parsley and grated Parmesan (or Parmesan shavings) and serve with a big piece of garlic-cheese bread.
  • Amen.

Here's one for when you've got up to 20 friends or relatives under one roof and need to come up with something easy for supper. If you find the ingredients need more binding, stir in 1 or 2 cans tomato paste. The ginger and allspice make a nice change from the usual Italian herbs; I've started with fairly small amounts but add more of either spice if it suits you. Add a huge bowl of salad greens tossed with a mixture of oil, vinegar, a little sugar and fresh-ground pepper, plus a couple loaves of garlic bread and you've got a meal.

We cooked all this food in the school cafeteria kitchen. I had a lot of admiration for the school kitchen chefs after this one meal.

7 lbs ground chuck
7 (29 ounce) cans tomato sauce (or 2 - 6.7 lbs cans, Do not add water)
6 tablespoons hamburger (may be in packets by instant gravies) or 6 tablespoons meatloaf seasoning mix (may be in packets by instant gravies)
2 bay leaves
4 tablespoons grated parmesan cheese (may use dry, but fresh is best)
1 lemon, juice of
1 1/2 teaspoons salt
1 1/4 teaspoons pepper
1 teaspoon oregano
7 onions, chopped
1/4 cup butter (1/2 stick)
7 (1 lb) boxes spaghetti

Steps:

  • Brown onions in butter until golden and limp.
  • Remove to a huge pot or divide equally into 2 dutch ovens.
  • In a separate pan, brown meat well and then drain of all fat.
  • Add meat to the pot you have the onions & stir in all of the seasonings.
  • Simmer for a few minutes while you open sauces and pour in pan.
  • After emptying last can, fill it 1/4 full of water and swish around to remove all of the tomato sauce, pour into the next can and swish until all the cans are clean.
  • Add this anemic catsup into the pan of sauce.
  • Check the recipe once more to make sure all of the ingredients have been added.
  • Each one is important, but do not add TWICE!
  • THIS IS AN EXPENSIVE SAUCE TO HAVE ANYTHING LEFT OUT.
  • Simmer slowly for 2-3 hours.
  • Check every 40 minutes or earlier to stir.
  • Remove bay leaves when through with cooking.
  • Makes a nice med thick meat sauce.

4 eggs
1 1/2 cups plain bread crumbs
3/4 cups grated Pecorino Romano cheese
2 garlic cloves, chopped
1/2 teaspoon salt

1/4 cup olive oil
1 medium onion, chopped
1 garlic clove, chopped
1 (6-ounce) can tomato paste
2 (28-ounce) cans ground tomatoes
3/4 (28-ounce) can water (from empty ground tomato can), or 21 ounces water
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 teaspoon chopped fresh parsley leaves

Steps:

  • For the meatballs: Combine all ingredients except the olive oil in a large bowl. Mix well. Form about 16 meatballs and place on a platter. Heat the olive oil in a large skillet and fry meatballs over medium heat until browned. Repeat until all meatballs are browned. Place meatballs on new clean platter. Do not discard the oil.
  • For the Gravy: In the skillet, heat the reserved oil, add the onion and garlic and saute for approximately 2 minutes. Add the tomato paste and cook on medium heat for 3 minutes, stirring constantly. Fill the empty tomato paste can full of water, add to the skillet, and cook for 1 minute, stirring. Remove from heat and set aside.
  • In an 8-quart saucepan, add the ground tomatoes and cook on medium heat for 5 minutes. Fill the empty ground tomato can 3/4 full of water and add to the saucepan, along with the tomato paste mixture from the skillet and the reserved browned meatballs. Mix thoroughly but carefully with a wooden spoon so as to not break the meatballs. Add the salt, ground pepper, and parsley and cook on medium heat for 15 minutes, then cover and cook on low heat for 2 1/2 hours, stirring every 15 minutes to prevent sticking and burning on bottom of pan. Serve over al dente pasta and sprinkle with some grated Pecorino Romano cheese, along with crusty Italian bread and a good bottle of red wine.

This is the sauce I've been making for years. It doesn't make a huge quantity, but is easily doubled etc. I think it needs to be simmered for a long time to develop the flavour. I would serve this over any pasta or spaghetti shapes I have on hand and I also use this in my lasagnas. Feel free to add sautéed mushrooms, celery or a little grated carrot if you wish. I do sometimes, but find we like this simple recipe the best.

2 tablespoons oil
1 large onion, finely diced
2 slices bacon, chopped
2 garlic cloves, minced
500 g beef mince, leanest you can buy
2 tablespoons bell peppers, finely chopped
1 (140 g) can tomato paste
1/2 cup red wine
1 (440 g) can chopped tomatoes, and their juice
2 cups beef broth
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1 pinch mixed pumpkin spice or 1 pinch freshly ground nutmeg

Steps:

  • Heat the oil in a large fry pan over a medium heat.
  • Add the onion and bacon and cook until the onion is golden and tender.
  • Add the minced garlic and cook a couple of minutes more.
  • Add the mince and cook, breaking up with a fork, until the meat has all changed colour.
  • Add the bell pepper and cook for a minute or two.
  • Now add the tomato paste and"cook it out" for another minute or two before adding the wine.
  • Allow the wine to reduce a little, before adding the remaining sauce ingredients.
  • Simmer until reduced and a deep rich red/ brown.
  • *You could call this "cooked" in 30 minutes, but I like to let it simmer about 2 hours, stirring regularly to make sure it's not catching.
  • Add a little more broth or water if it looks like doing so.

This is a recipe that needs to be stirred at least once or twice while cooking and may need water added while it is cooking. It is ok to leave this as is for the first 3 hours, but check the pasta for doneness and add water as needed to suit your family's taste. Don't worry if it is a little al dente. This is a dish that is made to sit a while. The pasta will absorb the liquid the longer it sits and will wind up soft and delicious.

1 lb turkey (removed from the casing) or 1 lb sausage (removed from the casing)
1 cup sweet onion, chopped
1 tablespoon garlic, finely minced
1 tablespoon canola oil

1 lb spaghetti, bow ties, rigatoni (use a thick noodle) or 1 lb ziti pasta
3 (14 ounce) jars spaghetti sauce (I use Ragu Old World Style)
1 cup heavy cream
1/2 cup butter
1 cup parmesan cheese, grated
1 tablespoon dried Italian seasoning
28 ounces water

Steps:

  • Coat the bottom of a large pan over medium heat with canola oil. Add ground beef (or turkey or sausage) and brown with onion, garlic, salt, black pepper. Drain.
  • Spray the bottom of the slow cooker. Add 1/2 of the first jar of sauce then the browned meat.
  • Add the second half of the first jar of sauce. Add the spaghetti. I break it in half to fit in my slow cooker.
  • Add a jar full of water and then the second jar of sauce.
  • Cut half of the butter into chunks and sprinkle it on top of the sauce.
  • Pour half of the heavy cream on the sauce, sprinkle half the parmesan cheese on top.
  • Add half of the dried italian seasoning.
  • Put the lid on the slow cooker and cook on high for 3 hours.
  • After 3 hours (or less 2-1/2 is ok too) check the pasta. It will be clumped together and chewy. Mix the pasta and the sauce together to bring the uncooked noodles closer to the top. Try not to dig too deep into the meat, but it's ok if you do.
  • Add the last jar of sauce and half a jar of water. This is where you have to judge how done the pasta is and how much more time it will need to cook. Add the remaining parmesan cheese, heavy cream, and butter to the sauce. Replace the lid and cook for another hour or until the pasta is just done.
  • Stir everything completely together and serve.
