SOY-MAPLE SALMON WITH CAULIFLOWER AND PISTACHIOS
Not only is salmon family friendly, it cooks quickly so there is time for a short marinade to infuse it with even more flavor while getting the rest of the meal together. In this recipe, maple syrup, soy sauce and orange juice add fresh sweet-salty flavors that lightly caramelize on the fish while it roasts. Recipe developed by Food Network Kitchen.

Steps:
- Preheat the oven to 400 degrees F. Mix the soy sauce, maple syrup, orange juice, 2 garlic cloves and 2 tablespoons water in a large bowl; add the salmon and turn to coat. Cover and refrigerate 20 minutes.
- Meanwhile, put the cauliflower and broth in a microwave-safe bowl; cover loosely with plastic wrap and microwave until tender, 6 minutes.
- Coat a rimmed baking sheet with cooking spray. Drain the fish, season with salt and pepper and place on the prepared baking sheet. Bake until slightly golden around the edges, 8 to 10 minutes.
- Meanwhile, heat the olive oil and remaining garlic clove in a large skillet over medium-high heat; cook, breaking up the garlic with a spoon, until softened, about 2 minutes. Add the cauliflower and broth, the cranberries, pistachios, orange zest, parsley, 1/4 teaspoon salt, and pepper to taste and stir to heat through. Serve with the fish.

- Combine all and reduce at a simmer until a syrup consistency is achieved, about a 60 to 70 percent reduction. Let cool.
SUNNY'S SWEET AND SOUR SOY SYRUP
Steps:
- In a small pot on medium-high heat, add the brown sugar and soy sauce. Stir to dissolve as much sugar as possible, then cook until the liquid level reduces and the sugar thickens the soy to a syrup. Let cool to room temperature, then stir in the lime juice.
- Drizzle over fresh fruit.
SOMEN NOODLE SUSHI WITH WASABI OIL AND SOY SYRUP
Steps:
- In a large mixing bowl combine first 6 ingredients. Check for seasoning. Using a sushi mat, place one sheet of nori, shiny side down. Lay down a thin layer of noodle mix on the bottom third of the nori. Arrange cucumber and peppers on the noodles and roll tightly. Moisten the top edge of the nori to "glue" the roll.
- Plating: Slice sushi with straight cuts and some on the bias. Drizzle soy syrup and wasabi oil on a large, white plate. Garnish with gari, sliced scallions and sesame seeds.
- Wasabi Oil: In a stainless steel bowl, whisk wasabi, mirin, and sugar. Add water until a loose puree is achieved. Whisk in oil. For extra spicy, use less oil.;
- Soy Syrup: Combine all and reduce at a simmer until a syrup consistency is achieved, about a 70 percent reduction. Let cool.

Steps:
- Sprinkle chicken with salt and pepper.
- Put the soy sauce, maple syrup, olive oil, vinegar, and garlic in a dish large enough to hold the breasts in one single layer and blend well.
- Add the chicken breast halves, skin side up, and coat them with the marinade; cover and let stand 15 minutes or until ready to cook.
- Arrange the chicken breasts skin side down in one layer on a baking dish.
- Place the chicken under the broiler, not the skin side up and then after 10 minutes, turn over so it is skin side up and cook until done; turning as needed to cook through.
