1 pound boneless, skinless chicken breasts
3/4 cup Food Network Kitchen™ Inspirations Mexican Style Cilantro Lime Vinaigrette
4 slices bacon
Vegetable oil, for oiling the grill grates
Kosher salt and freshly ground black pepper
1/4 cup chipotle mayonnaise (or other spicy mayonnaise)
4 panini rolls, split
1 avocado, sliced
1 tomato, sliced
1 cup loosely packed fresh cilantro leaves
4 small radishes, thinly sliced

Steps:

  • Combine the chicken breasts and 1/2 cup of the Mexican Style Cilantro Lime Vinaigrette in a resealable plastic bag. Let marinate at room temperature for 15 minutes.
  • Meanwhile, cook the bacon in a large skillet over medium heat until crisp, about 5 minutes per side. Drain on paper towels.
  • Preheat an outdoor grill or grill pan to medium-high heat.
  • Oil the grills grate or grill pan. Remove the chicken from the marinade. Sprinkle with salt and pepper. Grill the chicken, turning once, until cooked through, about 4 minutes per side, depending on thickness.
  • Spread the mayonnaise on the cut surfaces of the rolls. Slice the chicken and add to the rolls. Break the bacon in half and place on top of the chicken. Top with avocado and tomato slices, cilantro leaves and radishes. Drizzle each sandwich with 1 tablespoon of the remaining vinaigrette. Press the tops on the sandwiches.

2 cups soy sauce
1/2 cup extra-virgin olive oil
1/4 cup dark sesame oil
1 lime, juiced
4 inches fresh ginger, chopped
2 garlic cloves, chopped
1/2 cup chopped fresh cilantro leaves
4 boneless, skinless chicken breasts, pounded thin

Steps:

  • Combine the 1 cup soy sauce, 1/4 cup olive oil, 2 tablespoons sesame oil, half of the lime juice, ginger, and garlic, and 1/4 cup cilantro in the bottom of each of 2 large freezer bags. Put 2 chicken breasts in each bag and get them coated with the marinade. Then set the bags on a work surface, force the air out and seal them. Allow chicken to marinade for 1 hour. You can also freeze the chicken right in the marinade at this point. To do so fold each bag over the chicken 3 times, tape them well, and date them. Put it in the freezer for up to 2 months.
  • Place a large grill pan on 2 burners over medium-high heat, or preheat an outdoor gas or charcoal grill. Fold a few paper towels into a thick square. Blot some oil on the paper towels and then carefully and quickly wipe the ridges of the gill pan or the hot grates of the grill to make a non-stick surface.
  • Remove the chicken breasts from the marinade and season with salt and pepper. Lay the chicken on the hot grill and cook 3 to 5 minutes on each side until charred and firm. Serve with the sesame noodles and cucumber pickles.

8 boneless skinless chicken breast halves
2 cups olive oil
6 tablespoons lemon juice, juice from about 2 lemons
1/4 cup fresh cilantro, chopped
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon shallot, chopped
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
2 garlic cloves, minced
1 cup salsa, your favorite

Steps:

  • Put chicken in a glass dish large enough to hold the chicken pieces in a single layer.
  • Combine oil, lemon juice, cilantro, salt, cumin, shallots, pepper, cayenne and garlic.
  • Pour mixture over the chicken and turn pieces to coat.
  • Refrigerate, covered, at least 2 hours, turning chicken occasionally.
  • Remove chicken from the marinade, reserving marinade.
  • Boil marinade and then leave at a simmer for use as a baste.
  • Place chicken on oiled rack of gas grill over medium-high heat or on charcoal grill 4-6 inches from medium-hot coals.
  • Cook, turning once and basting often with the heated marinade, 10-12 minutes, or until chicken is firm, opaque, and light golden brown.
  • Discard remaining marinade.

4 boneless skinless chicken breasts
1 -2 tablespoon chopped fresh cilantro
1 garlic clove, minced (I use more)
1 lime, zest of
2 -3 tablespoons fresh lime juice
1/4 cup extra virgin olive oil

1/2 teaspoon black pepper

Steps:

  • Mix together the marinade ingredients in a deep bowl. Add the chicken breasts and turn to coat completely. Cover the bowl and refrigerate.
  • Marinade for about 1 hour. You can leave the chicken in the marinade longer, but because the mixture is very acidic, the chicken will begin to appear poached.
  • Preheat your grill. Cook the chicken over medium hot coals for about 3-5 mins per side.

6 tablespoons extra-virgin olive oil, divided
2 1/2 teaspoons minced fresh oregano
3 teaspoons finely grated lemon peel, divided
2 garlic cloves, pressed
Freshly ground black pepper
1 1/2 pounds large carrots, peeled, cut on deep diagonal into 1/4- to 1/3-inch-thick slices
3/4 teaspoon minced canned chipotle chiles*
Coarse kosher salt
2 tablespoons fresh lemon juice, divided

1/4 cup chopped fresh cilantro
4 ounces feta cheese, coarsely crumbled

  • Place chicken between 2 sheets of plastic wrap; pound with meat mallet to 1/2- to 3/4-inch thickness. Place chicken in 11 x 7 x 2-inch glass baking dish. Drizzle with 4 tablespoons olive oil. 4 tyson fresh split chicken breasts with ribs
1 tablespoon garlic, chopped
1 teaspoon salt
1/2 teaspoon pepper
2 teaspoons lime peel, grated
1/4 cup fresh cilantro, chopped
8 sprigs fresh cilantro
1/4 cup butter or 1/4 cup margarine, melted
2 tablespoons olive oil
2 tablespoons lime juice

Steps:

  • Preheat grill to medium. Combine garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small dish; mash into a paste using back side of a large spoon. Add lime peel.
  • Wash hands. Loosen skin of chicken by slipping your hand between the meat and skin. Spread a quarter of the garlic mixture and tuck 2 cilantro sprigs under the skin of each breast. Wash hands.
