1/3 cup water
1/3 cup tamari, I like to use low sodium
1/4 cup pure maple syrup
1/4 cup toasted sesame oil
1 clove garlic, finely grated
1 1/2 teaspoons finely grated ginger
1 1/2 teaspoons cornstarch or arrowroot starch
1 teaspoon toasted sesame seeds

Steps:

  • Add all stir fry ingredients to a jar or medium sized bowl and shake or stir until well combined. This stir fry sauce can be made ahead and refrigerated until needed but I would recommend leaving out the arrowroot powder until ready to use.
  • When your stir fry is about 3 minutes from being finished, pour the stir fry sauce over and stir occasionally until sauce is thickened and coats the back of a spoon or spatula, about 5 minutes.

1.25 lbs boneless chicken breast or thighs (cut into 1 inch pieces)
1 large white onion (thinly sliced)
2 large bell peppers (thinly sliced)
1 lb broccoli (chopped)
3 garlic cloves (minced)
1 inch ginger (peeled and minced)
1 3/4 cup chicken stock (low sodium)
1/4 cup soy sauce (I used Bragg's liquid aminos)
2 tbsp honey, maple syrup or brown sugar
1 tbsp rice vinegar
3 tbsp cornstarch
1 tbsp sesame seeds (for garnish)
2 tbsp Avocado oil (for frying)

Steps:

  • Cut the vegetables and chicken. "Stir fry" means to cook small pieces of food quickly on high heat while stirring. I highly recommend the vegetables and meat are prepped before you light the stove.
  • In a medium bowl, whisk together chicken stock, soy sauce, maple syrup, vinegar, cornstarch, garlic and ginger. Set aside.
  • Preheat large ceramic non-stick skillet on medium heat and add 1 tbsp of oil.°To cook boneless chicken breasts or thighs: Cook uncovered for 3 minutes per side, stirring a few times.°To cook bone-in chicken: Add chicken and 2 tbsp of water to a wok, sprinkle with a bit of salt, cover and cook for 10 minutes. Turn, cover and cook for another 10 minutes.
  • Remove chicken on a plate and return skillet to high heat. Add 1 more tbsp of oil, onion and bell peppers. Cook for 2 minutes, stirring once or twice. Remove onto a plate.
  • Return skillet to medium heat, add broccoli, whisk stir fry sauce well (cornstarch settles fast at the bottom) and add to the skillet. Stir, let sauce come to a boil, then cook for a few minutes until thickened, stirring often.
  • Return cooked chicken, onion and bell peppers to the skillet. Stir gently, turn off heat and garnish stir fry with sesame seeds.
  • Serve hot over Instant Pot quinoa, Instant Pot brown rice, brown rice vermicelli or whole wheat spaghetti.

500g vegetables such as carrots, baby corn, broccoli, courgettes, red peppers and cabbage or pak choi
1 tbsp rapeseed oil
1 garlic clove, sliced
1cm fresh ginger, grated
1½ tbsp reduced salt soy sauce
2 tbsp sweet chilli sauce (optional)
200g cooked prawns, salmon (flaked) or chicken breast (shredded)
200g egg noodles, cooked

Steps:

  • Finely chop or slice the vegetables into pieces roughly the same size. Slice the carrots diagonally, slice the baby corn, cut the broccoli into small florets, then slice the stem, and finely slice the peppers, cabbage or pak choi. Heat the oil in a large frying pan or wok, then fry the garlic and ginger for 1 min.
  • Add the veg and toss to coat. Fry for 2-3 mins, then add the soy sauce and chilli sauce, if using, and mix well. Cook for 2-3 mins more until the veg is tender. Stir in the prawns, salmon or chicken and heat through. Serve over the noodles.

1/4 cup soy sauce, tamari, or coconut aminos
1 tablespoon lemon juice
1 tablespoon honey
1 tablespoon sesame oil
1 tablespoon rice wine vinegar
1/2 teaspoon red pepper flakes, plus more to taste for added heat
1 pound chicken breasts, cut into bite-sized pieces
3 cloves garlic, minced
3 large carrots, peeled and julienned
1 large red bell pepper, julienned
1 large yellow bell pepper, julienned
1 cup snow peas, sliced into 1" pieces
8 ounces button mushrooms, sliced thinly
2 cups frozen broccoli, defrosted
2 tablespoons avocado oil or olive oil, divided
1 tablespoon cornstarch or arrowroot powder
4 cups cooked rice, noodles, or other serving options
Sliced green onions and toasted sesame seeds, for serving

Steps:

  • In a medium-sized bowl, whisk together the soy sauce, lemon juice, honey, sesame oil, rice wine vinegar, and red pepper flakes. Add in the chicken, and then toss to coat. Let marinate in the fridge while you chop your veggies.
  • When you have all your veggies ready to go, heat a large wok over high heat. Add one tablespoon of the olive oil.
  • Drain the chicken from the marinade, reserving the marinade and placing it back in the fridge. Add the chicken to the wok and cook until the chicken is cooked through, about five minutes. Remove the chicken to a plate.
  • Pour the remaining olive oil into the wok, and then add in the garlic. Cook for a minute, or until fragrant. Add in the carrots, bell peppers, snow peas, and mushrooms. Cook until bright in color and just crisp-cooked, about three minutes.
  • Add in the broccoli and cooked chicken. Reduce heat to medium-low.
  • Whisk the cornstarch into the reserved marinade, and then pour into the wok. Bring to a simmer and cook until thick, about five minutes. Serve on top of rice or noodles, topped with green onions and toasted sesame seeds, and additional soy sauce, tamari, or coconut aminos, if desired.

1/2 cup vidalia onion, wedges
3 garlic cloves, minced
1 small carrot, cut julienne style
2 medium portabella mushrooms, sliced
1/4 red bell pepper, cut julienne style
20 shrimp, frozen defrosted and shelled
broccoli, floweret's 4 to 6
1/2-1 teaspoon Chinese chili sauce, to taste
1/3 cup white wine

Steps:

  • Prepare all ingredients before starting dish.
  • Heat wok or fry pan on medium high to high heat,
  • add canola oil and swirl around pan to ensure coverage.
  • Add onion and garlic and cook for one minute stirring constantly,
  • add carrots and cook for 45 seconds stirring constantly,
  • add mushrooms cook for 1 minute stirring constantly,
  • add red bell pepper stirring constantly for 45 seconds,
  • add shrimp and stir constantly until almost done,
  • add Chinese chili sauce, stir then white wine,
  • stir then add broccoli florets stir and cook until broccoli is emerald green. Serve over brown rice cooked in low sodium chicken broth.

2 tbsp brown sugar, maple syrup or honey
3 tbsp cornstarch

1 1/2 lbs beef sirloin, ribeye, tri-tip, tenderloin or shoulder steak (thinly sliced)
1 large white onion (thinly sliced)
2 large bell peppers (sliced)
6 oz mushrooms (sliced)
1 lb broccoli (chopped)
2 tbsp oil (for frying)
1 tbsp sesame seeds (for garnish)

Steps:

  • Cut the vegetables and beef. In a small bowl, whisk together soy sauce, beef broth, brown sugar, cornstarch, garlic and ginger. Set aside.

The original recipe was celery, carrots and string beans, but we like this combination and it is the only way I can get anyone to eat broccoli, even myself! This serves all 6 of us when served with a salad. It is a good way to stretch chicken, because I usually need twice as much with other recipes.

3 boneless skinless chicken breast halves, cut into strips or chunks
salt and pepper
3 cloves garlic or 2 tablespoons jarred minced garlic
3 heads broccoli, cut
1/2-1 cup baby carrots, sliced thin
1 small onion, sliced
1 (16 ounce) package snow peas, fresh or frozen
2 -4 teaspoons sesame oil (you can substitute olive oil, canola, etc.)
1/4 cup teriyaki sauce, to taste
hot cooked rice (I use brown or Uncle Ben's long grain and wild)

Steps:

  • Heat about a tsp or two of sesame oil over high heat in a large skillet.
  • Add garlic and sauté until golden.
  • Add chicken, sprinkled with salt and pepper, and stir fry until no longer pink (you may need to lower the heat so garlic doesn't burn.) Remove chicken and garlic from pan.
  • Add another tsp or two of sesame oil and return to high heat.
  • Add all vegetables and stir fry for 5 or 10 minutes, or until tender-- if using frozen snow peas, add them the last couple of minutes.
  • Add back chicken and garlic and add teriyaki sauce.
  • Stir fry another minute or two.
  • Serve over hot cooked rice.
