Very simple to make it contains three traditional japanese flavours. It can be used to glaze kebabs for quick yakitori, brush over tuna to make seared tuna or try it with my Japanese five flavoured rice. Once made it can be stored for upto 4 days in a jar in the fridge

150 ml soy sauce or 150 ml low sodium soy sauce
100 ml mirin
100 ml sake

Steps:

  • place all ingredients into a saucepan and bring to boil.
  • Simmer for 3 - 4 mins until it becomes syrupy.
  • remove from heat, leave to cool and store in a lidded jar until needed.

SWEET SOY-GLAZED CHICKEN



Sweet Soy-Glazed Chicken image

1/2 cup sweet soy glaze (such as Kikkoman)
2 tablespoons rice vinegar
2 cloves garlic, grated
8 skin-on, bone-in chicken thighs (about 2 1/2 pounds)
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
6 cups pre-cut vegetables, such as broccoli florets, red bell peppers and/or carrots (about 14 ounces)
Cooked white rice, for serving

Steps:

  • Preheat the oven to 450 degrees F. Mix the soy glaze with the rice vinegar and garlic. Divide the sauce between 2 small bowls and add 2 tablespoons water to one bowl; set aside.
  • Season the chicken with salt and pepper. Heat the vegetable oil in a large ovenproof nonstick skillet over medium-high heat. Add the chicken skin-side down and cook until the skin is golden and crisp, about 6 minutes. Flip and cook until golden on the other side, about 4 more minutes. Pour the thinned soy glaze mixture over the chicken. Transfer to the oven and bake, 10 minutes.
  • Meanwhile, combine the vegetables, 2 tablespoons water and 1/2 teaspoon salt in a microwave-safe bowl; cover loosely with plastic wrap. Microwave until tender, about 4 minutes. Stir in 1 tablespoon of the remaining soy glaze mixture.
  • Remove the chicken from the oven; brush with the remaining soy glaze mixture. Return to the oven and bake until the chicken is cooked through, about 5 minutes. Serve with the vegetables and rice.

Soy Glazed Green Beans image

2 pounds green beans, ends trimmed
2 tablespoons canola oil
2 tablespoons butter
4 cloves garlic, chopped
1/4 cup soy sauce
2 tablespoons toasted sesame seeds
Freshly ground black pepper

Steps:

  • Bring a large pot of water to a boil and season generously with salt. Add the green beans and blanch until crisp-tender, 2 to 3 minutes. Immediately transfer to an ice bath to stop the cooking, and then remove to a baking sheet lined with paper towels or a cooling rack to drain.
  • In a large saute pan over medium-high heat, add the canola oil and butter. When the butter is melted, add the garlic and stir until fragrant, 1 to 2 minutes. Add the green beans, soy sauce, sesame seeds, and black pepper and saute until the sauce reduces slightly and thoroughly coats the green beans, being careful not to overcook beans.
  • Transfer to a serving dish and serve hot.

  • Chop enough shallots to measure 1 cup. In a heavy saucepan cook shallots in oil over moderate heat, stirring, until softened, about 3 minutes. Stir in soy sauce, water, sugar, jam, gingerroot, garlic, allspice, and red pepper flakes and simmer, stirring occasionally, until reduced to about 3/4 cup, about 20 minutes. Stir in lime juice and zest. (Glaze may be made 2 days ahead and cooled completely before being chilled, covered.)

1 (2-lb) piece center-cut salmon fillet with skin (1 1/2 inches thick)

Steps:

  • Preheat oven to 450°F. Line bottom of a broiler pan with foil, then oil rack of pan.
  • Boil soy sauce and maple syrup in a small saucepan over moderate heat until glaze is reduced to 1/3 cup, about 5 minutes.
  • Arrange salmon, skin side down, on rack of broiler pan and pat dry. Reserve 1 1/2 tablespoons glaze in a small bowl for brushing after broiling. Brush salmon generously with some of remaining glaze. Let stand 5 minutes, then brush with more glaze.
  • Roast salmon in middle of oven 10 minutes. Turn on broiler and brush salmon with glaze again, then broil 4 to 5 inches from heat until just cooked through, 3 to 5 minutes.
  • Transfer salmon with 2 wide metal spatulas to a platter, then brush with reserved glaze using a clean brush.

1 tablespoon olive oil
4 cloves garlic, minced
2 teaspoons ginger, minced
½ teaspoon red pepper
1 tablespoon olive oil
⅓ cup less sodium soy sauce
⅓ cup honey

Steps:

  • Place salmon in a sealable bag or medium bowl.
  • In a small bowl or measuring cup, mix marinade ingredients.
  • Pour half of the marinade on the salmon. Save the other half for later.
  • Let the salmon marinate in the refrigerator for at least 30 minutes.
  • In a medium pan, heat oil. Add salmon to the pan, but discard the used marinade. Cook salmon on one side for about 2-3 minutes, then flip over and cook for an additional 1-2 minutes.
  • Remove salmon from pan. Pour in remaining marinade and reduce.
  • Serve the salmon with sauce and a side of veggies. We used broccoli.

Give beef a boost with this delicious soy marinade

1.8 kg boneless beef joint, such as sirloin or top rump
splash of brandy or bourbon (optional)
4 garlic cloves , roughly chopped
1 red chilli , deseeded and roughly chopped
large knob of ginger , peeled and chopped
3 tbsp soy sauce or teriyaki sauce
3 tbsp tomato ketchup

Steps:

  • To make the marinade, blitz the garlic, chilli and ginger in a blender until finely chopped. Add the soy or teriyaki sauce and ketchup, then pulse until completely blended. Put the beef in a dish and smear over the marinade. Leave in the fridge to marinate for up to 24 hours, the longer the better.
  • To cook the beef, fire up the barbecue and, when flames subside and coals glow, lay it fat side down and char for about 5 mins to get fat sizzling. Flip it over and cook for 40 mins for medium rare, turning occasionally until all sides are charred. If the barbecue has a lid, use it for a smokier flavour. A few mins before taking the beef off, drizzle over brandy or bourbon (if using) to flambé the meat.
  • Lift the meat onto a board, cover with foil and leave to rest for at least 10 mins. Carve the beef into slices like a roast and serve with any juices.

Steps:

  • Preheat oven to 400 degrees. with a rack in the center. Make the glaze: In a small bowl, stir brown sugar, olive oil, soy sauce, lemon juice, and white wine until the sugar has dissolved.
  • Cut salmon fillet into 4 equal-size pieces; arrange, skin side down, in a single layer in a baking dish. Pour glaze over the fish, and turn to coat evenly.
