SOUTHWEST CHICKEN
I discovered this recipe one Sunday afternoon in the WW magazine when I was looking to find a different way to prepare chicken. This recipe is very easy and very tasty. I served it with rice and green beans. The chicken can be cooked immediately after using the rub, but for a more intense flavor, marinate for a couple of hours in the fridge or overnight.This chicken has a sweet and spicy flavor and can be served with a squeeze of fresh lime.

Steps:
- Preheat oven to 375 degrees F. Or prepare grill for direct-and indirect-heat cooking.
- Combine first 8 ingredients;reserve. Line roasting pan with foil. Rub sugar mixture over all sides of chicken;place in pan. Coat chicken with cooking spray.
- Roast chicken in oven until no longer pink near bone, about 45-60 minutes.Or place chicken meaty side down over direct heat;cook until just browned, 4-5 minutes. Turn;place over indirect heat. Cover;cook until chicken is no longer pink near bone, 40-50 minutes. Transfer to serving platter;sprinkle with parsley. If desired, serve with lime wedges.

Steps:
- Bring a large pot of water to a boil.
- Add 2 1/2 tsp of salt and penne to the boiling water. Cook according to package directions.
- Sprinkle the chicken with the remaining 1/2 tsp of salt and the oregano.
- Cut the chicken across the short side to create strips.
- Heat the olive oil in a wide skillet over high heat.
- When the oil is hot, add the chicken.
- Spread it out into a single layer.
- Then add the sliced peppers.
- Cook without stirring for about 5 min - you would like the chicken to brown a little bit. If it seems as if it will burn, stir it.
- Add the salsa, stir and cook for about 5 more min or until the chicken is cooked through.
- Remove the skillet from the heat.
- Stir in the sour cream.
- Spoon cooked penne into a serving bowl or onto plates.
- Top with the chicken mixture.
- Sprinkle with chopped cilantro, if desired, and a little of the shredded cheese.

My husband came up with this recipe, and it is one of the best things I have ever eaten. I can eat leftovers of this every day, and I hate leftovers. And it's so easy, it's silly.

Steps:
- Combine seasoning packet, water, vinegar and oil with chicken and toss to coat.
- Marinate in the refrigerator for 30 minutes or longer for extra flavor.
- Place chicken in skillet sprayed with non-stick cooking spray, discarding excess marinade.
- Cook chicken on medium until no longer pink, stirring occasionally.
- Boil pasta in water for 15 minutes or until soft. Drain.
- Add alfredo sauce to pasta and heat through.
- Serve pasta with chicken on top!

- Rinse, drain, and peel the shrimp.
- Put shrimp on skewers.
- Mix ketchup, picante sauce, sugar and lemon juice.
- Brush the sauce on the shrimp, reserving some to serve with the shrimp.
- Grill shrimp 5-8 minutes or until done, basting occasionally with the sauce.
- Heat and serve the remaining sauce on side.
- I like to serve this over a bed of rice.
