I orginally found this in a very old Better Homes and Garden cookbook. It's been my family's favorite for years . . . try it and you'll see why! Use hotter chilis to achieve more spice. The brown sugar can be deleted for less sweetness. The Chili Sauce I use in the US, is a slightly sweet (not hot) sauce, believe it's made by Heinz (small fat jar). I have substituted pureed tomatos here in Mexico and it works great!

8 slices bacon
1 cup onion, finely chopped
1/4 cup green bell peppers or 1/4 cup poblano pepper, chopped
1 (16 ounce) can diced tomatoes
1 1/2 cups water
1/2 cup bottled chili sauce
1 teaspoon salt
1 dash pepper
1 teaspoon brown sugar
1/2 teaspoon Worcestershire sauce
1/4 cup fresh cilantro (optional)
3/4 cup uncooked white rice

Steps:

  • Fry the bacon until crisp.
  • Remove bacon and crumble.
  • Save 1/2 of bacon fat.
  • Saute onion and pepper (in 1/2 of the fat from the bacon) until tender. Add rest of ingredients.
  • Stir, cover and simmer for 45 minutes.
  • Add crumbled bacon before serving.

2 tablespoons butter
1 1/2 cups long-grain white rice
1 onion, chopped
1 green pepper, chopped
One 28-ounce can diced tomatoes
One 4-ounce jar diced pimiento
Pinch salt
Pinch cayenne
Several dashes hot sauce

Steps:

  • Melt the butter in a medium, heavy-bottomed saucepan over medium-low heat. Add the rice, onion and green pepper, and saute until the rice is slightly browned and the vegetables are softened, 8 to 10 minutes. Stir in the tomatoes, pimiento, salt, cayenne and hot sauce. Bring to a boil, cover and reduce the heat to low. Simmer for 20 minutes, then fluff with a fork. If the rice is tender but too soupy, cook uncovered for another 5 minutes. If the rice is dry but not yet tender, add 1/2 cup water, cover and continue cooking for another 5 minutes, or until the rice is done.

This simple skillet Spanish rice has a Southern twist, the traditional combination of onion, tomato, and rice is enhanced with bacon and cheese.

4 slices bacon
1 to 4 teaspoons butter
1/2 cup onion (minced)
1 cup long-grain white rice
1 14.5-ounce can diced tomatoes (with juice)
2 cups water
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon chili powder
1 cup cheddar or Monterey jack cheese (shredded)

Steps:

  • Gather the ingredients.
  • In a large skillet, fry bacon until cooked, but not crisp, over medium heat. Remove from skillet, drain on paper towels, and dice and set aside.
  • Pour the bacon fat into a measuring cup; if there is less than 1/4 cup add enough butter to make 1/4 cup of fat. (Add a teaspoon of butter at a time, stirring-the hot bacon fat will melt the butter.)
  • Pour the melted fat back into the skillet, and add the onion and rice. Sauté over medium heat, stirring constantly, until rice is lightly browned and onion is tender.
  • Remove from heat; stir in diced bacon, tomatoes with juice, water, salt, pepper, and chili powder. Return to the heat, cover, and simmer until rice is tender and liquid is almost all absorbed-about 20 minutes.
  • Add cheese, lower the heat and stir until cheese is melted.
  • Serve hot and enjoy!

Of course, I don't believe this dish is Spanish at all, but rather Cajun from Louisiana. I made it quite often in the 1960s. Then - as now - in home cooking, one had to watch the cost, and rice was an inexpensive way to fill out a meal; after all, rice feeds half the world.

1/4 cup olive oil
2 onions, finely chopped
2 green bell peppers, seeded, ribs removed, and diced
2 ribs celery, finely chopped
3 cloves garlic, minced
1 cup long-grain white rice
One 8-ounce can tomato sauce
2 cups water
1 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon cumin (optional)

Steps:

  • Heat the olive oil in a large frying pan over medium heat, then add the onions, green peppers, and celery and sauté until soft, about 3 minutes. Add the garlic and cook for another minute while stirring. Add the rice and stir together to mix. Add the tomato sauce and the water carefully. Season with the salt and pepper, and add the cumin, if using. Bring to a boil, lower the heat, cover, and simmer for 20 to 25 minutes, until the rice is done, stirring once or twice.

6 slices bacon, cut up
1/4 cup finely chopped onion
1/4 cup chopped green pepper
3 cups cooked rice (1 cup uncooked)
2 cups canned tomatoes
1 1/2 teaspoons salt
1/8 teaspoon pepper

Steps:

  • In a skillet, fry the bacon until it is crisp; remove from skillet and drain off most of the fat.
  • Add onion and green pepper to bacon fat and cook over medium heat until the onion is yellowed.
  • Add remaining ingredients and cook uncovered over low heat for abou 15 minutes, or until hot.
  • NOTE: you can heat the oven to 400 degrees and combine the cooked bacon, onion and pepper with the rice and tomatoes, salt and pepper, in a baking dish. Bake for 25-30 minutes.
  • ALSO, you can substitute jarred or packaged cooked bacon bits, genuine or soy-imitation.

1 cup chicken broth
1 cup tomato sauce
6 slices bacon
2 onions, diced
1 cup uncooked white rice
2 tomatoes, diced
2 green bell peppers, diced
½ teaspoon chili powder
½ teaspoon salt and ground black pepper
1 (10 ounce) can sliced black olives, drained
1 (10 ounce) can whole kernel corn, drained

Steps:

  • Bring chicken broth and tomato sauce to a boil in a small saucepan, about 5 minutes. Reduce heat to medium and maintain a simmer while preparing the remaining ingredients.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon to a paper towel-lined plate, reserving bacon grease in the skillet. Chop bacon.
  • Cook and stir onion in reserved bacon grease over medium heat until tender, about 5 minutes. Stir in rice; cook and stir until lightly browned, 3 to 5 minutes. Pour boiling chicken broth and tomato sauce into rice mixture; add diced tomatoes, green peppers, and chopped bacon. Season with chili powder, salt, and pepper. Cover and simmer until rice is tender and liquid is absorbed, 30 to 40 minutes. Stir black olives and corn into rice mixture before serving.

1 tablespoon cooking oil
1 medium onion, chopped
1 cup long grain rice, uncooked
1 3/4 cups water
2 large tomatoes, chopped
1 medium green pepper, chopped
2 jalapeno peppers, chopped (and seeded, if less heat it desired)
1 1/2 teaspoons chili powder
1/2 teaspoon salt

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove and drain on paper towel.
  • Add oil to the drippings and saute onion for 3 minutes. Add rice and fry until golden brown, about 5 minutes.
  • Stir in the remaining ingredients and bring to a boil. Reduce heat, cover, and simmer for 30 minutes or until rice is tender.
  • Sprinkle with bacon and serve.

1/2 cup chopped onion

1 garlic clove, minced
1 cup long-grain white rice
1 3/4 cups chicken broth
1 cup canned tomato, chopped and drained
1/2 teaspoon sweet paprika or 1/2 teaspoon smoked spanish paprika
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Preheat the oven to 350°F In a 10" ovenproof skillet, or stove-top safe casserole dish and cook the vegetable oil, bacon, onion, bell pepper, and garlic clove over medium heat, stirring, until onions are golden. This should take about 5 minutes.
  • Add the rice and stir until well-coated.
  • Add the remaining ingredients and bring to a boil.
  • Stir once, cover, and transfer to the oven. Bake until the liquid is absorbed and the rice is tender, about 25 minutes. Uncover and let stand for 5 minutes before serving.
