12 tablespoons (1 1/2 sticks) unsalted butter, plus more for the pan
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon grated nutmeg
1/2 teaspoon fine sea salt
2 cups (lightly packed) light brown sugar
3 large eggs
1 teaspoon vanilla extract
1/2 cup whole hazelnuts (with or without skins)

Steps:

  • Preheat the oven to 350 degrees F.
  • Lightly butter a 9-by-13-inch baking pan, preferably a light-colored aluminum or steel pan. (Dark pans cause over-browning.)
  • Heat a large skillet over medium heat, add the butter, and cook until the butter foams and turns amber brown, 3 to 5 minutes. Pour the butter into a large bowl and set aside until cool enough to touch.
  • Meanwhile, sift the flour, baking powder, nutmeg and salt together into a bowl.
  • In the bowl of a stand mixer, or using a hand mixer, combine the brown sugar with the butter and mix until combined. Add the eggs and vanilla, and mix until smooth, thick and light, 3 to 5 minutes. (You want to make sure the mixture is very light and airy, like frosting.) Stir in the sifted flour mixture and mix by hand until incorporated.
  • Pour the batter into the prepared baking pan and spread it into an even layer, smoothing the top. Scatter the hazelnuts, pressing lightly to submerge them about halfway in the batter.
  • Bake until the surface wrinkles evenly and turns nut brown, about 35 minutes. Let cool completely, at least 2 hours, before cutting into 2-inch bars.

1 teaspoon vanilla extract
1 large egg yolk
2 cups all-purpose flour
¼ teaspoon salt
⅔ cup milk chocolate chips
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Beat butter, brown sugar, vanilla extract, and egg yolk in a large bowl; stir in flour and salt. Press dough into prepared baking dish.
  • Bake in preheated oven until crust is light brown, 25 to 30 minutes.
  • Immediately sprinkle chocolate chips over hot crust. Let stand until soft, about 5 minutes, and spread evenly; sprinkle with nuts. Cool pan on wire rack for 30 minutes.

My mom made these bars when I was a child, and she still does, so they bring back a lot of memories for me. This recipe is my own variation that I developed in recent years; I love the colors of the cranberries and white chocolate - they're very festive. But sometimes I make them just like Mom with milk chocolate and walnuts. Most of the time I forget to add the salt, and I find it doesn't make any difference - they always taste delicious and are always a hit!

1 cup unsalted butter
1 cup light brown sugar
1 egg yolk
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
8 ounces white chocolate or milk chocolate, chopped into 1-inch squares
3/4 cup walnuts, coarsely chopped
3/4 cup dried cranberries, coarsely chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • In a mixer, beat the butter, sugar, egg yolk, and vanilla. Gradually mix in flour, then salt, and continue beating until well blended, scraping down the sides of the bowl as necessary. Transfer batter to a 9 by 13-inch pan, and flatten out with a rubber spatula.
  • Bake until slightly browned, about 20 to 25 minutes. Remove from the oven and immediately place squares of white chocolate on top, gently spreading with an off-set spatula or dull knife as they melt. Sprinkle with nuts and cranberries. Allow to set, about 15 minutes, and then cut into squares.

A great bar cookie recipe, not gooey or chewy. There is a chopped nut base, then a crumb layer, then a thin spongy spicy cake-y layer. The amounts of spices can be adjusted to your taste. These work pretty well for me. From the archives in my collection. My daughter requested these, reminding me that I used to make them a lot. Things do get mislaid, though. And/or forgotten. 1 1/2 cups sugar
3/4 cup brown sugar, packed
2 cups flour
1/2 cup shortening or 1/2 cup butter
1 egg
3/4 teaspoon salt

1 cup buttermilk or 1 cup sour milk
1/4 teaspoon allspice
1/2 teaspoon cinnamon

1/4 cup granulated sugar

1 large fresh egg, slightly beaten
1/2 cup all-purpose flour
3/4 cup chopped quality milk chocolate
2 tablespoons ground almonds

Steps:

  • Preheat oven to 350 degrees F. Line an 8-inch square metal cake pan with parchment.
  • In large bowl, whisk together 4 tablespoons melted butter and the melted chocolate. Blend in granulated sugar, 1/4 cup brown sugar, and vanilla. Whisk in egg. Then stir in flour. Spread in pan and bake for 15 minutes, remove and leave oven on.
  • Heat 1/2 cup butter and 3/4 cup of the brown sugar in a medium saucepan over medium-high heat. Boil for 2 minutes. Pour over brownie base and bake 7 minutes more. Remove from oven and sprinkle with milk chocolate, let sit 5 minutes, and spread to cover the top. Dust with ground almonds and then pecans. Sprinkle with salt. Press down pecans. Cool, then freeze 30 minutes before cutting. Serve at room temperature.

1 ¾ cups all-purpose flour
1 cup butter, softened
1 cup white sugar
1 teaspoon vanilla extract
1 egg, separated
½ cup finely chopped walnuts

Steps:

  • Preheat oven to 275 degrees F(135 degrees C). Grease 15 1/2 by 10 1/2 inch jelly-roll pan.
  • Sift the flour, set aside. In a medium bowl, cream the sugar and butter. Add the vanilla and egg yolk; mix well. Stir in the flour. Spread batter evenly into the prepared jellyroll pan.
  • In a cup, beat egg white slightly; brush over top of dough and sprinkle with nuts.

They were kind enough to share the recipe, so I'm sharing it as well. The version I had was with nuts, so I don't even know if there was any toffee in it!

1 (14 ounce) box graham crackers
1 cup butter
1 cup packed light brown sugar
2 cups milk chocolate chips
1 (8 ounce) package toffee pieces or 1 (8 ounce) package nuts

Steps:

  • Preheat oven to 400 degrees F.
  • LIne a 10x15-inch baking pan with foil.
  • Arrange graham crackers in a single layer in the prepared pan.
  • Combine the butter and brown sugar in a saucepan. Bring to a boil.
  • Boil for exactly 3 minutes, stirring occasionally. Drizzle over the graham crackers.
  • Bake in preheated oven for exactly 5 minutes. Remove from the oven. Sprinkle with the chocolate chips. After 1 minute, spread with a buttered spatula. Sprinkle with the toffee chips.
  • Cool to room temperature. Chill until set. Cut or break into bars.
  • Store the bars, covered, in the refrigerator.

Steps:

  • Preheat oven to 370F (175C); line 9"x13" pyrex baking dish with foil.
  • For pastry: In mixer, cream butter; add sugar and lemon peel and beat until light and fluffy; combine flour, salt and cornstarch in small bowl; mix to blend; add to butter and mix just until dough starts coming together; press dough into baking dish, forming 1 inch high edges; pierce all over with fork.
  • Bake until starting to colour, piercing with fork if pastry begins to puff during baking, about 40 minutes; remove from oven, maintaining oven temperature.
  • For topping: Combine butter, brown sugar and honey in saucepan; whisk over medium-high heat until mixture comes to boil; boil without stirring until mixture thickens and bubbles enlarge, about 1 minute; mix in almonds and hazelnuts; remove from heat and stir in cream; spread topping in crust; bake until caramel bubbles, about 20 minutes.
  • Cool in pan, on rack; remove from pan, using foil as aid; cut into 1 1/2 inch squares; keep in an air-tight container.

1/2 teaspoon baking soda
1/2 teaspoon salt
2/3 cup Earth Balance margarine
2 cups light brown sugar (very very fresh)
3 teaspoons energ egg replacer frothed with 4 tbsp hot water
2 teaspoons vanilla extract
1 cup pecans, chopped (medium fine)
2 tablespoons pecans, chopped (medium fine)
1 cup semi-sweet chocolate chips (vegan friendly)

Steps:

  • Preheat oven to 350 degrees. Grease a 9; x 13; pan.
  • Cream together the Earth Balance and brown sugar until well blended. Add salt and baking soda and mix well. Add in egg replacer and vanilla.
  • Being careful not to overmix, add in flour until just combined. Fold in 1 cup of pecans and chocolate chips.
  • Spread ( I had to use my hand and actually "pat") the dough into the prepared baking pan. Sprinkle the remaining chopped nuts over the top of the dough.
  • On middle rack of oven, bake about 20-25 minutes. They will look uncooked if you try to cut into them. Resist the urge and let them cool on wire rack for about 1 hour. Cut into bar shapes and enjoy with some yummy Almond Breeze, or your favorite non-dairy milk.

175g plain flour
50g ground rice
85g golden caster sugar
140g cold butter , diced
1 tbsp milk
25g pumpkin seeds , plus a few extra
250g mixed nuts (I used pistachios, macadamias and hazelnuts)
300g/11oz caramel (I used Carnation)
3 tbsp flour

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line a 21 or 22cm square, shallow baking tin with baking parchment. Put the flour, ground rice and sugar in a bowl with the butter and rub in until fine crumbs form. Stir in the milk with a cutlery knife. Tip it all into the tin and press down evenly. Bake for 15-20 mins until golden.
  • Remove the tin and lower oven to 180C/160C fan/gas 4. Mix together the seeds, nuts, caramel and flour. Evenly distribute over the base, scatter with extra seeds, then bake for 8-10 mins more. Cool in the tin, then cut into squares.
