This recipe is the most delicious salmon recipe, easy to prepare and very refreshing. Everyone that ate this dish loved it. I made this recipe, and it is easily my favorite.

¼ teaspoon olive oil
1 clove garlic, minced
¼ cup soy sauce
½ lemon, juiced
1 teaspoon honey
½ teaspoon olive oil
⅓ teaspoon packed brown sugar
¼ teaspoon sea salt, plus more for garnish
¼ teaspoon ground black pepper, plus more for garnish
¼ teaspoon red pepper flakes
4 (6 ounce) fillets salmon
1 tablespoon olive oil

Steps:

  • Heat 1/4 teaspoon olive oil in a small skillet over medium-high heat. Saute garlic in hot oil until just beginning to brown.
  • Mix sauteed garlic, soy sauce, lemon juice, honey, 1/2 teaspoon olive oil, brown sugar, sea salt, black pepper, and red pepper flakes together in a bowl; pour into a large resealable plastic bag. Add salmon fillets, turning to coat with the marinade, squeeze bag to remove excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
  • Remove salmon from the marinade and shake to remove excess liquid. Reserve 3 tablespoons marinade and discard remainder.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Arrange salmon fillets in the hot skillet, pour reserved marinade over the salmon, and place a lid on the skillet; cook until salmon is browned on each side and flakes easily with a fork, occasionally spooning liquid from the pan over the fillets, 2 to 3 minutes per side. Garnish salmon with additional sea salt and black pepper.

4 (8 ounce) fresh salmon fillets
salt to taste
⅓ cup cold water
¼ cup seasoned rice vinegar
2 tablespoons brown sugar
1 tablespoon hot chile paste (such as sambal oelek)
1 tablespoon finely grated fresh ginger
4 cloves garlic, minced
1 teaspoon soy sauce
¼ cup chopped fresh basil

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Season salmon fillets with salt.
  • Place salmon on the preheated grill; cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork.
  • Combine water, rice vinegar, brown sugar, chile paste, ginger, garlic, and soy sauce in a small saucepan over medium heat.
  • Bring mixture to a boil, reduce heat to medium and simmer until barely thickened, about 2 minutes.
  • Sprinkle basil on top of salmon; spoon glaze over basil.

"Secret" recipe from the best steakhouse in Cordova, Alaska! This makes almost any kind of salmon palatable (except for pinks). Requires only 30 minutes marinating time. Makes a huge batch of marinade - would probably cover two huge fillets. You could try making half... (I use dried parsley and it tastes great.)

1 cup orange juice
1 cup soy sauce
1/2 cup ketchup
1/2 cup oil
1/2 cup chopped parsley
1/4 cup lemon juice
2 teaspoons oregano
2 teaspoons pepper

Steps:

  • Rinse fillets and pat dry.
  • Place gallon-size ziploc bag in an empty pitcher, folding top edges over mouth of pitcher.
  • Combine all ingredients inside ziploc bag.
  • Add fillets, squeeze air out of the bag. Gently mush the ingredients together and onto the fish.
  • Let marinade and fish set for 30 minutes.
  • Remove fish from marinade; discard leftover marinade.
  • Grill or broil as desired.

2 lbs salmon fillets (coho)
6 ounces amber beer (alaskan)
6 ounces soy sauce
8 garlic cloves, pressed
2 pieces gingerroot, finely grated (2 inches pieces)
3/4 cup cilantro, finely chopped

Steps:

  • Mix all of the ingredients, except the salmon, in a bowl to make the marinade.
  • Place the fish fillets in a freezer bag, add the marinade, squeeze all the air out of the bag and seal the bag. Allow the fillets to marinate for 12 to 24 hours.
  • Heat up your grill and over indirect heat grill the fillets, skin side down.
  • Cook until the fish flakes at the thickest parts of the fillet. You can test this by using a fork and lightly brushing it over the area.
  • The Plate : Serve with roasted red bell peppers and cold Alaskan Amber Beer.

3 Tablespoons pure maple syrup
2 teaspoons fresh grated ginger root*
2 teaspoons fresh lime juice
2 teaspoons soy sauce
1½ teaspoons fresh minced garlic
1 bunch green onions, trimmed and sliced lengthwise (for planking only)
1½ pounds Alaska Salmon

Steps:

  • Soak wood plank in water 30 minutes to 2 hours. Blend maple syrup, ginger, lime juice, soy sauce and garlic. Brush or spoon 1/2 to 1 teaspoon glaze on each Alaska Salmon portion or all onto large fillet/salmon side. Let the salmon rest 5 minutes before cooking. Heat grill to medium-high heat. Pat wood plank with paper towels and spray-coat or lightly oil one side. Place green onions on plank; top with salmon. Grill salmon using indirect heat (not directly over heat) in covered grill for 10 to 15 minutes. Cook just until salmon is opaque throughout.
  • *Add 1/4 teaspoon crushed red pepper flakes for additional heat, if desired.

1/8 cup Bourbon

Steps:

  • Pre-heat your oven to 450 degrees.
  • Juice lemon and combine with brown sugar into a medium sized bowl.
  • Add bourbon until it becomes a spreadable paste. (You might not use all 1/8 cup).
  • Cover a lipped baking pan with foil. If using fillets place salmon skin side down directly on the foil - do not grease.
  • Spread bourbon paste on top of your salmon.
  • Cook on middle shelf for about 20 to 25 minutes or until fully cooked.
  • Wedge a spatula between the salmon and the skin and remove fillet. the skin will remain on the foil.

3/4 cup white wine vinegar (Coles Italian was stipulated)
1 tablespoon honey
1 tablespoon ginger (finely chopped)
1 mango (peeled pitted and cut into large chunks)
1 tablespoon lime juice
1 teaspoon soy sauce
1 1/2 tablespoons coriander (cilanto chopped finely)
1 tablespoon extra virgin olive oil
8 (170 g) salmon fillets (skin removed)
salt and pepper

Steps:

  • To make glaze - place vinegar and honey in a medium saucepan and over a medium heat cook until honey has dissolved and liquid has thicken slightly, about 2 minutes
  • Add ginger and mango and bring to low simmer and continue cooking another 5 to 7 minutes or until softened.
  • Remove from the heat and transfer contents to saucepan to a blender and process until a smooth puree forms and set aside to cool.
  • Once cooled, season with lime juice and soy sauce and fold in coriander (NOTE - glaze can be made 1 day in advance and extra glaze will keep up to 3 days in the refrigerator).
  • Preheat grill/broiler to high and line a medium baking tray with foil.
  • In a large saute pan heat olive oil over high heat.
  • Season salmon with salt and pepper and place in pan, glesh side down and cook until golden brown about 15 seconds and flip over and sear other side for another 10 seconds.
  • Immediately transfer salmon, flesh side up, to baking tray lined with oil and coat with mange glaze.
  • Place tray under grill/broiler and cook approximately 5 minutes, or until salmon is just done and glaze starts to brown and then transfer salmon to a plate and let rest for 2 minutes.
  • To serve, transfer fish to a platter and serve with sides.
