1 1/2 cups dried baby lima beans
1 1/2 cups dried great northern beans
1 tablespoon salt
8 cups water
1 smoked ham hock
1 cup diced smoked ham
1 cup diced Little Smokies sausage
1/2 lb bacon, diced and fried crisp,reserve 2 tbs bacon grease
1 medium onion, chopped
2 stalks celery, diced
1 medium carrot, shredded
2 cloves garlic, minced
2 tablespoons fresh parsley, finely chopped
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
2 teaspoons salt
1 teaspoon fresh ground pepper
2 teaspoons beef bouillon, crystals
2 teaspoons msg
1 teaspoon sugar
2 bay leaves
2 tablespoons Worcestershire sauce
1 teaspoon A.1. Original Sauce
2 teaspoons liquid smoke
2 tablespoons rendered bacon fat

Steps:

  • RINSE AND SORT BEANS AND PUT IN LARGE POT WITH WATER AND SALT.
  • BRING TO BOIL AND BOIL FOR TWO MINUTES.
  • TURN OFF HEAT, COVER, AND LET STAND FOR 1 HOUR.
  • RINSE, DRAIN, AND TRANSFER TO CROCK POT.
  • COMBINE ALL INGREDIENTS IN 6 ½ QUART CROCK POT WITH 10 CUPS WATER.
  • COOK ON LOW FOR 8 HOURS.
  • REMOVE HAM HOCK.
  • CUT OFF USEABLE MEAT AND RETURN MEAT TO POT.
  • REMOVE BAY LEAVES.
  • FOR THICKER SOUP, STIR IN 1 TBS CORN STARCH MIXED WITH 2 TBS WATER.
  • COOK ON HIGH FOR 30 MINUTES TO 1 HOUR.
  • ADJUST SEASONINGS TO TASTE.
  • Makes enough to feed a Third World Country or two teen-agers!

This seriously simple soup is full of flavor and spice. You will need at least a 5-quart slow cooker for this reicpe. To save yourself some time in the morning, you can saute the ground beef, onion, garlic and celery the night before and refrigerate until the morning. Then all you have to do is combine the ingredients in the slow cooker in the morning and come home to a comforting, delicious meal. All you will have left to do is top it with some baked fresh corn tortilla strips, tortilla chips or corn chips and some sour cream, shredded cheddar cheese and green onion - or whatever you like! A nice side salad would be a wonderful accompaniment with this soup. This soup freezes well, also.

5 slices bacon, cooked, drained and chopped
1 lb ground sirloin or 1 lb lean ground beef
1 large onion, finely chopped
2 garlic cloves, minced
2 celery ribs, finely chopped
1 cup lager beer
1 (14 1/2 ounce) can beef broth
1 (10 ounce) can enchilada sauce
1 (12 ounce) bottle chili sauce
1 (10 ounce) can Rotel tomatoes & chilies
1 (15 1/2 ounce) can kidney beans, rinsed and drained
1 (15 1/2 ounce) can black beans, rinsed and drained
1 (15 1/2 ounce) can pinto beans, drained
1 (15 1/4 ounce) can niblet corn, drained
2 tablespoons chili powder
1/2-1 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon dried oregano
1/2 teaspoon paprika
2 -3 teaspoons cumin
1/4 teaspoon black pepper
cayenne, pinch (optional)
1 bay leaf
1 teaspoon salt
tortilla chips or corn chips, garnish
shredded cheddar cheese, garnish
sour cream, garnish
green onion, chopped, garnish

Steps:

  • In large nonstick skillet, saute ground sirloin, onion, garlic and celery over medium to medium-high heat until beef is browned and crumbles (be sure not to have heat too high so you don't burn the garlic); drain fat.
  • Add ground beef mixture to a 5-quart or large slow cooker.
  • Add the bacon and the rest of the ingredients to the crock pot, except for the garnishes; mix well.
  • Cover and cook on low setting for 6-8 hours or on high setting for 3-4 hours.
  • To serve, garnish with any of the following: fresh tortilla strips, tortilla chips, corn chips, shredded cheese, sour cream and green onions.
  • Don't forget to remove the bay leaf.
  • Enjoy!

2 cups dried navy beans, picked over, soaked in water to cover overnight and drained
2 -3 slices bacon, cooked until the fat is rendered but not crispy
1 small yellow onion, finely chopped
1 celery rib, minced
1 small carrot, minced
1 bouquet garni (1/2 tsp. dried oregano, 3 sprigs parsley, 1/2 fresh sage leaf and 1 bay leaf wrapped in cheesecloth)
6 cups chicken broth or 6 cups water
salt and pepper
1/2 cup heavy cream (optional)

Steps:

  • Combine the beans, bacon, onion, celery, carrot, bouquet garni and broth in slow cooker.
  • Cover and cook on LOW for 8 to 9 hours.
  • Remove the bouquet garni.
  • Discard.
  • Puree about one-third of the soup in a food processor.
  • Season with salt and pepper.
  • Add cream if using, cover and continue to cook on LOW 15 minutes longer.

This makes a wonderfully easy appetizer that is great to serve with tortilla chips, hearty crackers, breadsticks or whatever you like! The bacon can be easily cooked in a microwave oven before adding to the crock pot. I usually just place the bacon strips without overlapping on a paper towel on a plate. I usually cook it for 1 minute per slice but it depends on your microwave and the thickness of the bacon. It's easier to cool the bacon before crumbling it so you don't burn yourself. The jalapeno is optional depending on if you like it spicy. I used a 5-quart crock pot for this recipe. Enjoy!

1/2 lb sliced bacon, cooked crispy and crumbled
1 (15 ounce) can kidney beans, rinsed and drained

1 small onion, chopped

1 teaspoon prepared spicy brown mustard

Steps:

  • Brown the ground turkey in large nonstick skillet over medium-high heat, stirring to break up meat; drain.
  • Spoon meat into slow cooker.
  • Add all other ingredients to slow cooker; mix well.
  • Cover and cook on low 4 hours or on high 2 hours.
  • Serve with tortilla chips, crackers, corn chips or breadsticks.

This is such a wonderful and hardy soup. The whole house smells delicious at the moment. I can't wait to have some with some Indian Fry Bread. I used a 2.5 quart crock pot. Please note, I didn't add the soaking time in this recipe.

1 cup tepary beans (soaked over night)
1 cup dried black beans (soaked over night)
1 tablespoon cumin (add to soaking beans)
1 tablespoon olive oil
1 teaspoon vegan margarine
1 large garlic clove (minced)
1/2 teaspoon dried dried chipotle powder
4 slices turkey bacon (diced)
2 medium onions (diced)
5 cremini mushrooms (Cremini, cleaned & stems removed)
2 medium shallots (cut up small)
1 celery (cut up small)
1 carrot (cut in small dice)
1 (14 ounce) can diced tomatoes
1 (32 ounce) package no-chicken vegetarian chicken broth (I used Imagine organic)
1 tablespoon dried oregano

Steps:

  • Soak the beans in the fridge in one large container overnight with the cumin. I put in about a tablespoon of cumin in, but its up to you how much you want to add. Make sure you put double the amount of soak water to the beans. You don't want this drying out on you.
  • In the morning drain the beans and set aside.
  • In a medium size saute pan, heat up the vegan margarine and olive oil. Cook the turkey bacon, then add the onion and shallots and saute a little longer.
  • Add the garlic and chipotle powder, or other chili powder if you don't have chipotle. Then add the mushroom and saute for a minute or two, then add the celery and carrots.
  • Saute for about 5 minutes then add about 1 cup of the no-chicken broth and let this simmer for about 5 more minutes.
  • Transfer the whole mixture to your crock pot and then add enough broth to fill within 2 inches from the top. Crumble in the oregano.
  • Give it a good stir.
  • Set the crock on high and leave for at least 6 hours.
  • Taste a little of the soup after 6 hours and make sure all the beans are soft and the veggies cooked. If not leave for another 1/2 hour.
  • About 3/4 of an hour before you serve this add the can of tomatoes. Cook for the remaining time.
  • Enjoy with some Indian Fry Bread or bread of your choice.
  • Bon Appetit!
