2 ½ pounds ground ham
½ pound ground pork
½ onion, chopped
2 cups rolled oats
2 eggs
2 ½ tablespoons chopped fresh parsley
1 teaspoon ground mustard
½ teaspoon ground black pepper
1 ½ cups evaporated milk
1 ½ cups brown sugar
¼ cup cider vinegar
¾ cup mayonnaise
¼ cup sour cream
5 tablespoons prepared horseradish
1 tablespoon lemon juice
salt and black pepper to taste

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Combine the ground ham, ground pork, onion, oats, eggs, parsley, ground mustard, pepper, and evaporated milk in a large bowl. Mix well. Form in to 2 loaves; place into 9x13 inch baking pans.
  • Bake loaves in preheated oven for 30 minutes. Stir the brown sugar and vinegar together in a small saucepan; boil for 1 minute. Remove loaves from oven, and pour brown sugar mixture over. Return loaves to oven; baste frequently with the pan juices until browned and cooked through, 30 to 45 minutes longer.
  • Combine the mayonnaise, sour cream, horseradish, and lemon juice in a small bowl. Season to taste with salt and pepper. Serve sauce over sliced ham loaf.

1 cup coarsely crushed saltines (about 25 crackers)
1 cup 2% milk
2 large eggs, lightly beaten
1/8 teaspoon pepper
1-1/2 pounds ground ham
1 pound ground pork
BASTING SAUCE:
1/2 cup packed brown sugar
1 teaspoon ground mustard
2-1/2 tablespoons vinegar
1/4 cup water

Steps:

  • In a large bowl, combine the crackers, milk, eggs and pepper. Crumble ham and pork over mixture and mix well. Press into a 9x5-in. loaf pan. Bake at 350° for 1-1/4 hours or until a thermometer reads 160°. , Meanwhile, combine the sauce ingredients in a small saucepan; bring to a boil. Boil for 2 minutes. Baste loaf occasionally after first 20 minutes of baking.

1 cup milk
1 cup dry bread crumbs
1/4 teaspoon pepper
1-1/2 pound ground fully cooked ham
1/2 pound ground pork
GLAZE:
1/3 cup packed brown sugar
1/4 cup cider vinegar
1/2 teaspoon ground mustard
2 tablespoons water

Steps:

  • In a large bowl, beat the eggs; add milk, bread crumbs and pepper. Add ham and pork; mix well. In a shallow baking pan, shape meat mixture into an 8x4-in. oval. Insert a thermometer. Bake at 350° for 30 minutes. , Meanwhile, combine glaze ingredients. Spoon over loaf. Bake 40 minutes longer or until the thermometer reads 170°, basting occasionally with glaze.

Similar to meatloaf, this Amish Ham Loaf is made with ground ham and pork, seasoned with curry powder, ground ginger, and nutmeg then glazed with a sweet and sour sauce.

1 pound ground ham (about 3 cups)
1 pound ground pork
2 to 2 1/2 cups soft white bread crumbs
2 large eggs
3/4 cup sour cream
1/2 cup finely chopped onion
2 TBSP lemon juice
1 tsp. curry powder
1 tsp. ground ginger
1/2 tsp. ground nutmeg
2 TBSP yellow mustard
1/2 cup brown sugar
1/4 cup cider vinegar
1/4 cup water
1/2 tsp. fresh ground black pepper
Ketchup (optional)

Steps:

  • Preheat oven to 350 degrees F. Prepare a broiler pan by covering the bottom portion in foil. Replace the slotted top and spray lightly with cooking spray. Set aside.
  • In large bowl, with hands, combine the ground ham, ground pork, and 2 cups soft bread crumbs.
  • In medium bowl, whisk together the eggs, sour cream, onion, lemon juice, ginger, nutmeg, and mustard.
  • Pour wet ingredients into bowl with ham/pork/breadcrumb mixture and combine with hands until it all comes together. If it feel too wet, add the rest of the breadcrumbs.
  • Shape into an oblong loaf onto prepared broiler pan. Let sit for about 30 minutes before putting into oven.
  • Bake for 30 minutes. Baste with 1/2 the glaze. Return to oven and bake for another 15 minutes. Baste with the remainder of the glaze. Return to oven for another 15 to 25 minutes. Top with ketchup, if desired, and pop into oven for another couple of minutes.
  • Let rest for 15 minutes before slicing.
  • Combine all glaze ingredients except ketchup in a small saucepan and heat to boiling. Take off heat and use as directed in the Ham Loaf instructions above.

These roll-ups go great on a buffet table or as nibbles at a cocktail party, or even as an evening snack. I first tasted these at a charity fundraiser and liked them so much I actually unrolled one (discreetly) to ascertain all it contained. With a little experimentation, mine taste as good as theirs! It has the savory and salty flavor from the ham, crunch from nuts, the freshness of the celery, and the slight sweetness of the cream cheese. Can be doubled, tripled, etc.

4 slice(s) thin, good quality cold-boiled ham slices (large pieces)
2 tablespoon(s) crab meat
1 package(s) cream cheese, 3 oz.
1/2 - 3/4 cup(s) finely chopped pistachio or walnut meats
1 tablespoon(s) heavy cream
2 tablespoon(s) finely chopped celery

Steps:

  • Place the cream cheese in a bowl along with one tablespoon of heavy cream. Mix until creamy.
  • Add the crab meat, celery, and nuts all finely chopped.
  • Mix.
  • Lay ham out flat. Spread each slice with 3 tablespoons of the cream cheese mixture.
  • Roll ham into a spiral.
  • Cover with plastic wrap and chill until ready to serve.

1 tablespoon butter, plus butter for greasing the pan
1/2 cup chopped onion
1 teaspoon finely chopped garlic
1/4 pound mushrooms, cut into very small cubes
1/2 cup chopped celery
Salt and freshly ground pepper to taste
1 cup fresh or canned chicken broth
2 cups fine fresh bread crumbs
2 eggs, lightly beaten
1/4 cup pistachios
1/4 cup sour cream
1/4 teaspoon ground cumin
1/4 teaspoon freshly grated nutmeg
4 tablespoons finely chopped parsley

Steps:

  • Slice the ham into cubes. Using a food processor, chop the ham into medium-coarse texture.
  • Melt the butter in a skillet and add the onion, garlic, mushrooms, celery, salt and pepper. Cook briefly until wilted. Add the chicken broth and bring to a boil. Cook 3 minutes, remove from heat and let cool.
  • Preheat the oven to 425 degrees.
  • Spoon the mixture into a bowl and add the ham, bread crumbs, eggs, pistachios, sour cream, cumin, nutmeg and parsley. Blend well.
  • Butter a 9-by-5-by-2 1/2-inch loaf pan. Add the mixture and pack well. Smooth over the top and place in the oven. Bake 40 minutes. Remove from the oven and let stand in a warm place at least 10 minutes before serving. Serve hot with sweet relish or chutney.

3/4 pound ground pork
2 large eggs
2 tablespoons yellow mustard
1/2 cup ketchup
1 medium onion ((chopped))
1 1/2 cups graham crackers ((crushed))
3/4 cup milk
1/2 tablespoon paprika
1 1/2 cups brown sugar
1/2 cup white vinegar
1 teaspoon yellow mustard
8 ounces crushed pineapple ((with juice))

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a large bowl, mix together the ground ham, pork, eggs, mustard, ketchup, onion, graham crackers and milk. Mix well.
  • Spray a 9x13 baking pan with cooking spray.
  • Shape the ham mixture into a loaf, packing the meat firmly.
  • Sprinkle the top of the ham loaf with paprika.
  • Bake the ham loaf for 20 minutes. During this 20 minutes, make the pineapple glaze.
  • Combine the glaze ingredients together in a small saucepan over medium heat. Cook and stir until the sauce comes to a boil, then boil for 1 minute.

Pistachios are the star of this cake. Instead of a butter cake with the occasional bite of pistachio, this is a dense, nutty cake completely permeated by nuts. Replacing most of the flour with ground pistachios gives the cake a coarse, almost chewy texture and intense flavor. It's lovely without, but if you'd like you can also top it with a simple lemon glaze made by combining lemon juice and confectioners' sugar.

10 tablespoons (1 1/4 sticks) unsalted butter, at room temperature, plus more for the pan
1 cup all-purpose flour, plus more for the pan

1/4 teaspoon baking soda
1/2 teaspoon salt
3 large eggs

Steps:

  • Preheat the oven to 350 degrees F. Butter the bottom of an 8 1/2- by 4 1/2-inch loaf pan. Line the bottom with parchment paper, then butter and flour the entire pan. Pulse 1 cup of the pistachios and 1/4 cup of the sugar in a food processor until very finely ground. Transfer the pistachio mixture to a large bowl. Whisk in the flour, baking powder, baking soda and salt.
  • In a large bowl, beat the butter and the remaining 3/4 cup sugar with an electric mixer on medium speed until pale and fluffy, about 2 minutes. Steps:

  • Preheat oven to 350°F. Melt butter in heavy medium skillet over medium-low heat. Add onion and bell pepper. Cover and cook until vegetables are tender, stirring occasionally, about 10 minutes. Cool mixture completely.
  • Mix ground pork, ham, crushed crackers, milk, eggs, pepper, salt and cooled onion mixture in large bowl; combine thoroughly. Transfer pork mixture to shallow baking pan. Shape into 9x4x2 1/2-inch loaf. Using long knife, make shallow crisscross (diamond) pattern in top of loaf. Bake loaf 30 minutes.
  • Meanwhile, blend orange marmalade, Dijon mustard and brown sugar in small bowl for glaze.
  • Drizzle 1/3 cup glaze over loaf; bake 15 minutes. Drizzle another 1/3 cup glaze over loaf; bake 15 minutes. Drizzle remaining glaze over loaf and bake until thermometer inserted into center of loaf registers 165°F, about 20 minutes longer. Transfer loaf to platter; let stand 10 minutes. Pour pan juices into small bowl; whisk to blend.
  • Cut loaf crosswise into 3/4-inch-thick slices. Serve with pan juices.

This is another recipe from my Grandma. She would take this to family reunions and would never have any left. It soon become one of my favorite recipes for at home and for carry ins. When I would go signed up for carry-ins my name would already be down with ham loaf beside it. Guess people liked it.

1 lb ham loaf mix (i think it's just ground ham)
2 eggs
1 c bread crumbs
1 c milk
BASTE :
1/2 c vinegar (i use white)
1/3 c water
1 1/2 c brown sugar
1 Tbsp dry mustard

Steps:

  • 1. Mix the first 4 ingredients together like you would meat loaf. Put it into a loaf pan or I make 2 small loaves and freeze one.
  • 2. Mix up the basting ingredients and brush onto the ham loaf. Put in oven at 325 degrees for 2 hrs. I baste every half hour. The more basting the better it is.
