Steps:
- 1. Place frozen chunks of pineapple and coconut milk into a food processor or high powered blender. Turn on food processor and blend until the consistency becomes creamy. You may have to stop several times and scoop down the pineapple. If desired, put mixture in a plastic bag with the end cut off and put in ice cream cups. Makes about 3-4 servings.
- 2. *** Recipe says you can also add mangoes, add bananas or shredded coconut if you wish.
PINEAPPLE WHIP
This homemade pineapple ice cream is reminiscent of the infamous 'Dole Whip' at Disney®. This version packs great pineapple flavor but it more smooth and creamy. Make this a float by dishing the ice cream into a glass and pour pineapple juice over it and top with whipped cream. This is a refreshing summer treat!

- Whisk cream, pineapple juice, and sugar in a bowl until sugar is dissolved; stir in lemon juice. Refrigerate until well chilled, at least 6 hours.
- Transfer pineapple mixture to an ice cream maker and process according to manufacturer's instructions.

- Add half of the frozen pineapple chunks plus half of the yogurt to a large food processor (or a high-powered blender). Process for several minutes until the mixture becomes smooth and creamy, scraping down the sides of the bowl as necessary. Scoop the mixture into a separate container and repeat the steps with the remaining ingredients.
- Serve immediately for a frozen yogurt/soft-serve consistency. You may scoop directly into bowls or cones or transfer to a gallon-sized plastic bag, cut a hole in the corner, and swirl out like a soft-serve dispenser. If the "ice cream" is melting too quickly, you may pop it in the freezer for a few minutes before serving.
