SOUTHERN-STYLE GREEN BEANS RECIPE
Forty years ago, in an early collection of Southern Living vegetable recipes, the "Final Touches" chapter included clever twists on classic sauces and festive relishes along with novelties such as chive-blossom vinegar and tarragon-herb butter. In defense of the old-school recipes in the preceding chapters, we offered this introduction: "Southerners have never apologized for cooking their green beans 'to death,' but it is not widely known that properly motivated we can cook them as crunchy as the most sophisticated chef can and dress them in many ways, from herb-buttered to hollandaised to amandined. It is just that we may want to cook them half a day with salt pork or ham hocks if we are alone with the home folks; and that is a preference that bears no relationship to ignorance." As much we love all the new crunchy, barely blanched, paired-with-walnuts-and-feta green bean creations (and we truly do), there's still something so wonderful about the way a hambone broth infuses old-fashioned Southern-style green beans with a salty, meaty smokiness.

- Remove the strings from the beans, and cut the beans into 2-inch pieces. Wash the beans thoroughly.
- Place the ham hock and 5 cups water in a Dutch oven; bring to a boil. Reduce heat, and simmer 1 hour. Add the beans, salt, and pepper; cook, stirring occasionally, 30 minutes or until tender.

- If using fresh green beans, snap off the ends then snap the beans into 2-inch pieces. Wash thoroughly.
- Cook bacon until crispy, then remove from pot.
- Add green beans to bacon grease and stir to coat well.
- Add bacon back to pot. Add broth, garlic powder, salt, and pepper.
- Bring to a boil then turn down to a simmer and cook until tender, 30-45 minutes. Taste periodically and add seasonings as necessary.
- Add butter to pot when beans are almost done. Season with additional salt and pepper as needed.

- Place a large nonstick skillet over medium heat. Pour in the vegetable oil. Spread the ham in the skillet in a thin layer. Cook, stirring occasionally, until it turns brown and crispy. Remove half of the ham shards from the skillet and place on a paper-towel lined plate. Leave the remaining ham and any fat that has rendered in the skillet.
- Add the green beans, chicken stock, pepper and salt to the skillet. Reduce the heat to medium-low and simmer, stirring occasionally, until the stock reduces and darkens in color and the beans are soft but hold their shape, about 30 minutes. Pour into a serving platter and sprinkle with the reserved crispy ham.

Steps:
- Put green beans in pot- if canned add juices, if frozen add water enough to see but not cover beans- cook on medium heat.
- Fry bacon until cooked but not too crisp- drain on paper towel.
- Cut onion in large (thick) slices and break rings apart in to beans.
- Crumble or rip bacon apart add to beans.
- Add spices to taste.
- Let cook for a few hours on low heat.
- If want to serve sooner- turn heat up and cook until water boils down.

- Pour green beans into a colander to remove any liquid from jar or can.
- Rinse lightly with cool running water, let drain.
- Slice the pork side meat into ½ thick slices.
- Place pork in a sauce pot over medium heat.
- Cook meat until the fat sections appear translucent in color. Remove the meat if desired but leave the rendered fat in the pot to season the beans as they cook.
- Add 2 cups of warm water.
- Add the drained green beans. Add more water if needed to reach about 1 inch over top of beans.
- Add Sugar
- Add Black Pepper
- Add Salt
- Stir well and bring to a low boil. Cover pot, REDUCE heat to medium-low, simmer 30-45 minutes or until done.
- Taste a bean or two to see if they are cooked to your desired tenderness. Add more salt if needed, or more water if needed to finish cooking the beans to your taste preference.
- Remove from heat when done, cover until ready to serve.
- Serve warm and Enjoy.

- Cut the bacon into 1/4 inch pieces, and cook them in a large nonstick skillet over medium heat until they're crispy. Remove the bacon from the pan and set aside, but reserve the bacon grease.
- Add the onions to the pan with the bacon grease and cook until translucent, about 5 minutes, add in the garlic and cook for another 1 minute, or until aromatic. Remove the onions and garlic from the pan and place into the crockpot, then discard the remaining bacon grease.
- Add the chicken broth, garlic salt, black pepper, paprika, sugar, and red pepper flakes to a 6 quart crockpot, and stir to combine. Add in half of the bacon and mix.
- Place the green beans into the crockpot, making sure they are all laying in the same direction and are tight together, this will ensure they cook evenly. Put additional chicken broth in if needed. The beans don't need to be fully submerged, but they do need to be about 90% covered.
- Cook on low for 6 - 7 hours (or on high for 4 hours). If cooking on the low setting, check to see if they are at your desired tenderness after 6 hours. If not, continue to cook until tenderness is reached.
- Once the string beans are done, drain them from the chicken broth. Toss with butter, the remainder of the bacon, and add salt and pepper to taste.

- Now, you can choose to soak the beans overnight if you want, but you really don't have to. Either way, the first step is to wash the beans, and then put them in a large pot. Cover with water and bring to a boil. Boil for 3 to 5 minutes, then turn off the heat, cover and let it sit for 1 hour.
- After the beans have sat, drain the water and put the beans to the side. Add the oil to the pot and sauté the ham hocks and onions together, until the onion is clear and tender. Then add garlic and sauté about 2 minutes more. Add the beans and cover with water. Add pepper and salt (only about 1 teaspoon of salt at first).
- Bring to a boil; stir, reduce heat, and cover and simmer for about 2 hours. Keep checking the water level and stirring every once in a while. Add more water if needed. Keep that water just about an inch above the beans. Cook until beans are tender, more salt here is optional. And oh the gravy this makes, oh my... so good! Serve over rice
