SOUTHERN SMOTHERED PORK CHOPS

Southern Smothered Pork Chops image

This is the same recipe my grandma used to cook. Nothing fancy about it. No exotic ingredients. I updated it by using cooking spray instead of shortening but otherwise, it is the same. Just plain old down home comfort food. Sure is good with rice or mashed potatoes.

Provided by Sandy in Oklahoma

Categories     Pork

Time 30m

Yield 6 serving(s)

Number Of Ingredients 8

2 tablespoons cornstarch
1 (14 1/2 ounce) can beef broth
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon salt
6 pork chops, 1/2 inch thick
2 onions, sliced
nonstick cooking spray

Steps:

  • Mix cornstarch and broth until smooth and set aside. Spray a skillet with the cooking spray and heat over medium heat.
  • Season chops with garlic powder, salt and pepper and cook chops 10 minutes or until well browned on each side. Remove chops and set aside.
  • Add the onion and cook over medium heat just until turning translucent but still crisp. Stir cornstarch mixture and add to skillet. Cook until it comes to a boil and thickens, stirring constantly.
  • Return chops to pan, cover and cook over low heat for 10-12 minutes or until the chops are done. Season with salt and pepper to taste.

  • Melt 2 tablespoons butter in a large skillet over medium heat. Add the onions and mushrooms and cook until soft and lightly browned, about 10 minutes. Add garlic and cook for 1 more minute. Remove to a plate. Wipe out the skillet.
  • While the onions are cooking, prepare the pork chops. Season pork chops liberally with salt and pepper on both sides. Place ½ cup of the flour in a shallow dish. Working with 1 pork chop at a time, dredge lightly in flour, shaking off excess; transfer to a tray.
  • In the same skillet that you used for the onions and mushrooms, melt 2 more tablespoons of butter over medium heat. Add pork chops and cook until nicely browned on each side and the meat reaches an internal temperature of 140-145° F, about 7-10 minutes per side for thick-cut chops or about 2-3 minutes per side for thin chops. Remove pork chops to a plate and tent loosely with foil to keep warm.
  • Add remaining 3 tablespoons of butter to the same skillet. Melt the butter over low heat, and then sprinkle 3 tablespoons of flour over top. Cook and stir for 2 minutes. Gradually add the broth, whisking constantly, until the mixture is smooth. Bring to a gentle simmer and let the gravy bubble until it thickens, about 1-2 minutes. Whisk in the cream.

  • Season the pork chops by sprinkling with the salt and pepper on all sides. In a shallow dish, combine the flour, paprika, and cayenne pepper. Lightly dredge the pork chops in the flour mixture, shaking off any excess flour and reserving 2 tablespoons of the flour mixture for the sauce.
  • In a large skillet, heat the oil over medium heat. Once the oil is hot, brown the pork chops by cooking for about 3-4 minutes on each side, then transfer to a plate and set aside.
  • Add the onions to the pan and saute for 5 minutes, scraping up any browned bits from the bottom of the pan. Once the onions have softened and begun to brown slightly, add the garlic and cook for 1 additional minute.
  • Push the softened onions to one side of the pan and add the butter to the empty side of the pan. Once the butter has melted, sprinkle 2 tablespoons of the reserved flour mixture used for dredging the pork chops over the butter and stir constantly, cooking for 5-6 minutes to create a nice, dark roux. It should be about the color of peanut butter. Whisk in the chicken stock and water.
