1 cup Wesson Oil
2 cups self rising flour
2 1/2 cups sugar
3 eggs
1 can pumpkin
2 teaspoons pumpkin pie spice
1 teaspoon cinnamon

Steps:

  • Cream oil and sugar together.
  • Beat in eggs one at a time.
  • Then stir in pumpkin, flour and spices.
  • Mix up well and pour into two greased loaf pans and bake at 325 degrees for about 60 minutes.
  • Check with a toothpick.
  • If it comes out clean, it is ready.
  • You can add ¾ Cup chopped pecans or 1 Cup raisins or chopped dates if you like.
  • I like to use raisins.
  • If you add raisins, mix them with a little flour before you pour them into the batter.
  • It will keep them from sinking to the bottom of the loaf pan when you cook them.

VERY MOIST pumpkin bread with special topping. This makes a very nice gift-giving bread. You can make it all year long because it uses a can of 100% pure pumpkin puree. I use Libby's brand. The spices are just right in this recipe and enhance the flavor of the pumpkin. It's best served after it has mellowed for one day. A family favorite.

1 cup brown sugar
2 eggs
1/2 cup vegetable oil
1/3 cup water
1 (15 ounce) pumpkin puree
1 3/4 cups plain flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
1 tablespoon butter
1/4 cup brown sugar
3 tablespoons milk
1/4 cup pecans, chopped

Steps:

  • In a medium size bowl beat eggs and mix with sugar, oil, water and pumpkin.
  • In another bowl mix flour, baking soda, baking powder, salt, nutmeg, cinnamon and pumpkin pie spice. Combine wet ingredients with dry ingredients only until just blended. Do NOT overmix.
  • Pour into a greased and floured loaf pan. This bread fits perfectly in an 8.5 x 4.5 loaf pan. Bake in a 325 degree oven for 50 to 60 minutes.
  • For topping: In a small saucepan mix butter, brown sugar and milk. Boil only 2 1/2 minutes while stirring constantly. Immediately drizzle on top of loaf. Sprinkle with chopped pecans and press pecans lightly into topping.
  • Wrap and store until next day for serving. This will keep moisture inside. It is ok if bread "sweats" while wrapped.

Steps:

  • Preheat oven to 350°. In a large bowl, beat pumpkin, eggs, oil, water, sugar, honey and vanilla until well blended. In another bowl, whisk flour, baking soda, salt and spices; gradually beat into pumpkin mixture. , Transfer to two greased 9x5-in. loaf pans. Sprinkle tops with pumpkin seeds., Bake 60-70 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool.

5 large eggs
1 (29 ounce) can pumpkin
1 1/2 cups milk
1 cup granulated sugar
1 1/2 tablespoons cinnamon
1 teaspoon salt, I use sea salt
1 tablespoon nutmeg
1 teaspoon vanilla extract
1 loaf French bread, cut into 1-inch cubes about 10 cups
praline sauce
1 cup pecans
1 1/2 cups brown sugar
1/2 cup butter
1 tablespoon corn syrup
1 teaspoon vanilla extract

Steps:

  • Bread Pudding.
  • 1. Wisk together eggs and then add the next 8 ingredients. Stir in bread cubes and seal the bowl with plastic wrap. Cool over night.
  • 2. Preheat oven to 350. Pour mixture into a greased 13 X 9" pan. Cover with foil and bake for 35 minutes. Uncover and continue to bake for 15 minutes.
  • Praline Sauce.
  • 1. Heat pecans in a skillet over medium-low heat, stiring often for 3 to 5 minutes. Until lightly toasted and fragrant. remove pecans from skillet.
  • 2. Cook brown sugar, butter and corn syrup over medium heat, stirring occasionally until sugar is dissolved. This takes 3 or 4 minutes. Remove from heat and stir in pecans and vanilla.
  • 3. Pour over bread pudding while hot, hopefully bread pudding is hot and put in oven until the sauce begins to bubble.

Found the base for this Pumpkin Bread Recipe in an old Southern Living Cookbook. My 'Mom's Banana Bread' Recipe has a little 'secret' tip to making it so great - (seperating the eggs and beating the whites...). So, I put 2 and 2 together, and oila! Also, I like the rich spiciness that should accompany pumpkin dishes - thus I added the chinese 5 spice, makes it that much better! This is a great Fall / Holiday Bread -- I think you'll agree.

1 cup brown sugar
4 eggs, separated
2 cups pumpkin, canned
1/3 cup milk
1/3 cup water

1/2 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon Chinese five spice powder
1 teaspoon flax seed
1 teaspoon vanilla extract

2/3 cup dried cranberries (optional) or 2/3 cup raisins (optional)

Steps:

  • *Cream together oil & sugars at medium speed with an electric hand mixer.
  • *Add egg yolks - one at a time, beating after each addition.
  • *Stir in canned pumpkin, water, & milk.
  • *Combine flour & the next 5 ingredients in a separate mixing bowl, and add to the creamed mixture, a little at a time - mixing well.
  • *Add in Vanilla and the flax seed, - blend.
  • *Meanwhile, beat the egg whites with hand mixer until stiff, (make sure to use clean beaters), whites will form meringue peaks.
  • *Next, gently stir in dried raisins or cranberries, and nuts into the batter.
  • *Fold the meringue gently into the pumpkin bread batter.
  • *Spoon batter into greased & floured loaf pans.
  • *Bake at 350° for 1 hour, or until a toothpick when inserted in the center of the loaves, comes out clean.
  • *Cool loaves on wire racks.
